    Hot Chili Paste Harisa is sold in tubes by both Tunisian and French firms. The Tunisian one is better, but neither can compare to your own freshly made from this recipe. I first became intrigued with making harisa from a preparation made by Mouldi Hadiji, my Arabic teacher of 20 years ago. I concocted this version, based on a Berber-style one I had in Djerba, from a recipe description given to me by a merchant in the market in Tunis who unfortunately provided measurements that could last me a century, namely calling for fifty pounds of chili. Some cooks also use mint, onions, or olive oil in their harisa. I modified the recipe after much consultation with an illustrious group of opinionated people including Chef Moncef Meddeb, Mohammed Kouki, the doyen of Tunisian food experts, and cookbook authors Paula Wolfert , Nancy Harmon Jenkins, and Deborah Madison. Be very careful when handling hot chili peppers, making sure that you do not put your fingers near your eyes, nose, or mouth or you will live to regret it. Wash your hands well with soap and water after handling chili peppers. After you make you first harisa, with all the modern conveniences, I hope you can appreciate what exacting women's work this was, making it in the traditional mortar. ounces mildly hot dried Guajillo chili peppers

    Tunisian blast claims 21st victim
    The synagogue is one of the few in Africa BERLIN, Germany Another German tourist has died from his injuries sustained in a suspected suicide blast outside a Tunisian synagogue last month, pushing the death toll to 21. The 44-year-old had suffered severe burns to more than 70 percent of his body after a truck containing cooking gas exploded near the El Ghriba synagogue on the Tunisian island of Djerba. A statement from Berlin's Accident Hospital, where he had later been taken, said he died on Thursday. The statement added he had undergone plastic surgery and that "despite intensive care, doctors could not save him," The Associated Press reported. The death brings the number of Germans killed in the blast to 14. Two German women who also suffered third-degree burns to 70 percent of their bodies in the explosion died in the same Berlin hospital earlier in the week. Eleven German tourists, five Tunisians and a Frenchman were initially killed in the incident, which both the Tunisian and German governments now believe was a planned attack.

    Tunis blast 'a terror attack'
    The aftermath: 16 people, including 11 German tourists, were killed TUNIS, Tunisia Germany and Tunisia say they are "100 percent sure" that an explosion that killed 11 German tourists near a synagogue in a Tunisian resort was a terrorist attack. German Interior Minister Otto Schily and Tunisian President Zine al-Abidine Ben Ali held talks on Monday at which they said both countries believed the explosion on the island of Djerba was a deliberate attack. Schily said he was "100 percent sure that it was a terrorist crime," but cast doubts on speculation in Germany that the blast was linked to Osama bin Laden's al Qaeda network. "For the time being, we can't say it was al Qaeda," he said. Schily, who visited the site of the blast Sunday, added: "Information and details point to a crime. The amount and nature of the material used in the tanker confirm that it was an (terrorist) attack."

    Introduction
    Located on the northern coast of Africa, Tunisia has boundaries with Algeria to the west, Libya to the southeast and the Mediterranean Sea to the north and east.
    The Atlas Mountains divide the country into two regions, the well-watered north and the semi-arid south.
