    Whole lettuce leaves
    make a beautiful base for salads. Mild salads are complemented by stronger-flavored salad greens such as arugula, watercress, endive or escarole. Spicy or bold-flavored salads do best on top of a milder lettuce, such as romaine, Boston or iceberg.
    Create edible bowls
    for individual servings by mounding salads into cup-shaped radicchio or Bibb lettuce leaves.
    Many salads sparkle with a fresh fruit garnish of red and green grapes, kiwi, melon and orange slices or cubed green apple.
    Try serving savory salads in large hollowed-out tomatoes. Simply slice off the tops and use a spoon to scoop out the seeds and flesh, leaving a 1/4-inch shell. Fill the tomatoes with salad just before serving.

We are about to outline some various types of salads, ingredients, and dressings Types of Salads There are several types of salads commonly used, even in the smallest establishments. Appetizer Salads These are served to whet the appetite of your guest while they await their main course. They should not be so large as to ruin their appetite for the rest of the meal. They must be flavorful, crisp and zesty to stimulate the palate and , of course, attractively garnished to also arouse visual appeal. Accompaniment Salads These are to be served along with the main course. They must be light, balance the dish and not be too rich. Attention must be paid to insure that no duplication of the other items in the main entree has occurred (e.g. potato salad served on the side with fries or mashed potato).

    The web site reviewed in this article has changed location and name. SOAR is now known as Recipe Source and can be found at http://www.recipesource.com If you're looking for that perfect recipe for strawberry-rhubarb pie or a little-known casserole that's served at your favorite diner, you often need to look no further than SOAR. SOAR stands for "The Searchable Online Archive of Recipes" and is hosted and maintained on a University of California - Berkeley server. The inspiration (and a lot of the work) behind SOAR was supplied by one of UC - Berkeley's students, Jennifer Snider Coopersmith. Many thanks to Jennifer, as what started out as an experiment in bringing recipes on the web to one central location has turned into an archive of almost 70,000 recipes as of March 2000. What makes SOAR such a valuable resource is the plethora of ways that the recipes are organized for visitors. In addition to the search forms which vary from simple keyword searches to more advanced forms that allow a visitor to specify things like case sensitivity and the maximum number of returned recipes recipes are also organized into a large number of different categories. Each category has sub-categories to help direct visitors to the recipes they desire. Once a sub-category has been chosen, the recipes are then split into alphabetized sections containing about 50 recipes each. This is to reduce the download times and improve access. Of course, each visitor also has the option to get a full list of the recipes in a given category. Once a visitor has found a recipe that he or she would like to see, one click on the title reveals the entire recipe. It's that simple.

To test freshness of died herbs rub them between your hands. Oil of your hand extracts the essence of the herb. If there is no smell, they are no good. For crunchy cole slaw, cut cabbage in half and soak in salted water for an hour. Drain well, then proceed with recipe.
