Pumpkin Preserves
  • 5 lbs pumpkin
  • 8 cups sugar
  • 4 thinly sliced lemons
  • 1 thinly sliced orange
  • a few grains of salt
Remove peel and cut raw pumpkin into slices 1/4 inch thick and 1 or 2 inches long.  Place in a stone jar or earthenware container and add sugar.  Let mixture stand overnight.  Drain liquid from pumpkin and boil liquid until it spins a thread.  Add sliced pumpkin and remaining ingredients.  Cook until thick and clear.  Pour into sterilized jars and seal. This one is from a pile of recipes that belonged to my Mom's Irish grandmother.  Born in Ireland but raised in the US, it's clear to see that Sara had a lot of patience for cooking.  She also had 8 children.  The woman was a miracle in skirts!

A feature in Cooking Light magazine's May issue suggests turning them into tasty sauces and glazes for quick entrees. The following recipe is an unusually intriguing example of how this magic can work. Sweet fig preserves, tart vinegar and spicy chili paste combine to make a great glaze for pork, but it would also work well with chicken thighs. Basmati rice and black beans would make a good accompaniment to the pork. Bonus: All this flavor comes without much fat content; each serving contains less than 4 grams of fat.

Jewish Telegraphic Agency WASHINGTON When Joan Nathan serves gefilte fish for Passover, she puts a carrot in the fish head. For her, the reason is simple: That's the way her mother-in-law always did it. "This is what her mother did. She died in the Holocaust," Nathan said during a recent interview in the kitchen of her Washington home. "It's my way of remembering her family." For Nathan, the author of "Jewish Cooking in America" and the star of a 26-part PBS series by the same name, "it's not just about the recipes." It's about preserving Jewish heritage. Nathan asserts that "there is every different kind of Jew in America. If you are religious, non-religious, kosher, non-kosher that's not important. As a Jew, carrying on the tradition" is what matters. That's why Nathan, who comes from a family of German Jews, and her husband, a child of Holocaust survivors, have tried to instill in her kids "that Friday night is special." "In a country with so many pulls, I want my kids to have a sense of who they are," she said of her three children.
