Be My Valentine - A Labor of Love

Everyone knows that you can't hurry love, but with Valentine's Day fast approaching, we might need to give Cupid a little nudge. Ditch the restaurant reservations, big crowds and parking hassles in favor of Emeril's recipe for romance. Stay home and cook for love with a quiet dinner for two.
The most coveted sweet treat for Valentines Day is chocolate-no contest. Emeril's warm chocolate pudding cakes made of high quality semi-sweet chocolate ooze with passion. Bake the cakes in two mini ramekins and serve directly from the ramekins if you don't want the challenge of inverting them onto plates. Garnish with scented whipped cream or ice cream-oh, and forget the diet.
Ideally champagne should be chilled to a temperature between 40 and 45 degrees, so refrigerate for 2 to 3 hours. When opening, make sure to enclose the champagne cage and cork firmly in one hand while you twist the bottle open.

Food of Love
Having lived and worked in NJ all my life, I have numerous contacts that could assure me a table in the Garden State. But this year my sweetheart and I decided to spend Valentine’s in the city. Thus, I headed upstream with the masses in an effort to procure that elusive, heavily vied for, and proverbial table for two. Being a quite determined individual, my plan was to slip into the river ahead of the first wave and improve my odds. Ha!
Five weeks before the big day, every place I called was either completely booked or not taking reservations until a later date. My first choice, which fell into the latter category, was the infamous Gramercy Tavern, Chef Tom Colicchio's four-star paradise in the Gramercy/Flat Iron district. Saturday morning, January 17th, 9:30am was go-time. 9:27am I made my first call only to encounter a busy signal. Apparently I wasn’t the only fish endeavoring to get a jump on the pack. I then spent the next two and a half hours repeatedly hitting the redial button, finally getting through at noon, only to discover that they had completely booked by 10am AND had a sizeable waiting list as well. Damn once-a-yearers.

RECIPES FOR VALENTINE'S DAY
No one is quite sure how St. Valentine’s Day originated. Europeans believe it is the day that birds choose their mates. The ancient Romans celebrated a feast in honor of the god Lupercus, who protected their shepherds and flocks from the wolves roaming the countryside. Part of that celebration included writing the names of the girls in the village on slips of paper. Each boy would then choose a name, and the couple would be partners for the festival, or possibly the entire year. Another theory is that around AD 270, a priest named Valentine was marrying Roman soldiers against the orders of Emperor Claudius II. Claudius wanted his soldiers to remain single so they would have no reason (wives, girlfriends, or families) to avoid going into battle. Defying the emperor eventually led to Valentine’s death. He was beheaded on the eve of Lupercalia, and later named a saint. For the more romantic among us, another story claims that a different man named Valentine was jailed for attempting to convert Pagans to Christianity. While in prison, he fell in love with, and miraculously healed, the jailer’s blind daughter. He signed his letters to her "From your Valentine." As Christianity became more widespread, the holiday eventually became a celebration of St. Valentine rather than Lupercus. Written Valentines appeared around the 15th century, and by the 18th century, the now-familiar hearts and lace were common Valentine cards. Valentine’s Day caught on a bit later in America, somewhere around the mid-1800s. In Roman mythology, Cupid is the son of Venus, goddess of love and beauty, and thus is a natural for being associated with all things romantic, particularly Valentine cards.

A Culinary Poem: Suggestions for a Perfect Valentine's Day Dinner (ARA) - While you may not be expecting diamonds, roses or Chanel No. 5 on Valentine's Day, there's no reason you can't cook-up a little culinary romance this February 14. According to the chef instructors for The Art Institutes Culinary Arts programs, with a little thought, creative ambiance and a few make-ahead preparations, a romantic Valentine's Day dinner can be yours. For Chef Frank Lima, an instructor with the New York Restaurant School of The Art Institutes, food is poetry and poetry is food. Chef Lima is not only a former White House assistant chef during the Kennedy Administration, but a first runner-up for Poet Laureate of Queens, New York. As Chef Lima explains it, "Poetry and cooking are so similar they're both about feeling and aesthetics." The two are so intertwined, in fact, that Chef Lima named his cream of roasted red pepper soup Creme Kukhla Moo ("my doll" in Greek). In addition to soup, which Chef Lima garnishes with crumbled feta cheese and fresh dill, he also likes ceviche with Champagne salsa lobster, shrimp and sea scallops marinated in fresh lime juice and garnished with cilantro and capers. Both the soup and ceviche can be made a day ahead and refrigerated.

