  • Varenyky (or pyrohy or perogies) are dough pockets filled with potato, or potato and cheddar cheese,or kapusta (sauerkraut), or cottage cheese, or blueberries, or cherries, or ... Ukrainian varenyky are boiled and resemble to various degrees Polish pierogi, Russian pilmeni, Italian ravioli,Jewish kreplach, or Chinese wonton. Varenyky are very are often served with onions and sour cream. Mmmmm. The word "varenyky" is used throughout Ukraine.The singular form of "varenyky" is "varenyk." Betcha' can't have just one! The word "pyrohy" is used by Ukrainian American and Ukrainian Canadian descendents of pre World War I settlers from Western Ukraine. The singular form of "pyrohy" is "pyrih." The word "perogies" is a Canadianization/Americanization of "pyrohy." Holubtsi are Ukrainian cabbage rolls. The filling is mainly rice with a small amount of hamburger (unlike other East European cabbage rolls which are mainly hamburger with a small amount of rice). Cabbage leaves are steamed to make them soft and then the filling is added. The holubtsi are placed in a large pot, covered with tomato soup (or sauce) and baked.The word "holub" in Ukrainian means "dove," and holubtsi are in the shape of a dove. Borshch is Ukrainian beet soup. Other spellings for "borshch" are "borsch" or "borscht." We prefer "borshch" which would be the official Library of Congress transliteration of the Ukrainian word.

Amply illustrated with photos, drawings, and maps, the subject matter is topically rather than alphabetically arranged. The folk arts section is particularly strong.

The dough should be thin, but not too thin, and resilient to the bite, but not tough; the filling should be distinct, but not overwhelming, in flavor. There are as many variations on this dough as there are Ukrainian cooks. Potato filling is by far the most popular for varenyky. Many non-Ukrainians are under the false impression that potato is the only filling for varenyky. Before the nineteenth century, however, the potato was scarcely used in Ukraine; varenyky were filled with a turnip and onion filling. These half moons of dough may be filled with a variety of fruits, vegetables, meats and cheeses, although for Christmas Eve potato and cabbage fillings are the favorite. 5 cups flour
    1 teaspoon salt
    2 tablespoons butter
    1 cup evaporated milk
    1/2 cup water (more or less as needed) Combine the flour and salt in a large bowl, forming a well in the center. Add the soft butter and evaporated milk gently until all the flour is absorbed.

    For decades, the Western world perceived Ukraine as simply a part of Russia. But borscht, painted eggs and many of the famous Cossack song and dance traditions originated in Ukraine. Western Ukrainians consider themselves to be 100% Ukrainian and the vanguard of their culture, speaking their language and trumpeting their nationalism. In the east, where over 10 million ethnic Russians live, nationalism is less intense, and most people speak Russian. Ukrainian, like Russian and Belarusian, is an Eastern Slavic language. It's arguably the closest of the three to the original 9th century Slavonic used in Kiev before the more formal Church Slavonic from Bulgaria was introduced with Christianity in the 10th century. Despite being watered down by Russian and Polish and being banned by Tsar Alexander II in 1876, the Ukrainian language persevered and is becoming more widespread. It was adopted as the country's official language in 1990, though Russian is understood by almost everyone. The origins of Ukraine's national literature go back to medieval Slavic chronicles such as the 12th century Slovo o polku Ihrevim The Tale of Ihor's Armament ). The beginnings of modern Ukrainian literature stem from mid-18th century wandering philosopher Hryhorii Skovoroda, the 'Ukrainian Socrates'. Skovoroda wrote poems and philosophical tracts in Ukrainian, aimed at the common person rather than the elite. Taras Shevchenko, an ardent nationalist who was born a serf in 1814 and became a national hero, was the first major writer in Ukrainian. His work launched a golden age of Ukrainian literature. The most talented and prolific writer of the early 20th century was Ivan Franko, whose work spanned fiction, poetry, drama, philosophy and children's stories.
