Strawberry Preserves
Pick over, wash, drain, and hull strawberries; then weigh. Fill glass jars with berries. Make a syrup same as for Damson Preserve, cooking the syrup fifteen minutes. Add syrup to overflow jars; let stand fifteen minutes, when fruit will have shrunk, and more fruit must be added to fill jars. Screw on covers, put on a trivet in a kettle of cold water, heat water to boiling-point, and keep just below boiling-point one hour. Raspberries may be preserved in the same way.

Damson Preserves
Wipe damsons with a piece of cheese-cloth wrung out of cold water, and prick each fruit five or six times, using a large needle; then weigh. Make a syrup by boiling three-fourths their weight in sugar with water, allowing one cup to each pound of sugar. As soon as syrup reaches boiling-point, skim, and add plums, a few at a time, that fruit may better keep in shape during cooking. Cook until soft. It is well to use two kettles, that work may be more quickly done, and syrup need not cook too long a time. Put into glass or stone jars.

About Preserves
Before I started using a microwave oven, I thought it was wasteful to buy a whole box of strawberries or blueberries because I could not eat them all by myself. Now I can enjoy a bowl of strawberries and cream or make Blueberry Streusel Cake and turn the leftover fruit into microwave preserves.     Jams, jellies, marmalades, preserves, and conserves are sweet spreads made from fruit or juice; they differ in firmness, clarity and ingredients.

    Jam is made from crushed or ground fruit and usually has a thick consistency.

    Jelly is made from fruit juice and contains no visible pieces of fruit. It is clear and firm enough to hold its
    shape when turned out of the jar.

    Marmalade is a soft gel with pieces of fruit and citrus peel.

    Preserves are made by cooking whole or large pieces of fruit in a thick sugar syrup.

    Use standard jars and lids Half-pint canning or jelly jars and selfsealing, two piece lids are recommended. Check jars for cracks or chips and check lids for dents or rust; these defects may cause sealing failures. Prepare the lids and bands according to the manufacturer's directions. To sterilize empty jars, put them right side up on the rack in a boiling water canner. Add hot (not boiling) water, filling jars and canner to 1 inch over tops of jars. Heat till water boils, then start timing. Boil for 10 minutes if your county's altitude is less than 1000 feet or for 11 minutes if altitude is over 1000 feet. Remove and drain jars one at a time. Leave hot water in canner for processing filled jars. Preparing sweet spreads with added pectin Carefully follow the recipe and measure exactly. The method and order in which ingredients are combined depend on the type of pectin. Have jars and lids ready before starting to cook fruit mixture.
