Introduction
Turkey offers the traveler an opportunity to try the exotic after a familiar trip to Europe. The friendly, courteous Turkish people have been hosting visitors in one form or another for centuries. "Go for the history, but stay for the food," is often said. Turkey is a unique republic located on the eastern end of the Mediterranean. While most of her citizens are Islamic, the government of Turkey is both democratic and secular. Turkey has always been the meeting point for European and Middle Eastern neighbors, becoming an important link between east and west. Consequently, her customs and cuisine are modern, and at the same time historic. Turkey has often been called the crossroads of Europe. Over the centuries the Hittites, Seljuks, Persians, Greeks and Romans have ruled the area. The Turkish Diet It was during the rise of the Ottoman Empire, (1453-1909) which at its height (1453-1650) extended into Eastern Europe, Egypt, and Inner Asia, that the genius of Turkish cooking had its greatest influence. Centuries of Ottoman empire rule helped to spread Turkish cuisine and ingredients into Eastern Europe and throughout the Middle East. Many well-known recipes show an influence from Turkish cuisine: yogurt salads, fish in olive oil, stuffed vegetables and vine leaves, and syrupy filo dough desserts.

To begin, we've selected a few popular favorites.
Japanese Knives Unlike Western cutlery, traditional Japanese blades are sharpened on one edge only. According to experts, these single-edged blades cut quicker and cleaner.
Long, with a medium-width blade, the santoku serves as an all-purpose cutting tool. The deba, usuba, and yanagi are specialty knives designed for use with specific foods. The deba's broad, triangular blade makes it an excellent choice for filleting fish and cutting bones. The slender, pointed, arrowlike yanagi deftly slices raw fish and sushi. Chopping vegetables falls under the domain of the usuba, with its long, cleaverlike blade.
Although most Japanese knives are ground on the right side for right-handed use, left-handed blades can be ordered. In addition, Western manufacturers produce santoku with edges ground on both sides.

Fusion Cuisine: Cooking Without Boundaries America, the melting pot of cultures, is fast becoming the melting pot of cuisines, too. In continuing to satisfy their customers' demands for variety, chefs nationwide are blending together indigenous ingredients from different cultures in a culinary trend known as fusion cuisine.
"Fusion cuisine is when you combine particular ethnic cuisines and fuse them into one," said Keith Coughenour, executive chef and captain of this year's Culinary Olympics Team USA. "The combination has to make sense, be compatible and, ultimately, taste good."
In this "East meets West cooking," the ingredients, flavors and techniques of different cultures are pulled together to create unique, flavorful dishes. For example, Pacific Rim cooking combines Asian and Western styles. Another popular combination is French and Vietnamese.
When mixing ethnic cuisines, it's important to consider the flavor of the ingredients. Coughenour suggests starting with products that overlap both of the cuisines being fused, such as cilantro and hot peppers, which are both used in Asian and Mexican cuisines. "Once you find a similar starting point, you can expand the flavor by adding ingredients specific to each cuisine," said Sherrie Rosenblatt, director of public relations for the National Turkey Federation. "It helps to use a versatile base like turkey, whose mild flavor takes on seasonings easily."
While most chefs are embracing this concept, many classically trained chefs are concerned that the blending of ingredients that naturally work well together is being sacrificed in the pursuit of preparing different and exotic dishes. Coughenour uses the example of young chefs just out of culinary school. "They're limited in their knowledge of regional and ethical cuisines and often put together ingredients that don't make sense."

Turkey leftovers can be the salvation of busy cooks during the hectic weeks leading up to the December holidays. Roasting a bigger bird than needed on Thanksgiving Day offers the prospect of enough leftovers. To plan for leftovers, calculate one pound of turkey for every three cups of diced meat, or four to six servings. Nutrition and health experts recommend that a single serving of turkey or any other meat in a healthful meal should be no more than about three ounces - the size of a deck of cards. Turkey is low in fat (especially the breast) and high in protein. It is an inexpensive source of iron, zinc, phosphorus, potassium and B vitamins.

This is the ultimate American Thanksgiving holiday movie. Jodie Foster's HOME FOR THE HOLIDAYS was a decent start but this film basically takes all of the required elements from that movie, the touches of humor, the emotions, the family issues and multiplies them across four different cultures celebrating the holiday on the same day. PLOT: Four families from different cultural backgrounds (Jewish, Latino, Vietnamese, African-American) celebrate the holiday of Thanksgiving in respectively intertwining stories. Many issues are comedically and dramatically discussed here including adultery, racism, cultural ethnocentricity, teen accessibility to guns, homosexuality, mother-in-laws, parental pressure, old school mentality, interracial dating and much, much more.
