Crustacea and Mollusk Allergy
Crustaceans (Crustacea) are classified as arthropods together with spiders (Arachnida), centipedes (Myriapoda), and insects (Insecta). A wide variety are consumed raw or cooked. Shrimp accounts for 62% of the annual catch, Crabs, 28% and the rest, Lobster and Crawfish (crayfish). Crustacea allergens are reported to be heat-stable, water-soluble and can enter the atmosphere in steam aerosols from the cooking process (8,18). There appears to be common allergenic determinants among various members of the group. These appear to be responsible for clinically significant IgE mediated reactions to other crustaceans in individuals sensitized to shrimp (39). Shellfish have been recognized as potent allergens both in food allergy and occupational allergy. Of these, shrimp has received the most attention, but studies on crossreactivity have pointed to similar antigenic structures in other shellfish.

There are four main classes of crustacean: Maxillopoda - barnacles and copepods
Ostracoda ostracods
Malacostraca mantis shrimps
Eumalacostraca opossum shrimps, amphipods, isopods,shrimps, prawns, and crabs and lobsters key features
The crustacean body is typically divided into the head, thorax and abdomen, together with an additional tail. There are pairs of two-branched appendages on each segment. The appendages are modified as mouthparts, gills, for walking, swimming or fighting, or for reproduction or brooding. All crustaceans have two pairs of antennae emanating from the head region
Crustaceans possess a chitinous exoskeleton which forms a rigid and sometimes heavy outer body shell. Growth requires periodic moulting of the exoskeleton.

Charles Darwin (1809 - 1882)
While Darwin was studying divinity at Cambridge he developed an interest in natural history and was accepted as the naturalist on an expedition that was being organised by a group of scientists. This was the voyage of The Beagle Darwin had read Lyell's Principles of Geology , which suggested that the fossils found in rocks were actually evidence of animals that had lived many thousands, even millions, of years ago. During the voyage of the Beagle Darwin observed the rich variety of animal life and the variations between geographically isolated populations. He began to consider the origins and relationships between all these species. Significant evidence for the ideas he was forming came to him as he visited the Galapagos Islands. The finches and tortoises he observed there became the subjects of some of his most famous studies. Back in England in 1836, Darwin tried to solve the riddles of these observations and the puzzle of how species evolve. He realized that as long as there was heredity, variation among the offspring, and limited resources, there had to be evolution through natural selection. Darwin continued to work on this theory for 20 years, and in 1859 he published his famous and controversial book
