Aunque su poder patógeno es conocido desde la época de Hipócrates, su interés creciente comienza a partir de 1940 con la introducción de la antibioticoterapia. El principal representante del grupo es la Candida albicans (CA) aunque otras muchas especies son fuente bien documentada de infecciones, especialmente en los pacientes inmunodeficientes. CA es una levadura que crece bien en los medios de cultivo ordinarios y se tiñe por tinción de Gram como un organismo grampositivo. En los tejidos se encuentran como células aisladas o formando pseudohifas. Situación en España La candidiasis esofágica fue, desde enero a septiembre de 1998, la cuarta enfermedad indicativa de SIDA en cuanto a frecuencia de notificación con un 13,5% del total de los 4208 casos de SIDA en adultos declarados durante dicho periodo.
Aspectos epidemiológicos Las Candida son organismos ubicuos, ampliamente extendidos en la naturaleza. Se han aislado del suelo, del ser humano y otros animales, de objetos inanimados, de alimentos y de ambientes hospitalarios.

The possible role of yeast in causing chronic, ill-defined illness was popularized by Dr. Crook in the "Yeast Connection" in1984. Other books and magazine articles have repeated the same idea without modification for 2 decades. This theory tries to explain the whole spectrum of delayed pattern food allergy as "yeast allergy". I've written it this way because I know that reading other such stories by people that have gone through this and recovered have helped me. But I've included a summary and overview so that the salient points can be pulled out as quickly as possible. However, for all the details and reasoning you'll need to read it all! Firstly, I'd like to say that I am not a doctor and this page is not meant to diagnose or treat anyone. This page is all "in my opinion" but I do try to back that opinion up with descriptions of my experience and references to other sites. It's up to you to decide whether you trust my description and the other sites of course. And it's always worth bearing in mind, no matter who's quoting impressive sounding studies at you, who might have funded those studies and why. Ultimately the only thing I think we can be sure of is our own experience. So, try things for yourself! The suppliers mentioned in this page are all UK based but I always give the manufacturers web site so you can start from there to look for suppliers outside the UK.
