Lactose intolerance Lactose intolerance can be caused by a number of things. In humans, the body produces less lactase after the age of two. However, in white Western Europeans, lactase can be produced into adult life, which allows lactose to be broken down properly. Because of this, lactose intolerance is more common in certain ethnic and racial populations than in others. In the UK, we think about 5% of the general population have lactose intolerance. In communities where milk is not traditionally part of the typical adult diet, a much bigger proportion of people are affected. For example, up to 75% of the black African community and more than 90% of the Asian community are intolerant to lactose. Digestive diseases, or injuries to the small intestine can sometimes cause lactose intolerance, because they reduce the amount of lactase produced. In rare cases, the condition can be inherited. More

Lactose intolerance
From Wikipedia, the free encyclopedia.
Lactose intolerance is the name given to the condition (found in the majority of humans ) in which lactase , an enzyme needed for proper metabolization of lactose , is not produced in adulthood. The normal mammalian condition is for the young to lose the ability to effectively digest milk sugar (lactose) at the end of the weaning period (a species-specific length of time usually equal to roughly 3% of lifespan). It has been established that certain human populations have undergone a mutation on chromosome 2 which results in a bypass of the normal shutdown in lactase production, allowing members of these groups to continue consumption of fresh milk and fresh milk products throughout their lives. There is some debate on exactly where and when the mutation(s) occurred, some arguing for separate mutation events in Sweden and the Arabian Peninsula near 4000 BC which converged as they spread, while others argue for a single event in the Middle East at about 4500 BC which radiated from there. Whatever the precise origin, most western Eurasians and people of western Eurasian ancestry show the effects of this mutation while most eastern Eurasians, sub-saharan Africans and native peoples of the Americas and Pacific Islands do not http://us.cambridge.org/Books/kiple/lactose.htm

Lactose Intolerant Recipes Lactose Intolerance Although milk and foods made from milk are the only natural sources, lactose is often added to prepared foods. People with very low tolerance for lactose should know about the many food products that may contain lactose, even in small amounts. Food products that may contain
lactose include:
Bread and other baked goods
Processed breakfast cereals
Instant potatoes, soups, and breakfast drinks
Margarine
Lunch meats (other than kosher)
Salad dressings
Candies and other snacks
Mixes for pancakes, biscuits, and cookies
Some products labeled nondairy, such as powdered coffee creamer and whipped toppings, may also include ingredients that are derived from milk and therefore contain lactose. Smart shoppers learn to read food labels with care, looking not only for milk and lactose among the contents but also for such words as whey, curds, milk by-products, dry milk solids, and nonfat dry milk powder. If any of these are listed on a label, the item contains lactose. In addition, lactose is used as the base for more than 20 percent of prescription drugs and about 6 percent of over-the-counter medicines. Many types of birth control pills, for example, contain lactose, as do some tablets for stomach acid and gas. However, these products typically affect only people with severe lactose intolerance.

What is Lactose Intolerance?
Lactose intolerance is the inability to digest significant amounts of lactose, the predominant sugar of milk. This inability results from a shortage of the enzyme lactase, which is normally produced by the cells that line the small intestine. Lactase breaks down milk sugar into simpler forms that can then be absorbed into the bloodstream. When there is not enough lactase to digest the amount of lactose consumed, the results, although not usually dangerous, may be very distressing. While not all persons deficient in lactase have symptoms, those who do are considered to be lactose intolerant. The Digestive Tract

LACTOSE
The milk sugar lactose, accounts for almost half of the calories in milk. Lactose is not found in any other food. (It is produced in very small quantities in a few inedible tropical plants). Lactose intolerance is the inability to digest lactose. People who are lactose intolerant lack the enzyme to properly digest lactose, which causes stomach discomfort. Lactose intolerance varies considerably among various ethnic and racial groups. U.S. population affected by Lactose Intolerance: Overall population: 25% Asian - 90% African-American - 80% Hispanic - 70% Caucasian - 15% There are several solutions for those affected with this problem. Lactase enzyme is available in various capsules. The enzyme makes dairy products more digestible. Milk is also available which is lactose free. An enzyme is added to neutralize the lactose, enabling the milk to be digested easily. This lactose free milk has a slightly sweeter taste that regular milk, because the lactose has been broken down into simple sugars.
