The National School Lunch Program (NSLP) offers cash reimbursement to help schools serve snacks to children in afterschool activities aimed at promoting the health and well being of children and youth in our communities. A school must provide children with regularly scheduled activities in an organized, structured and supervised environment; include educational or enrichment activities (e.g., mentoring or tutoring programs). Competitive interscholastic sports teams are not an eligible afterschool program. The programs must meet State or local licensing requirements, if available, or State or local health and safety standards. All programs that meet the eligibility requirements can participate in NSLP and receive USDA reimbursement for afterschool snacks. Snacking has a bad reputation in today's society. The importance of eating regular meals has been stressed so much that frequent snacking may be seen as a bad thing. However, meals and snacks for preschoolers should be viewed differently.
Preschoolers, of course, are smaller than adults. Their stomachs just cannot hold as much food at one time as an adult's can. For this reason, they need to eat more often than we do. Also, when children are active, they require more calories. Preschoolers aren't growing as rapidly as when they were infants, but they still need about 1,300 calories per day. If their activity level is moderate to high, they should probably take in even more calories. Snacks provide an estimated 20 to 25 percent of a preschooler's total energy intake.
Consider, too, that a preschooler's typical day is very different from an adult's. The preschooler's day has many more social "events" than an adult's day. Activities that revolve around food are a very important way to learn social skills. Providing frequent opportunities for preschoolers to eat with other children and adults meets their nutritional needs, and it provides opportunity for socialization.
So, snacking is fine - even good - for preschoolers, but all snacks are not equal! Because snacks provide almost one-fourth of a child's food intake, they should be nutritious. Nutritious snacks will help children to get all the vitamins and minerals they need each day. To make wise choices, use the food pyramid when you are planning snacks and meals. This useful tool will help you provide the children with the correct number of servings from the dairy, fruit, vegetable, and grain groups.

Download as PDF Continuing to build our Food Guide Pyramid, this month we are going to talk about the Fruit Group. The Food Guide Pyramid recommends two to four servings of fruit every day. As with the vegetable group, many people do not consume even the minimum number of servings from this group each day. Fruits and fruit juices provide important amounts of vitamins A and C and potassium. Vitamin C is important to maintain bones and teeth and helps the body to absorb iron. Citrus fruits and tomatoes are very good sources of vitamin C. Over half the vitamin C in our diet comes from these foods. Vitamin C is a water-soluble vitamin and is not stored in the body. Because of this, and the fact that fruits are also naturally low in fat and sodium and high in fiber, they should be eaten every day.
Serving for a Preschool Child
Children three to five years old should eat two to four servings of fruits every day. A serving for preschoolers is 1/2 cup juice, 1/2 piece raw fruit, 1/2 cup chopped fruit.

A snack is a refreshment eaten between meals. It is smaller than a meal and can be something to eat, something to drink, or both. Because young children cannot eat a lot at one time, they need one or more snacks throughout the day.
Snacks are important because they give children energy. Boys and girls grow fast and they use a lot of energy when they run and play. Using energy makes children hungry. It is hard for them to wait until mealtime. Snack times help keep children from becoming overly-tired and grumpy. They also help children slow down and rest. That is why some families have snacks just before going to bed.
AGES AND STAGES
Most babies do not eat snacks. Infants need to be fed when they are hungry. They should have foods they are used to eating such as milk, formula, or prepared baby food.
Children of all ages eat similar foods. They do, however, eat different amounts and at different times. Toddlers and preschoolers eat a snack in the middle of the morning and again in the afternoon. Parents often report that their school-age children dash to the refrigerator as soon as they get home from school!
HOW YOU CAN HELP
Have you ever heard a mother or father say to a child, "your eyes are bigger than your stomach!" when they have not been able to finish eating the food on their plate? This often happens to young children because everything looks so good to them! You can help them avoid overeating by serving limited amounts of food to each child at snack time. You can give them "seconds," if they are still hungry and ask for more. Remember, though, that large snacks can ruin a child's appetite and cause an unpleasant mealtime later in the day. It is wise to have an hour of "no eating" before each meal.

I like to snack on dry roasted peanuts. I only eat a handful at a time. Are they really fattening ? I thought peanuts were a good source of protein
I've been asked your question frequently. So out of curiosity, I poured several handfuls of dry roasted peanuts. The average number of peanuts was 40 (1/4 cup) and I have small hands! Every 10 whole dry roasted peanuts have 45 calories, five grams of fat and two grams of protein. So every handful of peanuts you eat has 180 calories, 20 grams of fat and eight grams of protein. This would be equal to four pats of butter and one ounce of meat. However, peanuts are lacking in three essential amino acids and therefore, not a complete source of protein like meat. Remember that any food eaten to excess can be stored by your body as fat. Protein foods like meat can be stored as fat as well. The fattening effect of food is reflected in increases in your body weight. Your body weight can fluctuate about three pounds with changes in water levels in your body. Pay attention to any weight increase over five pounds and start reducing your daily food intake by 500 calories per day until your weight stabilizes at your normal body weight.

Appetizer Puffs
Serves 4 Pans: Cookie Sheets Yield: 30 appetizers Ingredients 1 cup water
1 cup flour 4 eggs
  • Place mixture in bowl and beat on "low" setting. Add eggs, one at a time, beating 30 seconds after each addition. Stop and scrape the bowl. Turn speed to medium and beat 15 seconds.
  • Cut off tops and fill with filling of choice. Some possiblities are various spreads such as shrimp, chicken, liver, etc.
    Bacon Cheddar Crisps
    Serves 4 Pans: 2 non-stick jelly roll pans Yield: 50 chips NOTE: Per 1 oz serving = 117 calories, 25 mg cholesterol, 9 g fat, 213 mg sodium
    Ingredients 2 qts popped popping corn
    1 cup cooked, chopped bacon 4 cups shredded Cheddar cheese
  • Divide the hot popped corn into 2 equal parts and place in a single layer on two pans.
  • Divide cheese and bacon into two equal parts each and sprinkle on over both sheets; use your hand to spread ingredients into a single layer on the sheets.
  • Bake for 8 to 10 minutes or until it is as crispy as you like.
