Ukrainian Easter Food
Ukrainian Easter food consists of certain ritual foods that are placed in a basket, covered with a rushnyk, and taken to church to be blessed. These are breakfast foods - literally, the foods that will break the fast - typically, hard boiled eggs, kovbasa, baked cheese, paska bread, babka bread, butter, and horseradish and beet relish. For Easter dinner, all of the above blessed foods may be served plus a wide assortment of appetizers, ham or roast pork, vinegared vegetables salads, sweet cheesecake, tortes, and other festive pastries.
Easter Syrnyk
This non-sweet cheesecake is served as an accompaniment for the main dish. It can also be cut into tiny portions and served as a zakuska dish.
24 ounces dry curd cottage cheese
2 eggs
1 tablespoon sugar
1 tablespoon grated lemon zest
1 beaten egg yolk
Place cottage cheese in a fine sieve and press out the water. Put cheese and eggs in a blender or food processor and process until very smooth and free of any lumps. Stir in sugar and lemon zest.

Festive Ukrainian Cooking > Customer Review #1: At last, understandable!

For any Ukrainian food/holiday tradition enthusiast tired of struggling through encoded recipes from "babtsia," this is the book for you!!! It provides simple recipes and introductions to the mysterious art of Ukrainian cooking "borshcht kvas," "pravdyviy hryby," et. al. as well as modern versions of the old traditions. Makes a traditional Ukrainian Christmas a reality.
Festive Ukrainian Cooking > Customer Review #2: Excellent recipes - like mom or grandmother used to make Used to drive me crazy when my mother cooked Ukrainian foods and never had a recipe. Well, with this book all that has changed. I use it for those recipes where "a little of this and a little of that and then you mix it together" mean little to me. Also has excellent explanations of the different holidays and foods appropriate for the holiday.

Just think about this...while in Ukraine you'll be eating delicious food with no preservatives or chemicals.
Yes their food is rich because they love using butter and cream in many of their dishes but if you are so concerned about "fat" then all you have to do is be selective.
I have yet to gain any substantial weight while on my tours but when I come home I do.
I think we should be much more concerned about what's in the food we eat here.
Robert J. Tomkins
R.J.'s Tours Ltd
www.tourukraine.com : I'm interested to know what people think of Ukrainian cuisine. I think North Americans have been conditioned to fear fat in food. Slavic cooking is notoriously high in fat. Mmmm sour cream everywhere and lotsa fried food. How have you dealt with that when you travelled there? Did you avoid it or embrace it?
: Webmaster, I do hope that discussing food in Ukraine falls into the travel and culture category and will be allowed!
