W hen the languid days of summer arrive, here's our brief chance to grab what we can of sun, sand and...soup. Okay, so soup might not be something that springs immediately to your mind when thinking of summer pleasures, but for me, there's nothing more refreshing on a warm summer day than a bowl of cold soup. When my thoughts first turn to chilled soups, I start by making a favorite gazpacho recipe. Like the other cold soups that follow, gazpacho is ideal summer fare because you need not even turn on a stove to make it. To round out a meal of cold soup, add a substantial salad, a good bread, and if you'd like, some fresh corn-on-the-cob. Transforming late summer's lush fruits and vegetables into cool, flavorful elixirs whets the wilted appetite like nothing else can! GAZPACHO
Serves: 6 The base:
  • 14- to 16-ounce can diced or stewed
    tomatoes, undrained

Vegetarian Soups from the Middle East

Wholesome, tasty, and simple to prepare, vegetarian soups have been on the everyday menu of the Middle Eastern peasant since the dawn of history. Through the centuries, at very little cost, the farmers and laborers of these lands have enjoyed healthy and nutritious broths, refined by their ancestors. Since the days of the Sumerians and the ancient Egyptians, generation after generation has been sustained by these peasant soups. The people, especially those of the countryside, have always been fond of their simple, delectable vegetarian broths. Hence, when Middle Easterners move to other parts of the world, they take with them these culinary delights. My parents, having immigrated to western Canada from Syria in the early 1920s, were no exception. Having inherited the ingenuity of their ancestors who had farmed in the dry Biblical lands, they raised a healthy family through the Great Depression by the daily consumption of vegetarian edibles developed in their land of origin. When our neighbors found great difficulties in finding enough food to sustain them-selves, we thrived on our vegetarian stews and soups. Hardy legumes such as broad beans, chickpeas, lentils, and a number of common vegetables which thrive in semi-arid lands kept us well-fed and healthy. Fresh from our hand-watered garden in summer and dried in winter, they were prepared with herbs and spices, becoming the sustenance of our lives. As the basis of various types of savory soups, they graced our table day after day. Even after over half a century, I can still visualize pots of these simmering vegetarian delights diffusing their enticing aromas.

In a large mixing bowl, sift together the flour, baking powder, salt, ginger, nutmeg, cinnamon, and cardamom. Set aside. Separate eggs. Place yolks in a small bowl and whites in a large mixing bowl. In another large bowl, beat the butter until smooth. Add the brown sugar a half-cup at a time beating well after each addition. Beat in Bourbon whiskey or vanilla and continue beating for about 3 minutes. Beat the yolks with a fork then add to sugar mixture, one-third at a time. Using a rubber spatula, scrape down sides of bowl as you mix.

TOMATO RECIPES TO PRESERVE THE GOODNESS OF AN ABUNDANT HARVEST Big Batch Spaghetti Sauce
1/4 Cup olive oil
3 medium onions, chopped
2 garlic cloves, minced
2 28 oz. Cans whole tomatoes
2 28 oz. Cans crushed tomatoes
3 12 oz. cans tomato paste 3 Tablespoons brown sugar
1 Tablespoon dried oregano
4 teaspoons salt
2 teaspoons dried basil
1 teaspoon dried black pepper Heat oil in large pan. Saute onions and garlic until tender. Add rest of ingredients. Heat to boiling. Reduce heat. Simmer, partially covered, for 2 hours. Stir occasionally. After it has simmered, cool completely and store in freezer bags or containers in increments that you find best for your family. When ready to use, thaw and heat. Favorite ingredients can be added like sliced mushrooms, cooked/drained sausage, hamburger, etc. This sauce is great for any Italian dish. We use it as a sauce for several types of pasta and as a pizza sauce. Fresh tomatoes may be substituted for large cans. You will still need to include the tomato paste. Peel, core, and chop enough tomatoes to make approximately 12 cups. The rest of the recipe remains the same. Kathie Cocklin, '98

    Italian Soups On this page: Minestrone Italian pasta and Bean Soup Creamy Mussel Soup Minestrone Serves 6-8 Ingredients 1 1/2 cups dried white beans 1 tblspn flour 6 cups chicken stock 1 cup mushrooms 150gms (5oz) green beens 2 carrots, peeled and chopped 1 cup small shell pasta 3/4 cup canned tomatoes, chopped 1/2 cup of olive oil
  • Get 4 cups of water with one tablespoon of flour in it and soak the beans for 8 hours. Rinse the beans, combine them with 6 cups of chicken stock in a large saucepan and simmer, covered, for around one hour. Add the mushrooms to the cooked beans. Also add the green beans, carrots, olive oil and a couple of pinches of salt and pepper. Add another two cups of water, bring to boil and simmer coverd for approximately 30 minutes. Add pasta, some more pepper and tomatoes, cook for about 10 minutes. It's now ready to eat.
