Nadia Betti, Enrico Paternoster, and Renato Spanu met at the School for Viticulture and Oenology in San Michele all' Adige, Italy. Together they began a small, premium winery with 15 acres of vineyards in San Gimignano. The name 'La Lastra' which translates to 'the stone slab', is derived from the unique landscape in San Gimignano where the once sea covered land is now composed of Travertine stone. Indeed, fossils of ancient sea creatures, commonly found in this area, are symbolized on the wine's labels. The vineyards of La Lastra, lying 900 feet above sea level, were planted between 1963 and 1988. These vineyards, divided into six different blocks, are devoted to Cabernet Sauvignon, Merlot, Sangiovese and Vernaccia. Over four hundred olive trees, symbolic of this region's highly prized extra virgin olive oil, outline the vineyards. Bordering the northernmost rows of vines is their modern winemaking facility, where all aspects of production, from crushing to bottling, are performed. Every step is taken to ensure quality. The vineyards are strictly managed to produce small yields of intensely flavored grapes. Only completely ripe clusters are harvested by hand into small 8kg bins. Each varietal from each vineyard is vinified separately to ensure the unique character of each site which provides the winemaker with many flavors to blend into the finished wine. The result is limited quantities of concentrated, hand-made wines of special character, yet true to type.
