The Uzbek Cuisine Tantalising with rich exotic flavours For those who do not know, Uzbek cuisine is one of the most colourful of Oriental Cuisines. You'll be amazed to find some of the Uzbek recipes are centuries old. They even have various traditional rituals and ways of the preparing and cooking. There are about 1,000 different dishes and these includes national drinsks, cakes and condectionary products. Uzbek plov is a very solemn dish. It can be considered an everyday dish as well as dish for solemn and great events like weddings, parties and holidays. Rise is the most important componentof plov and special spices, raisins, peas or quins will be added to give it extra flavour. It makes this dish very tasty and useful especially after long illnesses. However, locals believe that the best plov is always prepared by a man! Salads are served as additional dishes to the plov. Bread is considered to be holy for the Uzbek people. this traditional belief started in the ancient times and there's a legend behind this. The legend claims that each new Governor would mint his own coins but the payment for the local people for minting new coins were not the coins that were minted but...bread!

    About Uzbekistan
Currency: Sum is the official currency with floating bank rate. According to the current legislation all and services should be paid in Dollars by the foreigners. It is illegal to exchange foreign currency in the black market punishable with fine and imprisonment and we very strongly discourage to do so. Every foreigner is supposed to declare foreign currency and other precious holdings at the port of his arrival and can take them back only by showing the old declaration. Custom declaration should be kept like currency. Language and culture: Uzbek, is the official language of Uzbekistan, which is a Turkic language and is similar to other Turkic Languages as Kazak, Kyrgyz, Turkmen, Azerbaijani. However, Russian is widely used for communication in Tashkent and in other regional cities of the country. English speakers are growing in number but still few by world standards. Meeting and greetings: Uzbekistan is a country of hand-shakers. People shake hands when meeting and parting. Women should take the lead in greetings and in offering a hand shake; Uzbek women do not normally shake hands, and well behaved men do not take the lead in greeting unknown women. On a more positive note, Uzbeks are very friendly people, especially when foreigners take the trouble to learn a few introductory greetings. Most people will be happy to help you with directions, and Uzbeks often invite people to their homes quite readily. Your hosts are more likely to offer you a small gift or souvenir. Visitors should avaoid involving in conversation with strangers because of high incidence of pick pocketing, and other malpractices. Political and religious conversation must be avoided.

People and Culture Uzbeks are descended from Turkic tribes, Persians, Mongols, and other peoples, and Uzbekistan is home for over 100 ethnic groups. The largest is Uzbeks, who make up over 70 percent of the population. The other main ethnic groups in Uzbekistan are Russians, Karakalpaks, Tajiks, Kazakhs, and Tatars. Over 60 percent of the population lives in rural areas. Uzbek, a member of the Turkic language family, is the state language. Russian is still the language of academia, and Tajik is spoken in the cities of Samarkand and Bukhara. In the Karakalpakstan region, both Karakalpak and Uzbek are official languages. While most people are nominally Muslim, only a few actively practice the religion. Throughout Uzbekistan, people wear European-style and traditional clothing. Uzbek men usually wear somber colors, except for a bright-colored sash, which older men use to close their long quilted coats. Many people wear the dopy, a black, four-sided skullcap embroidered in white. Uzbek women are fond of dresses in sparkly cloth, often worn as a knee-length gown.

HISTORY AND PROGRAMS History of the Peace Corps in Uzbekistan The year 2002 marks the Peace Corps' 10th year in Uzbekistan. On November 4, 1992, the government of Uzbekistan and the Peace Corps signed a mutual agreement of understanding whereby the Peace Corps would offer the people of Uzbekistan technical assistance in areas where the need was great. In accordance with this decree, the first group of Volunteers arrived in Tashkent in December 1992, ready to assist the country in meeting the governmentally determined needs of English education and small business development. In the years since then, additional assistance has been requested by the Uzbekistan government, and the Peace Corps has responded accordingly by adding a health project in 1998, and a primary education project in 1999. The culture of the nations found in the territory of Uzbekistan has a very rich history. In the 8th century the armies of an Arab caliph invaded Mawarannahr ("The Land Beyond River"), the territory between the Amudarya river, the Syrdarya river and the land of Khorasan lying to the south of the Amudarya river. This conquest brought a new religion that had risen in Saudi Arabia called Islam. At the same time, there was fire-worship and other religions such as Buddhism, Judaism and Christianity. Since then Islam has dominated far beyond this region and became an extremely important part of its culture. Mawarannahr was one of the most advanced caliphate regions playing a significant role in social and cultural life. The Great Silk Road linked the West with the Orient and people from southern and northern countries passed through this land. The Mawarannahr towns of Bukhara, Samarkand and Kunya-Urgench were the crossroads of caravan routes from India, China, Egypt, Byzantium, Slavic countries and Arabia.

    Uzbek culture
We - Uzbeks have an interesting rich cultural heritage from the merging of centuries old and modern civilizations. Wherever you come in Uzbekistan, Everywhere hospitable hosts will greet you, saying "Assalomu Alaykum!" It seems that there is nothing special when people greet their friends, relatives and guests. But in Uzbekistan, the greeting is something special. The words of the greeting follow in a definite order, for example: " Assalomu Alaykum! Yahshi yuribsizmi? Uyingizdigilar tinch-omon, yahshi yurishibdimi?" From Uzbek it means: "Hi! How are you? How are your nears and dears?" answering the questions the interlocutor shall ask the same questions.
When men meet each other they shake their hands by putting their left hand on their heart, which means that the greeting comes from the deep heart. The best tradition of Uzbeks is hospitality. Everyone, regardless of position is always treated as if he was sent by God. Even the poor are always trying to share with travelers whatever they can offer and their only demand as payment for their hospitality is that traveler relates his stories to them.

    Uzbekistan: History
The history of Uzbekistan, its culture and statehood, foreign economic and social ties of the territory is more than 2.5 millennia. Uzbekistan's freedom loving population fought for its independence against all foreign invaders during centuries. Situated on the crossroads of the Great Silk Road, the region played an important role in the dialogue of different civilizations. its flourishing in the ancient times, then during the reign of the Samanids and Timurids is connected with the involvement of the region in the international economic interrelations. As far back as in the pre-Islamic period, Zoroastrism the world spread religious system was born on the territory of the present day Uzbekistan (in Khorezm) and became common property of all mankind. There was formed the highest technological culture of those times: town-planning, irrigation systems, armory, silk-weaving, cultivation of grain, cotton, grapes and fruits. In those times local technologies and master-craftsmen (Ustos) were highly valued and appreciated. The synthetic character is rather typical for this particular civilization: Combination of achievements gained by the Sogdians, peoples of Khorezm, Turks, India, China, Iran, Middle East and by Hellenism. The religious extension of Islam to Maverannahr, accompanied by military invasions of the Arabs in the 7-8th centuries met with the resistance from the local religious tradition, embodied in the Zoroastrism of the Sogdians and Backtrians, Buddhism of the residents of Balkh and the Upper Amudarya, and the growing authority of the Christian communities. However later on the population of the region was convinced in the great cultural and moral possibilities of Islam.
