Wheatgrass juice is 70 percent chlorophyll. In 1915, Richard Martin Willstatter, winner of the Nobel Prize in Chemistry, demonstrated that chlorophyll has two parts. Willstatters investigation has shown that chlorophyll is an ester which can be split up into a alcohol called Phyto, which represents about one third of the molecule, and a color component called Chlorophyllin containing Magnesium which forms the remaining part. Stablized Chlorophyllin is chlorophyll that has had its magnesium atom removed and replaced with Copper sodium thus making the chlorophyll molecule a stable form that can be measured for use in producing such things as green cake coloring and wheatgrass tablets found in most healthfood stores.
