Seafood are masters of understated, lo-fi rock that never strays into self indulgence Rock Sound - 8/10 In 2001 that Seafood released their second album 'When Do We Start Fighting...' and toured extensively through that year and the next, through Europe, USA and the UK, culminating in their biggest sell-out headline show at London's Electric Ballroom in 2002. That same year Seafood split with guitarist and old friend Charles Macleod due to musical problems and drug differences. Naturally Charles emigrated to Canada. Cue old friend Kevin Penney formerly of melodic post rockers Billy Mahonie, and cue a baptism of fire. Before he could say yes, Kev was playing three nights at Shepherds Bush Empire and flying straight on to two nights at The Ambassadors in Dublin, followed by performances in a packed tent at Glastonbury (a band highlight of 2002) and at the V Festival. Kev P then said yes. A manic 2002 was topped with the Livid Festival tour and a headline tour of Australia and New Zealand, where the band acquired an enthusiastic new fan base. A single 'Cloaking', secured heavy rotation on National Radio Station, Triple J, and 'When Do We Start Fighting...' topped Triple J's Hit List and garnered gushing reviews in the national press.

Bacon: Rinse bacon under cold water before frying. This reduces the amount the bacon shrinks by almost 50% Chicken Breasts: The best buy at the supermarket is to purchase a large bag (usually 3-4 pounds) of boneless, skinless chicken breasts from the freezer section, rather than buying it a pound at a time from the fresh meats section. This saves me about $15.00 a month or more. Marinating Meats: Lemon and lime juice and vinegar aren't the only things that work well as marinades. I use kiwi fruit, either sliced, mashed, or juiced. For sliced, lay the meat over the slices and lay slices over the top of the meat as well. Allow 2-4 hours to marinate. For a faster method, mash or juice the kiwi and use in marinade as a substitute for lemon, lime, or vinegar. This method only takes about 1/2 hour for tender meat. I also use unseasoned meat tenderizer powder (found in the spices section of the supermarket) for the times I just don't have time to marinade meat. Meatballs: When making many meatballs a fast and simple way is to shape the meat mixture into a log and cut off slices. The slices roll easily into balls. Another option is to pat the meat into a square and cut it into cubes which again easily roll into meatballs of uniform size.

One helpful guideline is the 10-minute rule for cooking finfish. Apply it when baking, broiling, grilling, steaming and poaching fillets, steaks or whole fish. (Do not apply the 10 minute rule to microwave cooking or deep frying.) Practice makes perfect and cooking fish properly is all in the timing. Here's how to use the 10-minute rule:
  • Measure the seafood product at its thickest point. If the fish is stuffed or rolled, measure it after stuffing or rolling. Add 5 minutes to the total cooking time if you are cooking the fish in foil or if the fish is cooked in a sauce. Double the cooking time (20 minutes per inch) for frozen fish that has not been defrosted.
TIP : Substitute fish in tradifional recipes calling for meat or poultry. For a delicious change of pace, consider tuna burgers or salmon loaf.

It's always good to cook fresh seafood within two days of purchase. If that's not possible, here are some tips to help you store it. Store live oysters, clams and mussels in the refrigerator. Keep damp by placing in shallow bowl with a wet paper towel draped over them. Keep fresh shucked oysters, scallops and clams in their own container and store in the refrigerator. For best results, surround the container with ice. Store live lobster and crab in the refrigerator in moist packaging, but not in airtight containers. Just before opening and cooking scallops, mussels, clams or oysters in the shell, they should be scrubbed under cold water. Handle all seafood with care. Seafood with bruises or punctures will spoil more rapidly.
