To stuff or not to stuff, that is the question
KINGSTON, R.I. November 1, 2001 As the holiday season approaches, one of the most frequently asked questions by callers to the URI Gardening and Food Safety Hotline concerns the safety of stuffing a turkey.
According to Martha Patnoad, URI Cooperative Extension food safety education specialist, the question of whether to cook the stuffing inside the bird or not has been debated for several years. "Yes, it is riskier to cook the stuffing inside the bird because harmful bacteria can survive in stuffing that has not reached the safe temperature of 165 degrees, possibly resulting in foodborne illness," she said.
Patnoad said the safest method is to cook the stuffing outside the turkey in a casserole dish in a 325 degree oven. As with stuffing cooked in the turkey, the internal temperature must reach 165.
Those cooks choosing to stuff the turkey can prepare the dry ingredients a day ahead. "Mixing moist ingredients ahead of time may allow harmful bacteria to grow. So just prior to stuffing the turkey, mix the dry and wet ingredients together and use only cooked ingredients in the stuffing," said Patnoad.

Our holiday history, traditions and fun By: John Shepler Gobble. Gobble. What's that rustling in the bush? Why, it's old Tom Turkey trying to keep a low profile as the Thanksgiving holiday approaches. Little does he know that most families already have their plump Thanksgiving bird safely on ice in the freezer. Pick the feathers off that skinny, bad tempered fowl running through the corn fields? Why, that's just NOT traditional. Or is it? What are you looking forward to for Thanksgiving this year? Is it drumsticks and mashed potatoes without end? The excitement of the Macy's Thanksgiving Day Parade? A lazy afternoon in front of the big screen with football, football, football? Family play time? Perhaps even a bit of reflection on what we have to be thankful for? Thanksgiving means many things to us. Perhaps it is the combination of history and personal experiences that makes it a welcome respite just before the rush of Christmas shopping takes off at full speed. I've collected some history and a few thoughts of my own that I'd like to share with you on the subject of a Thanksgiving celebration. The origins of Thanksgiving predated the Pilgrims at least 2,000 years. After the harvest of each year was safely stored for the winter, Celtic priests, the Druids, would mark the end of their calendar with prayers to their sun god for protection during the period of darkness and cold of winter. These harvest festivals evolved and became combined with a Christian Feast of Saints.

AMERICAN INDIAN RECIPES FOR THANKSGIVING

Most of the food served at the first Thanksgiving was probably influenced by Native American cuisine, or there likely wouldn't have been much on the table at all. Here are some contemporary versions:
Mohawk Corn
Saute 2 cups of whole kernel corn in 3 tablespoons of butter. Add 1/2 cup of black walnuts and 1/2 teaspoon black walnut flavoring. Heat and serve. Serves 2.
Chestnut Cakes
Roast 1 pound of chestnuts. Cool, peel, and puree. Add 1/2 small onion, chopped fine, and enough cornmeal and boiling water to hold the mixture together. Make hamburger-sized patties, and fry in hot oil until golden on each side. Drain, salt, and eat. Do not add salt before cooking as it causes cornmeal to crumble.
Maple-Molasses Baked Beans
1 pound dried navy, kidney, baby lima, pinto, or black beans 4 to 6 strips salt pork or thick sliced bacon 1/2 cup maple syrup 1/2 cup molasses 1 teaspoon dry mustard salt (optional) Place beans in a large pot and cover them with water completely. Soak overnight. In the morning, drain and cover with fresh cold water. Cook beans in liquid, over low heat, for 2 to 3 hours until tender, adding more water as needed to keep beans from sticking. Drain water from beans. Place salt pork or bacon on the bottom and sides of a 1-1/2 quart baking dish. In a mixing bowl, combine beans, syrup, molasses, and mustard. If using bacon, you may want to add a little salt. Pour bean mixture into baking dish and bake, covered at 300 degrees F for 2 hours, stirring occasionally. Uncover and bake 30 minutes longer. Serves 6.
