Welsh Mountain MUTTON
RECIPES
The way the leg of Welsh Mountain mutton would have been prepared for cooking for George Burrows would probably have been thus: The shank should be removed, broken up and boiled separately, to be used for stock to make gravy. The joint should then be rubbed with ground pepper; then covered with mutton fat and flour For cooking, place in a baking tray into a pre-heated oven at 350 degrees F or gas mark4, allowing 4O- 45 minutes per lb. An alternative method is to start the joint off in a hotter oven at 500 degrees F (gas mark 10), leaving for 15 minutes or until brown. Then reduce to heat to 350 degrees (mark 4). The time for this method should be 25-30 minutes per lb. TRADITIONAL SPICED MUTTON Ingredients : mutton joint (leg or shoulder)
black pepper
powdered thyme
ground mace
fine oatmeal
mutton dripping (or other fat)
cabbage
cider Bone the joint, rub it well with black pepper, a little powdered thyme, a pinch of mace and fine oatmeal - do not use salt. Wrap the whole in cabbage leaves, and cover in foil (traditionally the meat would have been thickly covered in mutton fat). Roast very slowly, allowing 20 minutes/lb of meat. Baste well at least twice during cooking and when basted add a cupful of cider to the fat in the pan. It can be eaten either hot or cold.

1 egg beaten
1 cup currants
Optional - rind of 1 lemon.
Cooking directions: Cut shortening into flour. Add currants and lemon peel if used. Add egg and enough milk to make a soft dough. Knead dough for about 1/2 minute. Roll 1/3 to 1/2 inch thick. Use a small glass (or cookie cutter) 2 to 3 inches in diameter to cut dough into circles. Heat a griddle to medium heat. You should not need to grease the griddle. Put the cakes on the griddle and fry until the first side is a light brown, flip the cakes over and cook until the next side is also brown. in a double boiler.
1 tablespoon butter
1 pound aged Cheddar or sharp processed cheese, grated
1/2 cup ale or beer
1 teaspoon Worcestershire l/2 teaspoon dry mustard 1/8 teaspoon cayenne salt to taste In chafing dish or double boiler over hot (not boiling) water, melt butter and cheese. As cheese begins to melt, gradually stir in ale or beer. Cook only until smooth and hot. Stir in seasonings and serve immediately on hot crisp toast or heated crackers. Makes 4 to 6 servings. The Food of Wales by Helen Gaffney The food of Wales recalls its ancient, Celtic traditions. In the mining valleys of the south and villages in the north perched below mountains of slate shards, in quiet coastal fishing harbours, through a rolling rural landscape of sheep-dotted hills and babbling salmon rivers, to the rugged upland farms of Prescelly, it is one which has developed to satisfy the needs of hardworking men and women: the appetites of farm labourers and coal miners, of quarrymen and fishermen. Many English culinary traditions developed from the top, that is from the amply stocked larders and groaning sideboards of aristocratic country mansions, but the true tastes of Wales, the 'old foods' that people still speak of and relish with such fondness, come from the harsh Celtic land which yielded not a lot, but enough to satisfy. The bleak uplands of the Principality could support few cereal crops other than oats, and thus, in common with other Celtic countries, they form part of the staple diet, used as a cereal in soups or porridge, or shaped into thin cakes and cooked on the planc or bakestone.

British Regional Cooking Virtually every corner of the British Isles yields superb products and produce - fine things to eat and drink. Food and drink in Britain varies considerably from region to region and county to county. North of Hadrian's Wall, it is a reflection of a hardy and resilient land and people. Ireland likewise retains its own solitary culinary traditions, which have emerged intact after centuries of English provincial domination. In Wales, traditional foods, like the Welsh language itself, have been guarded and passed down by word of mouth. In the shires, pork pies and other portable fare became popular as a sustaining food while hunting, and in Cornwall, the humble pasty was the workers' lunch, easily carried down the damp tin mines. Certain localities, it will be seen, are inextricably linked with certain foods. Some have been adopted nationally, such as Yorkshire pudding, but others remain very much tied to a single area, indeed to a single village. For example, Banbury cakes remain much in evidence in this small market town but are not widely available outside it. The aim of this section is to give a taste of each region or county.
