What's New Foods of Louisiana Recipes Recipe Submission ... Contributions Seafood S eafood just happens to be everywhere in South Louisiana. Shrimp crabs crawfish oysters ... turtle are a few, and of course, fish . A few are reptiles and amphibians but what the heck, they live in water, they're seafood to me. Click on the links above or just scroll down, your choice.... Shrimp Shrimp are harvested on the Louisiana saltwater bayous and in the Gulf of Mexico. In general we have two seasons; the Brown Shrimp or May season usually starting in May and lasting for about 45 days. The White Shrimp Season usually begins in August and lasts until around December (more on Shrimp in Louisiana....) Fresh shrimp are usually de-headed and frozen with the shells on in a little water in a zipper lock type bag (get all the air out). The water is essential to prevent freezer burn. Some folks peal the shrimp first but I find they won't last as long especially if there is a little air in the package. Leaving the shells on leaves me with more cooking options also; like baked shrimp and making shrimp stock. Fresh shrimp should be kept covered with ice (not ice water) for handling. If they get warm they'll spoil and start smelling immediately. If you see any red on a fresh shrimp it means it got too warm at some point. I won't buy em'!

Uribou The pumpkins in the side of the housetop vegetable garden had been growing up fast, and I harvested big ones. From the first they sprouted naturally from seeds in the compost, and I have been leaving them to spread wildly on the tiled roof of the warehouse which neighbor the housetop garden. In this rainy summer I hardly remember giving water, they have been growing up excellently without much labor. Some bumblebees are buzzing noisily from the big yellow flower to flower and busy with their work. I also found striped patterned and chubby gourd under the heavy growth of the pumpkin's thick stem like a hose. Of course, as I never seed it, this is "gift from the compost", too. C o o k ... a - Cooking Seafood M any a Friday in South Louisiana consists of a seafood cookout. We normally pick Friday because during Lent (Catholic religious observance) we won't eat meat. It just kind of carries over. Seafood is a big staple here also and in great abundance so naturally we cook it a lot. Cooking seafood calls for a few general rules....
  • Keep it cool before it goes into the pot. Marinade fish and shrimp at least an hour Don't over cook it. Cook a little more quantity than you think you need!
In general for adults....
  • 1 lb of fish per person 4 lbs of unpeeled crawfish per person 1/2 lb. shrimp (fried) per person 1/3 lb shrimp or crawfish tails (in sauce) per person 3 large to 5 medium whole boiled blue claw crabs per person
Keep in mind that side dishes constitute the make-up of the entire meal so increase or reduce the amount of seafood as needed. For instance if you're frying fish and shrimp and will have a potato salad, white beans and rice and French bread with it consider reducing the seafood portions. Serve fried seafood hot and season it right out of the oil. If you're not eating right away put the oven on 200°F (or as low as it will go) and let it warm up. Cover the seafood with paper towels (not plastic wrap) or loosely with foil, turn the oven off, and put the pan in the oven. If you seal the pan with plastic wrap or foil the seafood will become soggy. If you leave the oven on it will dry out too much. This only works for so long. After a few re-heats the seafood will dry out anyway.

Customize this recipe
Combine first 10 ingredients in a bowl, and stir well. Shape mixture into 8 (1/2-inch-thick) patties. Place 11/3 cups soft breadcrumbs in a shallow dish, and coat patties with breadcrumbs. Heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add 4 coated patties, and cook 3 minutes. Carefully turn patties, and cook 3 minutes or until patties are golden. Repeat procedure with remaining 1 tablespoon vegetable oil and remaining 4 coated patties. Serve crab cakes with lemon wedges, if desired.
