The Old Order Amish are among the most conservative descendants of the 16th-century Anabaptists. The Old Order are usually distinguished from the Amish Mennonites (now largely absorbed into the Mennonite Church [MC] or various conservative Mennonite groups), Beachy Amish and the New Order Amish by their strict adherence to the use of horses on the farm and as a source of transportation, their refusal to allow electricity or telephones in their homes, and their more traditional standard of dress, including the use of hooks-and-eyes fasteners on some articles of clothing. For all practical purposes, "Amish" has come to be synonymous with "Old Order Amish" in the eyes of most observers in North America. In this century the Old Order Amish population has grown very rapidly. In 1900 there were approximately 3,700 Amish in North America. By 1990 the estimated figure had increased to 127,800 (adult membership approximately 56,200). According to sociologist Julia Erickson and her colleagues, the Amish are among the fastest-growing populations in the world. They prohibit the use of contraception and have low infant mortality rates. The average Amish woman can expect to have at least seven live births. A rapid increase in the Amish population has been one factor that has led to gradual change and innovation in Amish society. Population pressures have increased the price of land and led to shortages of available farmland in some settlements. The Amish respond to this pressure by adopting farm management strategies of the larger society such as reducing the farm size and field crop production, placing more emphasis on the production of milk by increasing the size of a dairy herd, or specializing in the production of hogs for market.

Amish Mennonites are that segment of the Swiss-Alsatian-South German Anabaptist-Mennonites and their descendants in North America who are the offspring of the group who under the leadership of Elder Jakob Ammann, of Erlenbach, canton of Bern, Switzerland, in 1693-97 separated from the main body in Switzerland. Since the full story of this division is told in the Amish Division article, it remains only to say that Ammann must have visited the Markirch (Alsace) congregation about the same time, where he excommunicated some members, and that he almost immediately got into a controversy with the ministers of the Palatinate who tried to effect a reconciliation. He found almost united support from the ministers of Alsace, but proceeded to place most of the Palatine ministers under the ban . In a few years Ammann and his associates decided they had been too rash and tried to effect a reconciliation, failing largely because they confessed only to an error in method and spirit while refusing to surrender their demand for the Meidung . Thus the division was made permanent because of the intransigence of Ammann. Ammann also held strict views on other points, including the wearing of the untrimmed beard, uniformity in

1 cup butter (real)
1 cup vegetable oil
1 cup granulated sugar
1 cup powdered sugar
2 eggs beat well
4 1/2 cups flour
1 teaspoon soda
1 teaspoon cream of tartar
Instructions:
  • Mix together, beat well and add 1 teaspoon vanilla.
  • Drop by teaspoon onto baking sheet (slightly greased).
  • Bake 10 minutes in 375 degree oven. Notes: Makes about 65 cookies.     Origins of the Old Order Amish
    The Amish, called "The Plain People" or Old Order Amish, originated in Switzerland about l525. They came from a division of the Mennonites or Anabaptists (Re-baptizers). They opposed the union of church and state and infant baptism. They baptized people only as adults at about age l8. Adult baptism was a crime in the l6th century. Therefore, the Amish come from an impressive list of martyrs. They were put in sacks and thrown into rivers in Europe. There are no Amish left in Europe; The Amish were saved from extinction by William Penn who granted a haven from religious persecution in America. Since early colonial days the Amish have lived in the United States preserving their distinctive culture, dress, language and religion in peace and prosperity. A few years ago they were again accused of crimes failing to have their children attend school with state certified teachers or failure to send them beyond the eighth grade.     In 1935, a bill known as "The Social Security Act" passed Congress. Included in this act was "Old Age, Survivors, and Disability Insurance," provided for those in industry and commerce, and extended to include farm operators in 1955. What was once a benefit had now become a law. The tax was to be reported at the rate of 3% of income up to an established limit. While the Amish have no objection "paying unto Caesar what is CaesarÂ’s," they do have problems with commercial insurance. In a sense, insurance was seen as not trusting in God. Insurance plans were a worldly operation. Plus, the Amish view of separation of church and state normally meant not accepting money from government programs, especially something viewed as welfare. No one could deny that this program was one of paying money to the government and then receiving a benefit in return.

    Amish Friendship Bread is the chain letter of the baking world. The idea is very simple: a friend gives you a cup of yeast culture (also know as "starter") and a copy of instructions. Following the instructions, you add sugar flour and milk and it rises. Eventually, you end up with 4 cups of the starter. You use one to make bread (the instructions provide you with a recipe ), keep one to start a new cycle and give two to your friends. Each of your friends also gets a copy of the instructions for what to do with the yeast starter. The latter part makes it somewhat like a chain letter. Of course, Amish Friendship Bread does not come with any promises of riches for those who spread it on or curses for those who don't.
