Then your friend says she has decided to hold the reception outside. "The weather is so nice in June." Outside? Won't the sun make the frosting melt or drip or slide? So it looks as if there's no reason left to panic. Now all you have to concentrate on is catching the bouquet.

Fondant-Covered Wedding Cake with Raspberries and Chocolate

50 servings
CAKE
Nonstick vegetable oil spray 1 2-pound box cake flour
2 tablespoons baking powder
1 teaspoon salt
1 1/2 cups (3 sticks) unsalted butter, room temperature
5 cups sugar
3 1/2 cups water, room temperature 6 large egg whites 12 ounces bittersweet chocolate bars, cut into 1/4-inch pieces 3 cardboard cake rounds (one 6-inch, one 9-inch and one 12-inch, trimmed to 5, 8 and 11 inches in diameter, respectively) Cake-making equipment and ingredients can be found at cake and candy supply stores. Be sure to use cake flour, not all purpose flour, and begin preparing the cake two days ahead. Sift flour, baking powder and salt into large bowl. Using electric mixer, beat unsalted butter in very large bowl (at least 8-quart capacity) until smooth. Gradually add 3 cups sugar, beating until fluffy. Beat in flour mixture in 5 additions alternately with 3 1/2 cups water in 4 additions, occasionally scraping down sides of bowl. Using clean dry beaters, beat egg whites in another large bowl until medium-firm peaks form. Gradually add remaining 2 cups sugar, beating until whites are very thick and glossy, about 5 minutes. Fold 1/3 of whites into batter to lighten. Fold in remaining whites in 2 additions. Fold in chocolate pieces.

Dies ist wieder so ein "typisch" ostfriesisches Einmachrezept, das man nicht nur in Ostfriesland, sondern auch noch in anderen Gegenden Deutschlands (z.B. im Rheinland) kennt. Um der Flut von Protest-emails gleich vorzubeugen : Sicher, in Ostfriesland sind die Schnippelbohnen und jeder Ostfriese hat seinen riesigen Steintopf damit im Keller stehen und einmal die Woche gibt's Schnippelbohnen ....

    • 250g Castor or Loaf sugar
    • 2 eggs.
    • rind 3 lemons
    • juice 2 large lemons
    • 100g butter.
    Grate rind carefully, removing just the yellow "zest" but none of the white pith. If using loaf sugar, rub this over the lemons until all the yellow has been removed. Squeeze the juice from the fruit. Put all ingredients - except eggs - into double saucepan or basin over hot water and cook, stirring from time to time, until the margarine and sugar have melted.
    Add the well-beaten eggs and continue cooking until the mixture coats the back of a wooden spoon. Put into jars and seal down.
    This following JELLY recipe was suggested because of the animal content (bones) used in the making of our standard jello powders here. [Agar-agar is non animal in content.]

    Jams, marmalades, preserves, and conserves are fruit products which are preserved by sugar. These products differ in the degree of gel attained, manner of preparation of fruit, and ingredient composition. They are easily made at home.
    • Jams are made from crushed or ground, whole fruit and usually have a thick consistency due to high pectin content.
    • Marmalade is a jelly with pieces of fruit suspended in it. Citrus peel and juice are frequently the basis of marmalade.
    • Conserves are jams made from a mixture of fruits. They usually contain citrus fruit, nuts, and raisins.
    INGREDIENTS
    Fruit gives the product its special flavor and often provides pectin for thickening. Pectin is needed to provide thickening or gel formation. Pectin is formed from a parent compound, protopectin, during the ripening of fruit and during the cooking of underripe fruit. All fruits contain some pectin. Apples, crabapples, gooseberries, some plums, highbush cranberries, and citrus peel contain large amounts of pectin. Other fruits like blueberries, strawberries, cherries, or huckleberries contain little pectin and give thick jams, marmalades, and conserves only if:
  • combined with fruit rich in pectin, or
