SeitanThe Vegetarian Wheat Meat

I get blank stares when I ask my vegetarian cooking students if they've ever eaten seitan (say-tahn). Yet, hands go up when I ask if anybody has ever eaten mock chicken, beef, or pork in a Chinese vegetarian restaurant. The name is foreign but you may be more familiar with the product than you think. According to Barbara and Leonard Jacobs in their excellent book Cooking with Seitan, The Complete Vegetarian "Wheat-Meat" Cookbook, "seitan has been a staple food among vegetarian monks of China, Russian wheat farmers, peasants of Southeast Asia, and Mormons. People who had traditionally eaten wheat had also discovered a method to extract the gluten and create a seitan-like product." Seitan is derived from the protein portion of wheat. It stands in for meat in many recipes and works so well that a number of vegetarians avoid it because the texture is too "meaty." Gluten can be flavored in a variety of ways. When simmered in a traditional broth of soy sauce or tamari, ginger, garlic, and kombu (seaweed), it is called seitan. I refer to all flavored gluten as seitan. Making gluten the traditional way is time consuming. It calls for mixing 8 cups of flour with 3 to 5 cups of water and forming a dough. The dough is then kneaded and rinsed under running water to remove the wheat starch. After about 20 to 30 minutes of kneading and rinsing, which to me seems like a considerable amount of time, the resulting 2 or so cups of stretchy gluten is evident. At that point the gluten needs to be simmered in broth for at least 1 hour and up to 2 hours or more.

This recipe comes from Mollie Katzen's book Still Life with Menu pretty much unaltered. She includes an entire seder menu, which is worth looking at if you need more ideas. This recipe makes a wonderful golden soup with a rich flavor very similar to chicken soup. The vegetables can be cut a little smaller and left in if you prefer a more substantive soup, though the turmeric will stain them all a vivid orangey-yellow color. A sweet potato or yam in the broth may give the broth color without coloring all the other vegetables as well. 8 cups water
2 teaspoons salt
1 8-inch parsnip, cut in chunks

Vegetarian Eggplant Recipes
We do the following with long eggplants (1 inch diam., 1 foot long). I hope you can find them in your city. Or, try it with the fat eggplants, but cook a little longer, because they seem a little harder to me.
Easy eggplant and garlic
Smash, mince or grind a clove of garlic. Put in a Tbsp of soy sauce. Let stand for 15 min. (Garlic Soy Sauce) Boil some water. Cut eggplant into bite(1 inch) pieces. Boil 2 min. after boiling start. Dip in Garlic Soy Sauce and eat.
Stewed eggplant and garlic
  • Cut eggplant into stripes like french fries (at least 1/2 inch thick)
  • Smash 4 or more cloves of garlic.
  • Heat 3 Tbsp. of oil.
  • Stir in garlic till before browning.
  • Stir in eggplant for 5 seconds. (they soak up oil quick. So next...)
  • Add 1/2 to 1 cup of water. (or cover 1/3 of the pile of eggplant)
  • Add 4 Tbsp. of soy sauce. (or adjust to your experience and taste)
  • Add 1-1/3 Tbsp. of white, red, brown, or ice sugar (or adjust, but the prop of soy and sugar is always 3:1)
  • Add 1 tsp of black or spicy Dou-Ban Sauce (op., best if you have it)
  • Add some wine.

By Judi Macdonald Pumpkin Soup Garlic Granary Bread Stuffed Jacket Potatoes Golden Vegetable Casserole with Sage Dumplings ... Boozy Baked Apples and Flambe Bananas
    Pumpkin Soup
    Serves 4 Ingredients 2 onions, chopped 1oz / 25g butter or vegetarian margarine 1 medium potato, peeled and diced 2 garlic cloves, crushed 1 pint / 600ml water 1 pint / 600ml vegetable stock 5 fl oz / 150ml single cream chopped parsley to garnish salt and freshly ground black pepper Method
    Remove the skin and seeds from the pumpkin;
    dice the flesh. Fry the onions in the butter or margarine for 10 minutes,
    then add the pumpkin, potato and garlic and fry for a further 5 minutes. Add the water and vegetable stock and simmer for 20 minutes.
    Heat through again gently without boiling, garnish with the chopped parsley and serve with Garlic Granary Bread (below).
