WHAT'S IN IT?
1 (14 ounce) bottle ketchup
1 (12 ounce) jar grape jelly
3/4 pound extra lean ground beef
1 egg
1/4 cup bread crumbs
1 teaspoon onion powder
STUFF YOU NEED
Adult’s permission to use the stove
Large saucepan 2 soup spoons Medium-size bowl Dry measuring cups Measuring spoons Plastic gloves (if you want) Potholders Large spoon Cooling rack Nice serving bowl HOW TO PUT IT TOGETHER
  • Into a large saucepan, squirt the ketchup and, with the help of a soup spoon, scoop the jelly. With the same spoon, stir the ketchup and jelly for about 30 seconds. Set the saucepan aside. In a medium-size bowl, dump the beef, crack in the egg (throw away the shell!), toss in the bread crumbs from a measuring cup and sprinkle in the onion powder from a measuring spoon. Wearing plastic gloves or with squeaky-clean hands, mishmash all ingredients in the bowl. Roll the mixture in the palms of your hands into 16 meatballs. Here’s a good tip: The easiest way to make the meatballs is to divide the mixture into 4 equal-size portions. Then roll 4 meatballs from each of the portions! Very gently plop the meatballs into the ketchup-jelly mixture, one at a time. Cover the pan.

    on May 21, 1998. I became interested in inks more than 20 years ago, when trying to tame a dip steel pen to behave nicely. All inks available locally were intended for fountain pen use, meaning they were too runny and too thin for proper scribal use. The Persian Recipe - my First Ink Attempt Then I came across an old recipe, once upon a time used by Hassan, a Persian Scribe. It told me to find: Ingredients
  • 500 g water 5 g salt 250 g gum arabic (see note below) 30 g gall apples, grilled and powderized 40 g iron sulphate (a.k.a. copperas or vitriol) 30 g honey 20 g soot for stage 3 (see table at right)
  • Directions
  • Mix the six first ingredients. Leave them on a slow fire for two hours and stir now and then. Then add 20 g soot. Heat it for another hour. Filter and pour into bottles.
  • It sounded thrilling as well as an easy task. Since I was a newbie, I did not know where to find all strange ingredients, in fact, it took me three weeks to scout them down. I started, late one evening. Three hours later the moment of truth arrived - but my concoction did not have the slightest resemblance with ink. Well, it was black, all right, but it behaved much more like a heap of butter, just out from the fridge. There was not a chance in the world to 'filter' it through anything, I had to scoop it up with a knife to transport it to a wide-mouthed container with a close-fitting lid. What did I do Wrong?

    Granny's Oldtime Recipes
    Scrapple:
    1 hog's head
    4 to 5 quarts cold water
    4 teaspoons salt
    4 teaspoons powdered sage
    yellow corn meal (about 3 cups)
    Separate one hog's head into halves. Remove eyes and brains. Scrape head and clean thoroughly. Place in large kettle and cover with 4-5 quarts of cold water. Simmer gently for 2 to 3 hours, or until meat falls from the bones. Skimm grease carefully from the surface; remove meat. chop fine, and turn liquor. Season with salt, pepper, and sage to taste. Sift in corn meal, stirring constantly, until the mixture is thickened to the consistency of mush. Cook slowly for 1 hour over low heat. When sufficiently cooked, pour into greased oblong pans and store in a cool place until ready to use. Cut in thin slices and fry until crisp and brown. Makes 6 pounds.
    Headcheese: 1 hog's head 1 hog's tongue salt and pepper sage or chili powder Clean and scrape hog's head and wash thoroughly. Wash and trim tongue. Cover head and tongue with slightly salted water and simmer until meat falls from the bone. Drain meat, shred, and season. Pack tightly in bowl, cover, and weigh it down. Let stand 3 days in a cold place. Slice. Makes 6-8 pounds.

    One of my other favorites is milk mixed with honey and vanilla extract. I can't seem to get anyone else to try it. I haven't tried this, but one friend likes dill pickles, mayo (NOT Miracle Whip), potato chips, chunky peanut butter and bacon between two slices of buttered bread. I just can't get myself to try that one.     4. Pour over chips in pie shell and bake in preheated 350-degree oven for 45-50 minutes.

    by Patricia Mitchell I f you've cooked for a family for any length of time, you probably have dishes in your repertoire whose ingredients you wisely keep secret. If they knew that moist, rich chocolate cake contained mayonnaise, for instance, they might not eat it. I wonder, in fact, if that same psychology is the reason behind the ever popular buttermilk dressing being dubbed Ranch Dressing most everywhere. The fact is that people have food prejudices. People think they don't like all kinds of food. And, as with the Chocolate Mayonnaise Cake, they have aversions to particular food combinations. If people were rational, rather than emotional, about these things, they would realize that mayonnaise is composed mainly of oil and eggs, ingredients that no one would argue have their place in making a good cake. But since most everyone associates mayonnaise with potato salad, sandwiches and pickles, adding mayonnaise to cake batter just sounds
