Soy: Health Claims for Soy Protein,
Questions About Other Components
by John Henkel Vegetarians and health enthusiasts have known for years that foods rich in soy protein offer a good alternative to meat, poultry, and other animal-based products. As consumers have pursued healthier lifestyles in recent years, consumption of soy foods has risen steadily, bolstered by scientific studies showing health benefits from these products. Last October, the Food and Drug Administration gave food manufacturers permission to put labels on products high in soy protein indicating that these foods may help lower heart disease risk. As with health claims for oat bran and other foods before it, this health claim provides consumers with solid scientific information about the benefits of soy protein and helps them make informed choices to create a "heart healthy" diet. Health claims encourage food manufacturers to make more healthful products. With soy, food manufacturers have responded with a cornucopia of soy-based wares. (See "The Soy Health Claim."

Kane Experimental Forest Introduction: Established March 23, 1932, although research began as early as 1927 or 28. Primary mission has been forest management research, although watershed research was included in the beginning, and wildlife research is part of the current program. On-going long-term studies include individual tree and understory vegetation measurements; treatments include thinnings, regeneration cuts, uneven-age cuts, and long-term measurements of unmanaged forest as well. Forest is heavily used for training and tours for educational, professional, and landowner groups. NADP data collected since 1978. Climate: Approximately 110 cm precip/year, most as rain, including 10 cm/mo during the growing season. Precipitation can be quite acid, as Kane Experimental Forest receives some of the highest deposition levels of both sulfate and nitrate.

Long droughts could return to the US
Patrick Connole Washington, Dec 18: American mega-droughts over decades and dwarfing even the 1930s' `Dust Bowl' could again wreck the nation's Great Plains agricultural "bread basket" next century, US scientists warned. Paleoclimatic studies of tree rings and archaeological remains suggest the US heartland has seen numerous severe droughts over the last 2000 years, the commerce department's National Oceanic and Atmospheric Administration (NOAA) study said. "Conditions that could lead to severe droughts, such as that of the late 16th century, could recur in the future, leading to a natural disaster of a dimension unprecedented in the 20th century," said Jonathan Overpeck, head of NOAA's paleoclimatology programme. Scientists want state planners to take into account a possible upswing in unpredicted droughts and to better conserve well water for irrigation while diversifying farm economies. By 2020, quality water from the High Plains Ogallala Aquifer supplying 30 per cent of the ground water used for US irrigationwill be drained, they warn.

    Donald Worster's Dust Bowl , published in 1979, is considered a classic work of western environmental history by one of the most prominent and profound environmental historians working today. Building on the work of historical ecologists, like James Malin, and historians of agriculture, Worster moved the field of studies of the environment from the American Studies concerns of American views of nature (prominent in such works as Henry Nash Smith's Virgin Land and Roderick Nash's The Wilderness in the American Mind ) to more ecologically-centered studies of human interactions with the environment. In Worster's studiesand in those of the environmental historians who have followed in his footsteps, like William Cronon and Richard Whitethe environment is an historical actor which both shapes and is shaped by human actions upon it. Understanding human interactions with the southern Great Plains during the early twentieth century and how those interactions resulted in one of the greatest human-made ecological disasters in world history illustrates a broader story of the social, economic, political, and cultural institutions which made up American society before World War II.

    1) What is environmental history? How does it differ, in terms of its sources, questions asked, underlying ideas, and criticisms, from other sorts of more "traditional" histories?

    "The depression ... was endemic to the system: the economy was not self-regulating and needed to be controlled." David Colander and Harry Landreth The Great Depression of the 1930s may be a dim memory now, but its impact is still being felt in policy and theory. The prolonged depression created an environment critical of laissez-faire policies and favorable toward ubiquitous state interventionism throughout the Western world. The depression led to the Welfare State and boundless faith in Big Government. It caused most of the Anglo-American economics profession to question classical free-market economics and to search for radical anti-capitalist alternatives, eventually converting to the "new economics" of Keynesianism and "demand-side" economics. Prior to the Great Depression, most Western economists accepted the classical virtues of thrift, limited government, balanced budgets, the gold standard, and Say's Law. While most economists continued to defend free enterprise and free trade on a microeconomic scale, they rejected traditional views on a macroeconomic level in the postwar period, advocating consumption over saving, fiat money over the gold standard, deficit spending over a balanced budget, and active state interventionism over limited government. They bought the Keynesian argument that a free market was inherently unstable and could result in high levels of unemployed labor and resources for indefinite periods. They blamed the Great Depression on laissez-faire capitalism and contended that only massive government spending during World War II saved the capitalist system from defeat. In short, the depression opened the door to widespread collectivism in the United States and around the world.
