2 cups fresh orange juice
1/4 cup slivered almonds
3/4 cup golden raisins
1/2 cup pitted whole prunes, snipped in half
8 whole cloves
2 inches cinnamon sticks, broken in half
1/2 inch fresh ginger
4 whole cardamom pods, bruised
1 (750 ml) bottle ruby port
3/4 cup brandy 3/4 cup vodka or aquavit Instructions Place orange juice, almonds, raisins, and prunes into a large pan. Tie cloves, cinnamon, ginger and cardamom in cheesecloth and add to the pan. Bring mixture to a boil, then lower heat and simmer 45 minutes. Discard spice bag and add the port to the pan. Heat until just beginning to simmer, but do not boil. Add the brandy and vodka and heat through. Carefully ignite mixture with a match (throw the lit match into the brew, quickly step back several feet and wait for flames to subside) (make sure nothing nearby will be ignited from the flambe), then cover the pan with a lid to extinguish. Remove match from brew. Serve warm.

3 pounds of salmon, preferably the center cut
1/4 cup sugar
1-1/2 cups freshly chopped dill, stems included
1/4 cup kosher salt
1 tsp fresh ground black pepper
Instructions
Remove all the small bones from the salmon with tweezers. Pat the fish dry. Rub the salmon flesh with 1/4 cup kosher salt, 1 teaspoon butcher-grind black pepper, the sugar and the shopped dill. Cover with plastic wrap. Weight down with a brick or other heavy object and refrigerate 48 to 72 hours. Before serving, scrape off the dill and seasonings. Slice on the bias as if it were smoked salmon. Yield: 8 to 10 servings Credits

    We eat lots of kinds of food in Sweden. Husmanskost is the name of the most regular dishes. Only at the weekends we make a "big" dinner. Then the ingredients are more expensive and we make it more exclusive. At feasts we have traditionel dishes like dop in the pod and surströmming (fermented baltic herring).
    Swedish food traditions
    Genuine Swedish food- Is there such a thing? Sweden has a fine old culinary tradition. The Swedish husmanskost, good old everyday food based on classic country cooking, has been influenced by foreign cuisine over the years. Basically it is genuinely Swedish. Today the plain and hearty husmanskost is undergoing a renaissance in Sweden. The best of the old recipes have been revived and often revised so they are less sturdy and easier to prepare. Propaganda for better diets has also helped to improve the Swedish husmanskost, reduct the fat content and add fruits and vegetables.
    Regional Specialties
    In Sweden everybody has about the same food habits and customs. Many provinces have a reputation for special food. On the eastcoust the most important food is strömming (Baltic herring). That is a small silvery fish. Salmon, trout and whitefish are other important fishes. Norrland, the nine northern provinces of Sweden has a lot to offer. In Lappland you must try the dark gamy reindeer meet and åkerbär, the rare berry that grows wild along roadsides and ditches. The åkerbär looks like a small raspberry. The hjortron or cloudberry is another fine Norrland fruit. Two Norrland provinces, Västerbotten and Norrbotten are famous for their dumplings, palt. They are made of raw as well as cooked potatoes, flour and salt, and served with butter and lingonberries. Other Norrland specialties are tunnbröd, the thin white crispbread, and långmjölk (sour milk).

    20 pancakes
    2 cups milk
    eggs

    1 tablespoon vegetable oil
    1 1/2 cups all-purpose flour 3 tablespoons sugar 1/4 teaspoon salt Lingonberries or raspberries Seedless raspberry jam or fruit spread, warmed Whipped topping In a blender, combine the first six ingredients. Cover and process until blended. Heat a lightly greased 8-in. nonstick skillet; pour 1/4 cup batter into center of skillet. Lift and tilt pan to evenly coat bottom. Cook until top appears dry; turn and cook 15-20 seconds longer. Repeat with remaining batter, adding oil to skillet as needed. Stack pancakes with waxed paper or paper towels in between. Reheat in the microwave if desired. Fold pancakes into quarters; serve with berries, raspberry jam and whipped topping.     Basic Oven Meatballs Recipes
    Ingredients: 3 Beaten eggs 3/4 c Milk 3 c Soft bread crumbs (about 4 1/2 slices) 1/2 c Finely chopped onion 2 ts Salt 3 lb Ground beef Instructions: In large mixing bowl,combine beaten eggs,milk,bread crumbs, chopped onion and salt;add meat and mix well. Shape into 6 dozen 1" balls. Place half the meatballs in 15 1/2 x 10 1/2 x 2 1/4" baking pan. Bake @ 375 degrees 25 to 30 minutes. Remove from pan; cool. Repeat with remaining meatballs. Place cooled meatballs on cookie sheet;freeze firm. Using 24 meatballs per package,wrap meatballs in moisture vapor proof material. Seal and label. Makes 6 dozen.

    Meatballs 1 pound hamburger 1/2 cup uncooked rice 1/2 cup water 1/3 cup chopped onion 1 teaspoon salt 1/2 teaspoon celery salt 1/8 teaspoon garlic powder 1/8 teaspoon pepper Sauce 1 can (5 ounce) tomato sauce 1 cup water 2 teaspoon Worcestershire sauce In a mixing bowl combine the hamburger, rice, 1/2 cup water, onion, salt, celery salt, garlic powder, and pepper. Mix well. Shape into balls. Place meatballs in an ungreased baking dish. Mix together the tomato sauce, 1 cup water, and Worcestershire sauce. Pour over the meatballs. Cover and bake in a 400 degree F. oven for 45 minutes. Remove cover and continue baking for an additional 15 minutes. This meatball recipe will make 15-20 meatballs.

    (Serves 2-3 hungry people.) This delicious recepie was given to me by my friend Annica. Unfortunately she is from Sweden and so the ingredients are in metric. But that just makes it more exciting!
    Ingredients:
    3 eggs bananas 2 dl sugar (decileter) strawberries 2 dl flour strawberry jam 2 tablespoons baking powder (metric?) whipped cream 1/2 dl milk/cream
    Directions:
    Mix eggs and sugar until "fluffy." Mix flour and baking powder together and mix in with eggs and sugar. Add the milk. Bake in a 20x40 cm pan the oven for 5 minutes at 250 degrees C. (Cooking for a bit longer is probably a good idea.) Cut the cake in two sheets and spread strawberry jam on one side. Add sliced bananas on top of the jam. Lay the second part on top.     The rutabaga is grown for the bulbous part of its stalk which grows underground. Once known as "chou de Siam" (Siamese cabbage) in French, the rutabaga grows in cold wet countries. It is a cross between the turnip and kale which originated in Sweden, hence its name. Nutritional values per 100 g

    The swede should be nicely shaped, purple at the top, with a narrow smooth crown, a well-defined central taproot and a minimum of secondary roots. It should be unblemished and undamaged. Beware of buying swedes that are very light in weight: they may be hollow. Choose young vegetables. Larger ones can be tough and fibrous and have a stronger taste. Storage Keep in a cool, dark place. Refrigerate for up to 10 days. As they age, swedes dry out and soften.
