Jewish cooking shows the influence of Middle Eastern, Mediterranean, Spanish, German and Eastern European styles of cooking, all influenced by the unique dietary constraints of kashrut and other Jewish laws. Many of the foods that we think of as Jewish are not unique to Jewish culture. Stuffed cabbage, a traditional Jewish dish, is common in Eastern Europe. Blintzes and knishes are familiar to all Germans, not just Jewish ones. Falafel and hummus, increasingly thought of as Israeli-Jewish foods, can be found in any Greek restaurant. But the combination of these varied foods into one style of cooking, along with our own innovations, is uniquely Jewish. 1/4 c. bell pepper, chopped fine
1/4 c. onion, chopped fine
1 c. Hellmann's mayonnaise 1 c. Parmesan cheese, grated Salt and pepper to taste *Butter crumbs Slice squash, steam cook until tender, mash slightly. Beat eggs and add remaining ingredients - except butter crumbs. Taste for seasoning. Put in buttered 2 quart casserole and bake at 350 degrees for 30 minutes - then add buttered crumbs and bake until it browns. - BUTTERED CRUMBS About 1/4 block melted butter and add 1/3 cup crumbs. THANKSGIVING DRESSING 1 recipe baked cornbread 1 onion 1/2 loaf bread crumbs 3 eggs 1/2 stalk celery Chop onion and celery and saute in shortening or oil until tender. Add to bread mixture along with poultry seasoning, salt and pepper to taste and turkey broth as needed to moisten. Stir in a large pan, then add slightly beaten eggs and mix in well. Pour into well greased pan and bake at 350 degrees for an hour, stirring several times. For additional broth, boil a chicken or use canned broth.

In 1621 the Plymouth colonists and the Wampanoag Indians shared an autumn harvest feast which is now known as the first Thanksgiving. While cooking methods and table etiquette have changed as the holiday has evolved, the meal is still consumed today with the same spirit of celebration and overindulgence. What foods topped the table at the first harvest feast? Historians aren't completely certain about the full bounty, but it's safe to say the pilgrims weren't gobbling up pumpkin pie or playing with their mashed potatoes. Following is a list of the foods that were available to the colonists at the time of the 1621 feast. However, the only two items that historians know for sure were on the menu are venison and wild fowl, which are mentioned in primary sources. The most detailed description of the " First Thanksgiving " comes from Edward Winslow. Click here for a list of foods that may or may not have been on the menu.
  • The pilgrims didn't use forks; they ate with spoons, knives, and their fingers. They wiped their hands on large cloth napkins which they also used to pick up hot morsels of food.
  • Salt would have been on the table at the harvest feast, and people would have sprinkled it on their food. Pepper, however, was something that they used for cooking but wasn't available on the table.

Thanksgiving dinner is tricky you've got to please everybody with traditional favorites, but you also want the food to be special. And cooking a huge menu midweek translates into a lot of work.
That's why, when Fine Cooking approached me to create a Thanksgiving menu that was both elegant and do-able, I decided to tackle the job the way I would at my restaurant on Martha's Vineyard. My kitchen is quite small, and I have to be really organized. I start by making a list of ingredients I'll need, and then I make a worklist for each of the dishes I'll serve. Most important, I prioritize this list according to how far in advance each task can be done.
I did the same thing for Fine Cooking' s Thanksgiving dinner. I developed recipes that are full of terrific autumn flavors. I prepared and served this whole menu to a group of family and friends, streamlined my recipes and worklist a bit further, and sent them along to Fine Cooking

Finding the perfect turkey for your needs is the first step to a memorable traditional Thanksgiving meal. Here's help on determining the size and type of bird to purchase.
How big?
Smaller birds fit in the refrigerator better and are easier to handle. If you're hosting a big crowd and have two ovens, consider roasting two smaller birds instead of a large one (this also gives you a good excuse to try two kinds of stuffing). Some cooks look forward to turkey leftovers as weekend fare; others prefer to serve just enough to feed the guests at the feast.
Turkey math
For birds under 16 pounds, figure at least 1 pound of turkey per person. For birds 16 pounds and heavier, figure a bit less since there's more meat in proportion to bone. If you want substantial seconds and leftovers, allow another 1/2 pound per person.

How much turkey do you need? Allow about one pound of turkey per Thanksgiving guest when buying a whole bird. For prestuffed birds, allow about 1.25 pounds per person and keep the turkey frozen until you're ready to cook it. Thawing should be done in the refrigerator, says Bill Schafer, food safety expert with the University of Minnesota Extension Service. Allow 24 hours for every five pounds of turkey, and after thawing, keep a turkey refrigerated for only a day or two before cooking. Whether you buy a fresh or frozen bird is strictly personal preference. But if you go for a fresh bird, buy it only a day or two before cooking, Schafer advises. Never buy a prestuffed fresh turkey. Thaw a turkey fast in cold water If you don't have room in your refrigerator to thaw the turkey, or just didn't get started soon enough, go the cold water route. Submerge the frozen bird in cold water and change the water every 30 minutes, advises Bill Schafer, food safety expert with the University of Minnesota Extension Service. Allow about 30 minutes of defrosting time per pound of turkey, Schafer advises. Then cook the turkey immediately after thawing. Use a meat thermometer for safe Thanksgiving turkey Set your oven at 325 degrees and place a meat thermometer in the turkey thigh. When the thermometer registers 180 degrees in the thigh, the turkey is ready, says Bill Schafer, food safety expert with the University of Minnesota Extension Service. Stuffing-whether it's cooked inside the bird or in a separate dish-should reach 165 degrees F.

COLLEGE PARK, MD (November 19, 1999) - Whether you like dark or white meat, cooks can look to physics for some tips for making sure that Thanksgiving turkey is quickly gobbled up. Harold McGee, a writer on food science, has come up with some scientifically-based, and very effective, tips for making sure your turkey rules the roost this Thursday. After years of experience cooking turkeys, "and having them turn out badly," McGee decided there had to be a better way. So he turned to science. McGee has written two books on the science of cooking, and is co-author of an article in this month's Physics Today on the science of cooking meats.

Thanksgiving Turkey Marinade Recipe
2 cloves garlic, cut up 1/2 tsp. pepper 1/2 tsp. oregano 1/2 tsp. seasoned salt 1 lemon (juice of) 1 Tbsp. salt 1/2 c. oil Combine all ingredients and rub over the entire defrosted turkey night before. Cover turkey; refrigerate and next day, cook.
Pumpkin Cheesecake
Ingredients: 16 ounces cream cheese softened 1/2 cup sugar 1/2 teaspoon vanilla 2 eggs 1/2 cup canned pumpkin 1/2 teaspoon ground cinnamon 1 dash ground cloves 1 dash nutmeg 1 ready-to-use graham cracker crumb crust 6 ounces or 9 inches Preparation: Mix cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs; mix until blended. Remove 1-cup batter; stir in pumpkin and spices. Pour remaining plain batter into crust. Top with pumpkin batter. Bake at 350°F for 40 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight.
