Happy St. Patrick's day! Irish Bacon and Cabbage Ingredients :
1 Shannon Traditional Slab Bacon (11/4 - 2lb)
1/2 green cabbage and 1/2 white cabbage
8 potatoes (peeled)
Salt and pepper Preparation : Remove slab bacon from plastic bag. Cover with cold water. Bring to boil and drain. Cover with fresh cold water. Bring to boil and then simmer for 25 minutes per 1lb plus 25 minutes over. Remove outer leaves of cabbage. Cut in half, add to the saucepan and simmer for the last 20 minutes. Serve the bacon with the cabbage and boiled potatoes as well as your choice of sauce.

By Amanda Formaro If you are looking for a fun and easy recipe to do with the kids, try these deliciously simple St. Patrick's Day Cookie Pops. The kids will smile and giggle while making these treats, and will have something fun to give to family, friends, and classmates! You will need:
  • 20 vanilla wafer cookies 1/2 cup peanut butter 1 12-ounce bag white chocolate chips green and yellow gumdrops cake decorating writer gel in green, yellow, red, orange, and black 1 tube of green cake decorator frosting with tip green and yellow decorator sugar green food coloring ice cream or lollipop sticks wax paper or paper plates
Instructions: Spread peanut butter onto the flat side of the cookies. Place an ice cream stick into the peanut butter on half the cookies. Top with another cookie so the stick is sandwiched between the two cookies.

Irish Cooking on St. Patrick's Day

St. Patrick's Day is a holiday unique to itself. There is no single personage, such as jolly old Saint Nick, to celebrate. The good Saint Patrick is overlooked in favor of the celebration of an entire nation of people and their descendants. Instead of hiring someone to dress up like Santa, we outfit ourselves in green, and celebrate whatever claim to Irish blood we have. Green derbies with shamrocks, worn by people who have no Irish roots, replace artificial beards and red stocking caps. It is also a holiday that has specified only corned beef and cabbage for its celebratory meal. As much as we love this classic, we think there may be other dishes to taste. Irish cooking reflects the temperament of the people. The Irish are a lyric group, so poetic by nature that they have a saying: 'Never harm a poet, never love a poet, and never be a poet." The Irish have given us the finest poets and writers, and their instinct toward the music inherent in language spices their food.

The color green, shamrocks, leprechauns, four-leaf clovers and that lucky pot 'o gold are what most people associate with this day. People all around the world celebrate St. Patrick's Day. On March 17, everyone is Irish! It is a day to wear green, have a good time and, of course, to eat. But what do you eat on this special day? If your idea of celebrating St. Patrick's Day is to squirt some green food coloring in your beer, you don't know what you've been missing. This year, prepare a feast that will make your family look forward to St. Patrick's Day as much as they do to Thanksgiving. Traditional Corned Beef Brisket

2 c Water
1 sm Bay leaf
2 sm Onions, thinly sliced
1/4 c Quick-cooking tapioca; (opt)
10 oz Peas, frozen; OR
10 oz Mixed vegetables, frozen Season cubed lamb with salt and pepper.
Add remaining ingredients except peast (omit tapioca if you don't want gravy thickened). Stir well.
Cover and cook on Low 10-12 hours. Add peas during last 1-2 hours of cooking. Apple Mash 1 pound Cooking apples (Granny Smith is great!) ;2 pounds potatoes (I prefer Yukon Golds) 1 tablespoon sugar (Bakers Confection Sugar is nice, smooth, and fine) 2 ounces salted butter Peel potatoes. Cook in salted, boiling water. While potatoes are cooking,peel, core, and slice apples. Place in a pot with a tablespoon of water, and the sugar. Cook until soft. When the potatoes are cooked, drain and mash thoroughly. Beat in the apples and butter. This mash meshes really well with bacon, or fried herring. Serves 4 Creme de Menthe Cake 1 (18.25 ounce) box white cake mix

  • 18- to 22-gauge floral wires Brown floral tape About 42 new potatoes, 1 to 2 inches in diameter Sphagnum moss or sheet moss Wicker or open-weave basket about 9 inches in diameter and 3 inches deep 8-inch-diameter plastic saucer to fit inside basket Floral foam for fresh flowers Pan-melt hotmelt adhesive 10 bells of Ireland 36 daisies

Instructions 1. Wrap the floral wires with brown floral tape, and cut each wire in half. Wrap a piece of wire around the middle of each of 36 of the potatoes, twisting the wire to secure it.
2. Soak the moss to fluff it, and then blot it dry. Cover the outside of the basket with moss, and hold it in place with the potatoes. To attach the potatoes, push the wire ends through the wicker, twist them once or twice inside the basket, and flatten the ends against the basket. Work in rows around the basket from the bottom to the top.
