Minor changes occur in a slow and continuous manner with all species. Major changes are made in large leaps which occur rapidly. Both are caused by changes in environmental conditions. Morel mushrooms are undergoing rapid change, as a yeast growing on trees adapted to the soil. The end point must be a cup fungus for long term survival, because ascospores require that strategy. A cup-like indent is appearing on some variants of the morel, but only a related genus, Helvella, is apt to complete the process. 1. Yeast Origins Yeasts and higher fungi evolved in opposite directions creating major differences in many of their important characteristics. Yeasts evolved toward high speed growth through simplicity, while higher fungi sacrificed time for complexity. The basis for the difference is that yeasts must battle more directly against competitors, while higher fungi battle against the elements growing on surfaces in ways which competitors cannot. Yeasts began their evolution about 50 million years ago, as indicated by fossil evidence* and circumstances. Modern plants began producing sugary substances at about that time, which is the primary factor causing yeasts to evolve. Sugar is a dehydrating agent, so it must be in the form of dilute liquid to be utilized by microbes. Since competitors including bacteria and molds can grow in sugary solutions, high speed growth was needed by yeasts.

The trend is away from the canned product toward fresh and dried mushroom sales. Recently The Packer , a produce industry weekly, reported that, according to a recent marketing survey, of the families that purchased mushrooms in the previous year, 86% purchased button mushrooms and 70% purchased specialty species The American Mushroom Institute , however, reported that the 1997-98 season saw a decline in the specialty mushroom segment of the market after a decade of steadily increasing sales. Many people are interested in the nutritional and medicinal aspects of mushrooms. Mushrooms contain many essential amino acids and can be a valuable food source. White button mushrooms contain more protein than kidney beans but less than milk. Shiitake mushrooms are less nutritious, but still are important as a potential protein source

    Concise Basics and Current Developments

    The discipline of Mushroom Biology, created by the authors of this book, has now been legitimized by references in the scientific literature and by two International Conferences devoted to the subject. This book sets the parameters of Mushroom Biology in a concise manner and also emphasizes trends and points out future directions which will lead to a greater utilization of mushrooms and mushroom products. The discipline was established to bring together persons who have in common scientific or commercial interests involving mushrooms. The authors' definition of mushroom is more broad than the usual mycological definition so that macrofungi other than Basidiomycetes can be included. Mushrooms may be edible, non-edible, poisonous or medicinal species, with hypogeous or epigeous fruiting bodies, and their texture may be fleshy or non-fleshy. Many aspects of Mushroom Biology are presented, including nutritional and medicinal uses, the role of mushrooms in bioremediation, biotechnology, and in the bioconversion of waste organic materials into forms that can enter the major nutrient cycles.