Marooned on Valentine's Day
I should know better. Valentine's Day, along with New Year's Eve and Mother's Day, is one of the biggest restaurant rip-off days of the year. But, considering that I'm without a boyfriend at present, the idea of girl's night featuring fattening fare and several cocktails sounded like a wonderful anti-hearts and flowers plan. Boy was I wrong. The set-up sounded okay. I was joining my friends Stacy and Maureen along with several of Maureen's friends for dinner at Maroons in Chelsea. What was especially appealing - beyond the fact that Maroons had won acclaim for its Fried Chicken and other calorie-laden Southern specialties - was the notion that the table would be half straight/half lesbian, so we could share dating war stories from both sides of the fence. Figured that our bubbly, wise-cracking, sexy table would eventually lure other diners - from either sides of the fence - and you can take the "Sex and the City" storyline from there. Each year, when February is on the horizon, I find myself thinking about the preparation of homemade treats for Valentine's Day. Being an incurable romantic, having a wedding anniversary on Valentine's Day, and living in Mexico, where Valentine motifs are popular not only during this month but throughout the year, all conspire to turn my thoughts to candy, hearts and flowers. Having written past February columns on Mexican chocolate and sweets , I set about investigating edible flowers and their place in Mexican culinary tradition. The place to begin, as usual, was with the Spanish chroniclers, who wrote about the incredibly vivid markets that awaited them in the New World. Fascinated by a whole new realm of sights, sounds, flavors and aromas, they dedicated themselves, with a diligence bordering on passion, to describing the wonders of the Mesoamerican food markets, of which flowers were an integral part. "Most gorgeous of all," writes Jeffrey Pilcher in Food and the Making of Mexican Identity , discussing the first hand descriptions provided by Sahagún and Díaz del Castillo "were the edible flowers of cacao

In ancient Rome, February 14th was a day honoring Juno, the Goddess of women and marriage and Queen of the Roman Gods and Goddesses. The following day, February 15th, began the Feast of Lupercalia, a festival of love honoring Juno. Love lotteries were an important component of the celebration which took place on the eve of the festival. The names of girls were written on slips of paper and placed into jars. Young men would draw a girl's name from the jar, making these two partners for the duration of the festival. So even though they weren't yet called by the name, these early Romans were in fact the first Valentines. Of course, the early Christians frowned on such erotic goings-ons. Despite their best PR efforts, the church's attempts to convince celebrants to substitute the names of saints for would-be lovers was not met with much enthusiasm, especially since the participants were encouraged to emulate their chosen patron saint's virtues for the coming year. Instead the church settled for toning down the nature of Lupercalia from eroticism to romance. Saint Valentine or Valentinus, who had been martyred on February 14 th 269 A.D, proved a convenient symbol around which to fashion this new celebration of romance.

1/2 cup chopped green pepper 1 tube (10 oz)1 cup shredded mozzarella cheese In large skillet over medium heat, cook pork, stirring occasionally, until light brown. Drain pineapple, reserving juice. In glass measuring cup, stir together reserved pineapple juice, honey, ketchup, cornstarch, and vinegar. Microwave on high for 2-1/2 minutes, stirring twice during cooking. Stir sauce, pineapple tidbits, and green pepper into cooked pork; set aside. Place pizza dough on greased large baking sheet and shape into 12 inch heart (or place dough in a 12 inch heart-shaped baking pan). Sprinkle cheese over crust. Spoon pork mixture over cheese. Bake at 425 degrees (on lowest oven rack) for 16 to 18 minutes or until crust is golden brown. Makes 4 - 6 main dish servings Nutrients Per Serving: Calories 512, Protein 24 g, Carbohydrates 68 g, Dietary Fiber 1 g, Total Fat 15 g, Saturated Fat 7 g, Vitamin C 24 mg, Cholesterol 53 mg

They're cooking with Aloha at the Palms Cliff House on the Big Island of Hawaii.
The recently opened bed and breakfast inn is the site for the second-annual series of hands-on cooking classes and farm tours on the Big Island.
The first three classes will be offered March 1-3, March 22-24 and April 26-28.
Additional dates will be added.
Chef Linda Gemignani of Divine Catering Company will be leading the classes in conjunction with Merry Barton of Merry's Herb Garden in Waimea, and Michele Gamble of the Palms Cliff House Bed and Breakfast in Honomu.
According to the enthusiastic Gamble, "Cooking with Aloha" will offer students the chance to prepare meals using local, seasonal, mostly organic produce and sustainably raised produce, meat and fish.
