GLOSSARY OF SPANISH AND MEXICAN COOKING TERMS
To copy, to republish, to post on servers, or to redistribute to lists, requires prior specific permission and/or a fee. Request permissions from the author at amigo@lomexicano.com. The following reference to Spanish and Mexican cooking terms is definitely a work in progress. Like Mexico itself, Mexican cooking is a subject so vast that it defies efforts to capture it with any degree of comprehensiveness. Nevertheless, it will be added to on a continuing basis. If you are interested in a particular item or term that you do not find, please submit an e-mail query, and I will attempt to find it and add it to the list, if appropriate. Please note that I have collected the antojitos mexicanos, the corn and tortilla-based dishes, such as tacos, quesadillas and tamales, under that heading. Also, many of the items that are usually referred to in the plural (such as enchiladas) are listed in this form. Please also note that in this guide, as in Spanish, ch is considered as a separate letter of the alphabet, and is found directly after the letter c.

TAPAS The tapa tradition is as important for the conversation and company as for the delicious food. Every Spaniard has his favourite tasca , as the tapas bars are often called, where he goes regularly to meet his friends or business acquaintances. Tapas can be found in even the smallest bar in a tiny village. The word tapa, meaning cover or lid, is thought to have originally referred to the complimentary plate of appetizers that many tascas would put like a lid on one's

Words
These conversions are mostly the U.S. to European conversions for cooking. The European use mostly weight where the U.S. usually use volume. As you could tell, a cup of flour weights different than a cup of water. I hope these conversions are helpful. The Glossary is converting Spanish to English, English to Spanish, and Spanish of one country or district to Spanish of another. Many areas cook with the same ingredients but call them by some other name. I have tried to gather as many of these names as I could find to help others use the recipes from different areas or countries.
