Sweet cider Raisins and nuts Black coffee Our bill of fare is a simple one, and of course as many additions can be made to it as desired. The first article to make on either Monday or Tuesday are the pies. Make the paste of one quart of flour, one half-pound of sweet, good butter, the same of lard, and one small cup of cold water. Chop the butter and lard into the flour, until as fine as powder, wet into a stiff dough, knead into a ball, and roll deftly and quickly into a thin sheet, always rolling from you. Fit on the pie plates.

Feast on our wide array of specialities and enjoy your thanksgiving holiday. A.Turkey Recipes: 1.Herbed Roasted Turkey:: Ingredients:
1 whole 12 to 14 lb turkey, 1/2 cup rosemary sprigs(fresh), 1/2 cup sage leaves(fresh), 1 apple(quartered), 1 stalk celery(halved), 1 onion(halved), 1/2 cup butter(melted). Method:
Remove giblets and neck from turkey; reserve for other uses if desired. Rinse turkey with cold water and pat dry.Loosen skin from the turkey breast a bit not totally detaching. Place rosemary and sage under skin then smooth skin over herbs and back into place.Place apple celery and onion into the neck cavity. Place the turkey breast side up on a rack in a shallow roasting pan and brush with melted butter. Cover turkey loosely with a "tent" of aluminum foil.Bake at 325 degrees until meat thermometer registers about 180 degrees. This should take from 3 1/2 to 4 hours but begin checking after 3 hours. Remove turkey and let stand 15 minutes before carving. Serve with gravy. 2.Turkey Breast Braised With Garlic And Rice:

1. If turkey is frozen, thaw in the refrigerator or cold water. When ready to cook, remove the wrapper. Preheat the oven to 325° Fahrenheit. (Never leave raw turkey out for longer than neccessary because of risk of food poisining)
2. Remove the neck from the body cavity and the giblets from the neck cavity. Drain the juices and blot the cavities with paper towels.
3. Just before roasting, stuff the neck and body cavities lightly, if desired. Turn the wings back to hold the neck skin in place. Return legs to tucked position, if untucked. No trussing is necessary.
4. Place the turkey, breast side up, on a flat rack in an open roasting pan about 2 inches deep. A handy "turkey lifter" comes with each Butterball Turkey. Place this special string cradle on a rack, then place the turkey on top and bring the loops up around the turkey. Do this before putting the turkey in the oven and when lifting the cooked turkey from the pan, use the loops as handles.
5. Insert an oven-safe meat thermometer deep into the lower part of the thigh next to the body, not touching the bone.
