    I am 23 years old and I'm vegetarian for the last 10 years. I discovered lately that I have low level of B12. What can I eat in order to solve the problem?
    Answer
    The body only has a 3-5 year supply of B12, so individuals are at very high risk for B12 deficiency if they follow a vegetarian diet for 10 years. Elderly individuals are at high risk much sooner than 3 years because many seniors cannot adequately absorb B12 to begin with, so their stores are already low. The type of vegetarian diet you follow has a major impact on your risk. Those vegetarians that use fish or eggs or dairy products are not at high risk for B12, because any food of animal origin (even if not breathing, like an egg or milk) contains B12. Vegans, or those vegetarians who use no animal products, are at risk and require supplementation. This supplementation may be in pill form or use of fortified vegetarian foods, such as cereals and soymilk fortified with B12. Some fermented soy products, like tempeh have a small amount of B12, but obviously if you have been using these and are still B12 deficient, it has not been a good source for you.

For a variety of reasons, (many economic, ecological or health-related), there is considerable renewed interest in vegetarianism. Even the USDA in the fourth edition of Nutrition and Your Health: Dietary Guidelines for Americans now acknowledges that a meatless diet can adequately meet our dietary needs. Plant foods are the mainstay of a vegetarian diet, and with a little thought and attention to detail one can get the same, if not better nutrition, from choosing foods of plant origin. Generally, there are three different types of vegetarians:
  • Vegan - strict vegetarians who eliminate all animal products including leather goods and soaps made with animal fats;
  • Lactovegetarian - a vegetarian who excludes meat, poultry, fish and eggs, but includes dairy products;
  • Lacto-ovovegetarian - a vegetarian who excludes meat, poultry and fish, but does eat eggs and dairy products. The question most often asked is, " Where do I get my protein?" The answer is that protein, generally obtained from animal sources, is also

    21st Century Vegetarian Basic Nutrition Vegetarianism is without doubt a very healthy option, but it is very important to ensure that yout food intake is well-balanced. This is not very difficult or as clinical as it might sound. Most of the meals you already eat probably contain ingredients from the different food groups. Vegetarians could stuff their faces with chips and chocolate at every meal, but they would not be doing their health any favours. It doesn't have to be all 'rabbit food' either.
    A varied vegetarian diet will supply all the essential nutrients you need to be fit and healthy. A typical vegetarian diet closely matches dietary recommendations for healthy eating, being low in saturated fat and high in fibre, complex carbohydrates, and fresh fruit and vegetables. This simple nutrition pyramid shows what types of food a vegetarian should eat and roughly in what quantity and proportion. Oils, butter and fats are at the top because we only need relatively small amounts.
    Bread, cereal, rice and pasta are at the bottom because we should eat these foods the most.

    The Jewish Vegetarian Ideal
    Jewish vegetarianism is a philosophy and lifestyle, based upon Jewish teachings and mandates, that prescribes a diet centered on grains, vegetables, fruits, nuts, and seeds and that proscribes the consumption of all animal flesh, including that of fish and fowl. Many well known Jews have followed a Jewish vegetarian lifestyle. Rabbi Abraham Isaac Hakohen Kook, the first chief rabbi of modern Israel, considered vegetarianism to be the ideal, the ultimate peace between mankind and the rest of the animal kingdom. He felt that in the Messianic Age, as prophesied by Isaiah (XI:7) , we would all be vegetarian again and the only sacrifices offered would be the mincha sacrifice, which was of vegetable origin. Although there is some debate regarding Rav Kook's consistency in following a vegetarian diet, Rabbi She'ar Yashuv Cohen, the current Chief Rabbi of Haifa, has written, "I myself, am a vegetarian, following in the footsteps of my late father, the saintly Nazir of Jerusalem [Rabbi David Cohen], and his teacher, the saintly first Chief Rabbi of Israel, Rabbi Avraham Isaac Hacohen Kook." Other well known Jewish vegetarians include Rabbi David Rosen, former Chief Rabbi of Ireland, the late Rabbi Shlomo Goren z"l , Chief Rabbi of Israel, and Avraham Burg (vegan - strict vegetarian), the youngest and only religious person ever to be elected Knesset Speaker, whose diet reflects his respect for the sanctity of all life. Thus, Jewish vegetarianism has had many prominent adherents.

    originalmike Good idea or bad? Does it benefit your health or make it worse? Why become a vegetarian? I dont know, this often perplexes me. I can understand why some would because of things like diabetes or another medical issue, or because it was the way they were raised, or even because they feel it is the best for them. However, I can help but think that not eating meat is taking something from your diet like iron and such. Yes, there are supplements, but I'd rather have MEAT! Anyways, I suppose if I had to pick a line of anything like that, I would be a vegan; from what I understand they mainly eat natural things i.e. vegetables, but also some meat products. craigcully Depends. Healthwise there are probably both pros and cons to it. What I don't agree with are people who are vegetarians for moral reasons. I mean, your body kills millions of living things everyday. Why does a cow or chicken get more respect than bacteria or a housefly?     Vegetarianism on the
    Rise Among School Children
    January 8, 2001 - More kids are "vegging" out, and school foodservice is stepping in. A recent article in Time magazine reported that students ages eight to twelve are opting for vegetarianism at twice the rate of adults. This small but rapidly expanding movement is making an impact on school foodservice. The article, published in the Oct. 16, 2000 issue of Time, quotes Donna Wittrock, ASFSA member and executive director of food and nutrition services for the Denver public schools. Wittrock reports that due to the demand elementary schools are offering vegetarian dishes for the first time this year. She also states that it’s not more vegetables that the students want just NO meat. Since children are not nutritionists, this new generation of "veg-heads " will need extra guidance and appropriate nutrition education to ensure they are getting adequate nutrition.
