Why not try stuffing with chili and cilantro. Using tamales in stuffing accentuated with black olives, beans, corn and a spicy Mexican cheese is an idea.
How about Turkey Asian style with a soy sauce glaze. You could even add a little honey to the glaze. Another idea for a glaze could be made of honey, molasses and ginger. Pumpkin puree or a sweet potato puree might be nice additions to the stuffing. The se items would also be lovely as side dishes. I would also recommend that even if you try an ethnic slant on Thanksgiving that you still offer traditional items too.
An Asian of Thai twist on Thanksgiving would be very nice. For Chinese-style make a glaze of orange marmalade and ginger. You could make little pancakes Moo Shi-style to wrap up your sliced turkey. Bok choy would be a great side dish. Try a rice pudding with shitake mushrooms and lemongrass seasoning.

What's Cooking for Hanukkah

So I'm a Jewish kid growing up in the heart of Catholic country and all my friends are talking about what they're having for Christmas dinner-Roast Turkey with Cornbread Dressing, Baked Sweet Potato's with Marshmallows, Pecan Pie and the like. When it comes around to me I'm talking about Potato Latkes (potato pancakes), Kugel (baked noodles with raisins, walnuts, brown sugar), Roast Chicken, Smoked Salmon and Hamantaschen (yeast dough cookies with fruit or poppy seed filling).
There are a lot of similarities in ethnic cooking, your own Momma or Grandma was the best that ever was, whether you're Jewish, Italian, Irish, Cajun or whatever and her kitchen always smelled wonderful. The most amazing thing is that you always knew what you were eating, if it had chicken in it, it looked like chicken, it smelled like chicken and it tasted like chicken, no fancy-shmancy exotic stuff was to be found. There was no nouvelle anything, just good solid stick-to-your-ribs food.
With Jewish food you know what you're eating, it's very simple fare, it's tasty and there is always plenty of it, and it always, always makes you happy. Sometimes it even makes you well when you're sick, as in the case Chicken and Matzo Ball Soup!

We are a nation of immigrants. Only our Native American bothers and sisters can claim this land as their ancestral home. The rest of us came to this land, or our parents before us came here, from many other places. The United States of America is often called "the melting pot of the world". Our cooking is as diverse as our population. The USA cooking pot contains a blend of cuisines from many countries. We sometimes use the term "American cooking" to loosely define a collection of traditional dishes that have gained popularity across the USA.
American Cooking is hard to define
Few people in the US could agree on which foods are traditional American cooking. Certain simple dishes like roast beef, fried chicken, grilled steak, stuffed turkey, meatloaf, baked potato, yams, corn on the cob, potato salad, apple pie, clam chowder, hamburgers, hotdogs and hot wings would normally be included on most lists of American cooking. Many restaurants and bars in the US serve hot wings or Nachos as snack food. Try them both, but order mild seasoning the first time unless you are accustomed to eating burning coals. Contrary to popular belief, we folks in the USA do not eat fast food every day. We often eat real food in sit-down restaurants, and we sometimes even prepare home-cooked meals. You will certainly find plenty of fast food establishments and chain restaurants in our country. They are convenient places where you can find a consistent quality of food in clean surroundings with good service. I prefer to explore the local establishments where I can sample a variety of dishes from the regional cuisine.

(CBS) This weekend, many of us will be making our final grocery list for the big Thanksgiving meal.
But if you haven't figured out your menu yet, don't fret, because cookbook author David Rosengarten shared a great and easy menu for our special holiday Chef on a Shoestring challenge.
If you're looking for fancy, stacked food with gourmet ingredients, David Rosengarten's latest cookbook, "It's All American Food," is not for you.
The book, Rosengarten writes, is "a book about what we eat in America and everything that we remember eating. It revisits and reinvents all those foods from our grandmothers' kitchens that we once found mildly embarrassing. For some time now, happily, we have been returning home, discovering not only the potency of American regional and home cooking of the past but also the unexpected foods that have arrived on our shores over the past hundred years and will be shaping the way we think about American cooking for some time to come." Rosengarten continues to say that he wrote his book with the intention of discovering America all over again. He says he had to look at the American table in "unaccustomed ways." This book, he says, is a panoply of everything, from regional cooking to Cuban-Chinese dishes because so-called exotic dishes have become a part of American dining choices.

    Turkey in mole plobano sauce
    for 10/12 people

    1 turkey weighing approx. 4 kg./9 lb. in pieces - 4 garlic cloves - 1/2 onion - 1 tablespoon coarse-grained salt - 4 l. water.
    In a pan place pieces of turkey, cleaned onion, peeled garlic and salt, cover with water and bring to the boil. Cook over moderate flame for 1 h. until the turkey becomes tender. Drain, keep stock and keep turkey to one side.
    For sauce: heat two tablespoons oil in a pan and place red and green pepper and fresh green chili peppers in (without seeds and white membranes to obtain a less spicy sauce), gently simmer until they soften, drain peppers, keep oil and simmer onion, garlic; put to one side and in the same oil toast almonds, peanuts, coriander cloves, pepper grains, cinnamon and aniseed for 5/8'.
    In a baking tray arrange tomatoes and red chili peppers and place in oven under grill until the skin turns black; to help peel, place in a plastic food bag, close, leave to rest for 10/15' and peel.
