WELCOME TO NFSMI INSIGHT
    This new publication is created to communicate National Food Service Management Institute (NFSMI) research and projects to you, the Child Nutrition Professional, in reader-friendly terms. Our goal is to help you incorporate state-of-the-art information and procedures into the daily operation of Child Nutrition Programs. We hope this publication will be read, used, and shared by all people interested in the health and well-being of children. The format of NFSMI Inslght is designed to slip easily into a file or a three-ring notebook. This publication will be produced periodically. Please let us know if NFSMI Insight has been helpful and we would be interested in your ideas for additional topics.
    OVERVIEW OF THIS ISSUE
    Children who have a variety of special food and nutrition needs exist in every school district. Studies have shown that most school nutrition managers have at least one child in their school with special needs. The medical conditions reported most frequently include food allergies, diabetes, and a variety of disorders that require modifications to the texture of food. Federal regulations require school nutrition professionals to modify meals for a child with a medical authorization that his or her diet is restricted by a disability. Providing special meals need not be a costly undertaking for school nutrition services. This issue of NFSMI Insight presents recommendations for managing nutrition services for children with special food and nutrition needs These recommendations focus on administrative processes that can reduce labor and food costs.

One of the major issues addressed by the legislation is the quality of teachers for children with special needs. IDEA ’97 requires students receiving special education services to be educated with their non-disabled peers to the “maximum extent practicable.” As a result, according to a 2001 report from the Study of Personnel Needs in Special Education, 75% of students receiving special education services spend 40% or more of their day in general education classrooms. Consequently, 96% of general education teachers currently teach, or have in the past taught, children with special needs.

How have states responded to the challenge to prepare general education teachers to meet the needs of students with special needs? According to ECS’ Teacher Preparation Policy Database (http://www.tqsource.org/prep/policy/), 46 states and the District of Columbia currently have statutes or regulations requiring teacher education programs to provide some instruction on teaching children with special needs to individuals seeking initial training in elementary or secondary education. The amount and content of this instruction, however, varies dramatically.

WHAT ARE LIFE SKILLS?
Life skills include a wide range of knowledge and skill interactions believed to be essential for adult independent living (Brolin, 1989). At present, many students with handicaps have special needs that are not being met. These students require education and support to learn these necessary behaviors. They must be able to dress and groom properly, use appropriate table manners, make decisions about money, and use transportation to get to work. The three major skill areas that need to be addressed are daily living, personal/social, and occupational skills.

Learning Disabilities at Mount Holyoke College Support services and academic accommodations for students with learning disabilities are administered under the direction of the Dean of the College office through the Office for Learning Skills. This office was established to provide direct assistance to students with a learning disability and to facilitate understanding of learning disabilities among other students, faculty, and staff. It is estimated that as much as 10 percent of the U.S. population have learning difficulties specific and extensive enough to be considered learning disabilities. At Mount Holyoke, there are over 90 students identified as having learning disabilities. Even with the prevalence of learning disabilities, many stereotypes still exist around the label "Learning Disability." Myth: A person with a learning disability cannot learn, and therefore should not be in college.

An Evaluation Methodology
VOICES is an evaluation methodology for school-produced Web sites. The key equally-weighted criteria are: Vision: How well is the fundamental purpose or purposes of the Web site articulated and implemented? Originality: How original are the technical tool kit and technical design elements? How original is the content? How different is this Web site in terms of partnerships, collaboration, and interactive elements? Integrity: How fully integrated are the design, content, technical and vision components? How well does the site as a whole serve to advance a unified vision or create a new learning community or experience?
