Cultural Diversity: Eating in America
Puerto Rican
HYG-5257-95
Cheryle Jones Syracuse The Puerto Rican culture includes people whose ancestors and possibly current extended family members are from the Caribbean island of Puerto Rico. Their original language is Spanish. Under Spanish rule and then under American rule, Puerto Rico has never been an independent nation. Puerto Ricans are American citizens and can legally enter and leave the mainland. Migration flows circularly between the island of Puerto Rico and the mainland. Because of this circular migration, elements of both cultures thrive in both places, and a specific Puerto Rican "cultural type" is difficult to describe.
Food Habits and Their Relationship to Dietary Guidelines
The typical Puerto Rican diet has many positive aspects. This diet is high in complex carbohydrates such as breads, cereals, soda crackers, rice, and corn meal. A typical diet also includes some calcium and milk products. Adult women will drink milk in cafe con leche (coffee with milk) and consume calcium in flan (custard).

This is a very acute study of cultural politics in Puerto Rico. The author exposes the dynamics that make culture such an important forum to debate identity among Puerto Ricans on the island and abroad. It is an excellent book and a must read for anyone interested in contemporary Puerto Rican studies.

A Guide-At-A-Glance to the Island of Paradise
As travelers enter Puerto Rico, the exotic "Island of Paradise" nestled in the Caribbean, they become one with the beauty and energy of their surroundings. On the island, which is just east of the Dominican Republic and to the west of the British Virgin islands, a vast landscape of history, culture, cuisine, entertainment and recreation combine to provide an unforgettable journey.
History
Christopher Colombus landed in Puerto Rico on his second voyage to the New World in 1493. He named the town of Puerto Rico (rich port) and the island San Juan. Later, the two names were switched. San Juan soon became Spain's most important military outpost in the Caribbean and in 1508 Juan Ponce de Leon became Puerto Rico's first governor. Visitors to Puerto Rico can still see remnants of the island's colonial past when they visit Old San Juan. Puerto Rico came under United States' control in 1898 as a result of the Spanish American War. Puerto Ricans became American citizens in 1917 when the island was granted U.S. Territory status. The island became partially self-governing in 1947 and became a U.S. Commonweath in 1952. Today, Puerto Rico enjoys one of the highest standards of living in Latin America.
Historic sites to see in Old San Juan:
La Princesa
- a centuries-old prison
La Forteleza - the official residence of the Governor of Puerto Rico and the oldest functional executive mansion in the U.S.

Cubans in Puerto Rico Ethnic Economy and Cultural Identity by José A. Cobas and Jorge Duany

Features Search UPF home ... Contact us In the first detailed portrait of the Cubans of Puerto Rico, José Cobas and Jorge Duany study the Cubans’ reception and social mobility beginning with the first wave of migration to Puerto Rico in the early 1960s. Exploring the ways in which Cuban immigrants have assumed the minority role of the "classical middleman," the authors describe the combination of characteristics typical of such a group. They then delineate characteristics that distinguish the Cubans of Puerto Rico from the model.
As a result, the authors argue, Cubans in Puerto Rico will remain in the middleman position for a shorter period of time than is typical, ultimately merging into the larger society and disappearing as a distinct ethnic group, much as the immigrant German population did in Czarist Russia. This volume constitutes an important addition to the growing body of literature on Cuban immigration and will appeal, more broadly, to students and scholars of race, ethnicity, multiculturalism, economics, and immigration policy.
José Cobas is professor of sociology at Arizona State University, Tempe.

This book depicts the dramatic details of the author's escape from slavery and brutality in the hills of Puerto Rico in 1947. Refusing to work all her life on the farm, under rules of drunken parents who often beat her without explanation, she ran away at age twelve. By perseverance and her ability to work, she made a better life for herself. Some years later, she went back to the old farm and rescued her sisters and brothers from their enslavement.

Around the 60s, Rafael Aponte Ledée was in Buenos Aires at CLAEM and Luis Manuel Alvarez in Bloomington at Indiana University. When coming back to Puerto Rico during the early 70s, they were trying to start a small electronic music lab at the University. Francis Schwartz was then directing the Music Department there. And at the end of 1974 was finally bought an ARP 2600 synthesizer and few more equipments. According to Carlos Vázquez, This was the first electronic music lab in Puerto Rico.
Eduardo Kusnir (see Argentina’ section) was visiting professor at the University of Puerto Rico from 1976 to 1978. He was then teaching electronic music courses and also in charge of the laboratory. Kusnir also got some new equipments for the studio. Then he left Puerto Rico and went to live in Venezuela.
Since 1978 Carlos Vázquez have been directing the studio at the University of Puerto Rico. He is very active organizing concerts with electroacoustic music. Vázquez was also the Musical Director of three international symposiums: the first, second an third “Muestra Internacional de Música Electroacústica” (“International Electroacoustic Music Sample”) held in 1992, 1995 and 1999.

Puerto Rico: A Political and Cultural History > Customer Review #2: Confusing and distortional presentation of historical facts

Many major events were missing from the pre american colonial days. The author, well respected by his "patriotas", would concur with him that nothing happened or are ashamed to even mention them. The PPD and Dr. Carrion are no more than a torn of a rose bush grown wild. It is very true when you hear that history is written based on the needs of its author. Shame, I would have wished that it was more objective. Puerto Rico: A Political and Cultural History > Customer Review #3: Fair but improvable.
