Welcome to A Swedish Kitchen , a website devoted to Swedish food, both in Sweden and abroad.
Look for my new book A Swedish Kitchen: Reminiscences and Recipes to be published Fall 2004 by Hippocrene Press.
This page is designed and maintained by Judith Pierce Rosenberg . I am the author of A Question of Balance: Artists and Writers on Motherhood (Papier-Mache Press), a collection of interviews with 25 well-known women in the arts, including Ursula K. Le Guin, Dorothy Allison, Linda Hogan, Elizabeth Murray, Rita Dove, and Faith Ringgold. For the past 20 years, I have also worked as a freelance journalist, contributing to such periodicals as Ms. Magazine, The Radcliffe Culinary Times, Publishers Weekly,The Boston Globe,The Christian Science Monitor,The Middle East Magazine, and Fiberarts, among others. The new book is a memoir about my experiences with Swedish food. My love affair with this cuisine began more than two decades ago when I first visited Stockholm with my Swedish-American boyfriend, now husband. I have returned to Sweden a couple of dozen times and, for the past fourteen years, I have spent part of each summer in the Stockholm archipelago. Over time, I have learned to speak Swedish and to cook Swedish, which brings me to this website. This site will include anecdotes from my own experiences in Sweden and with Swedish food, as well as information on ingredients, holidays, and dining customs, and reviews of interesting restaurants, books, magazine articles, and websites. I also want to hear about what interests you, dear reader, so please feel free to send a recipe for the recipe exchange or email in your own anecdotes and cooking tips.

He took it to the counter and demanded another, so they got him a new one. He went back to his seat and was getting ready to eat it when he noticed another hair. He took it back to the counter and demanded a hamburger WITHOUT hair, so they got a new one. He went back to his seat and was getting ready to eat this one. He saw ANOTHER hair and was outraged. He demanded to see how they were making their hamburgers. They took him back to the grills and there was an extremely large fat hairy Swedish man making hamburger under his armpits. The man exclaimed "That's DISGUSTING!" The clerk replied, "If you think thats disgusting, you should see the way he makes donuts."

    Introduction
    Many of the traditional Swedish dishes are in our opinion often bordering on the inedible. Others are a little bit "special", like the Swedish pea-soup, made out of dried yellow peas, which earlier was served as dinner every Thursday during the winter season. Some recipies use ingredients that are difficult to come by outside Sweden, such as smoked heart of reindeer. The present collection includes recipies for Swedish dishes that:

    Smörgåsbord Favorite
    Swedish meatballs are probably one of the best-known Swedish cooking specialties, definitely a necessity on the smörgåsbord. Norway, Denmark and Finland have their own versions, too. Every Scandinavian cookbook has at least one recipe, usually several. The varieties are staggering to think about! Why so many? How should you pick one? Remember that meatballs were probably a way to use up leftovers, and then the mystery of all the different recipes clears up. The cook used the meat that was on hand, a filler that was available, and ingredients for the sauce based on not only regional or family preference, but what was handy. Some recipes call for half beef, half pork. Other recipes have half veal, half pork. Some have one-third each of pork, beef and veal. If you have dietary or political objections to any of the meats, substitute others. Once, as a way to include a vegetarian friend in a smörgåsbord I was serving, I made a recipe using only a vegetarian substitute for ground beef (and only vegetable oil, no dairy or meat products in the sauce). It wasn't great, but it wasn't bad, either. For flavoring, some recipes use nutmeg and dry mustard for flavoring, others use minced onions and allspice, others use thyme and marjoram. White pepper is a common ingredient. I once made them with only minced capers for flavoring, and loved it.

    Three settings from the 1970s, 1980s and 1990s reflect the times and will allow visitors to remember the kitchen units and furniture, appliances and utensils, china and table settings. And the food, what recipes were popular in the 1970s? What did we drink then? A great deal has happened during this period: compare the dairy products on offer in 1970 with the ones on offer now. Follow the flood of wine and discover how a completely new culture became a natural part of meals! Nordiska museet’s collection of objects encompasses kitchen utensils and other objects connected with food from the 16 th century and beyond and these will be presented in the exhibition.
