    Spanish Omelette (Tortilla de patatas)
    1/4 kg potatoes 6 eggs1dl oil 1 onion Peel the potatoes, wash them thoroughly and cut them into thin slices. Chop the onion. Heat oil in a frying pan and then add the onion. Sautée the onion until it is brown and then add the potatoes and a little salt. Stir the contents until the potatoes are done. Beat the eggs, add a pinch of salt and then the potatoes. Mix well. Turn the heart up under the frying pan and add the egg and potato mixture. Brown on one side and then turn the omelette over to brown it on the other side.
    A Galician recipe for hake (Merluza a la gallega)
    1 kg hake 2 dl olive oil 150 g onion 2 kg potatoes 1 tbsp flour Seasoning: salt, garlic, parsley, bay leaf, thyme, paprika Use the central part of the fish. Clean it well and cut it into thick slices. Heat the oil in a saucepan. Chop the onion into small pieces and fry; stir continuously until the onion turns golden brown. Then add two cloves of crushed garlic, a tablespoon of chopped parsley and another not very full one of paprika. Cut the potatoes into not very large slices of about 6 mm and mix well, sprinkling the tablespoon of flour over everything. When the potatoes are fried, just enough eater is added to cover them. Then the right amount of salt is added as well as six peppercorns and a clove, both ground, and bay leaf, thyme and parsley. Cook the stew for a quarter of an hour and when the potatoes are done, put them into a clay dish. The slightly salted hake slices are arranged on top of the potatoes. Put the dish into the oven for another ten or twelve minutes. it is served in the clay dish.

    From our own recipe collection, favorites in our household have long included Pollo Chilondron (chicken braised with roasted red peppers and ham) and Baked Scallops with Onions and Ham. Both of these are quite simple and can be recommended as places to start in Spanish cooking.

    While in high school, I was an exchange student to Madrid. I lived with a Spanish family and my memories of each meal are as wonderful as the many world class meals I eat as a restaurant reviewer. I remember my “Spanish mother” bringing home fragrant goodies from the market and then spending the day cooking up gourmet delights. How did she do it? Now that I am old enough to appreciate her art, I can no longer get her recipes. Thank goodness there is a cookbook, SPANISH HOME COOKING, COCINA CASERA ESPANOLA by Miriam Kelen. Everyone has favorite recipes that you are not likely to find in most restaurants. Good old-fashioned home cooking is passed down through the generations and leaves an indelible impression on our memories — and our palates. Americans are not alone in this respect.     The journey to my book of Spanish cuisine began with an invitation to celebrate a wedding in Spain. As my husband and I traveled through the country, I realized how much I loved the culture, the language, the food, the beauty of the countryside, and the openness and generosity of the people.
    As it happened, that period coincided with my entry into the Internet. It was on line, during a discussion of recipes, that Nacho from Barcelona suggested we get together and write a Spanish cookbook. It seemed like a perfectly natural idea. Though we had no idea where such a book would lead, neither did we doubt that it would yield an array of delicious discoveries.
    In all, I made several long trips to Spain, camera and tape recorder in hand, learning as I went. I was invited to share many home-cooked meals, from whole-family gatherings to dinner for two, always in good company. People generously gave me recipes and helpful explanations as well. And at bars, in restaurants, wherever I was, I asked for more ideas.
    One spring day, on my quest for the best gazpacho, a waiter in Córdoba said to me, "You Americans always ask how things are made so you can go home and do the same thing." "Of course," I answered, "that's the idea!"

    Here in Montefrío, you are far from the international restaurants and British pubs of the Costa del Sol - the system is andaluz only. Few small Spanish towns have proper restaurants that are up to much anyway - what people do here when they want to eat out is order tapas Tapas are the tasty titbits you are always served free with each drink, one of the nicest things about living here! When you want to have a meal, you simply take a table and order a "ración" (don't worry, this has nothing to do with wartime rations, but simply means a rather large portion or serving - you can also ask for a "media ración" , a half portion) of the various tapas. Usually a few raciones plus a dish of salad and bread will do a hungry couple very nicely. The custom here is for everyone to eat from the same dishes by jabbing what they want Arab style, but if you ask for individual plates - platos - they'll be brought to you.

    And the first that comes to mind in the Castilian cuisine is the chickpea because, though it may seem rather commonplace, it is the element which has presided over the food in this area for centuries, especially if we keep to the popular everyday fare of the people. The fact is that this dried vegetable which was brought to Spain by the Carthaginians is the main ingredient of all the Castilian stews. Until fairly recently, it was the daily fare of all Spanish homes. It was always prepared with cabbage, and, depending on one's financial possibilities, with black pudding, chorizo and meat.

    Saffron originated in Arabia and was brought to Spain sometime in the eighth century. Since then, saffron has been associated with Spanish cuisine, although the spice is also a favorite addition to French soups and Milanese risotto. This reddish spice is probably the most expensive culinary herb because an ounce of saffron is actually 200,000 dried crocus flower stigmas each hand-gathered crocus flower has only three stigmas. Nevertheless, a pinch of saffron is enough to lend a distinctive flavor and reddish orange color to pastries, soups, and rice dishes. bodyOffer(23740) The reddish color of saffron is due to its carotenoids crocin and crocetin; the saffron stigmas also contain the aromatic essential oil called safranal. In the herbal therapy world, a couple of drops of saffron oil (made from a few dried stigmas in a cup of vegetable oil) in a glass of water is recommended to alleviate sluggishness and general fatigue. In Spain, the spice is a must in fish stews, and in practically all dishes highlighting mussels, shrimps, squid, and other seafood.
