Coccidiosis in poultry
Farmnote 29/96
By Marc Kabay, Veterinary Pathologist, Animal Health Laboratories, South Perth
Summary
Discusses coccidiosis in poultry, caused by Eimeria species of intestinal parasites. Covers immunity, life cycle of coccidia, symptoms and diagnosis, prevention, treatment and disinfection. Coccidiosis in poultry is an infestation of the intestines. It affects weight gain and feed conversion and may kill birds. Coccidiosis is common in chickens, turkeys and pheasants, less common in geese, and rare in ducks. The coccidia (the intestinal parasites) of one poultry species do not cause disease in other species. Coccidia of sheep will not infect chickens, nor will coccidia of chickens infect sheep. The infestation is caused by Eimeria species, which are microscopic protozoan parasites. The most important species in poultry are listed in Table 1 . Most infestations under field conditions are mixed infestations, with one species of coccidia dominant.
Immunity
No immunity is passed from parent to progeny. After recovery from an outbreak of coccidiosis, birds are usually immune to further infestation by that species, but they may still be infested by other species.

The New Hampshire livestock industry is diverse and scattered throughout the state. It is relatively small scale, but it makes a significant contribution to the economy and helps maintain open space and the rural atmosphere that makes N.H. a desirable state. Breeding stock from N.H. farms are respected nation-wide for their quality and performance.
Many of N.H.’s livestock industries are limited in their ability to expand due to the high cost of land and lack of large contiguous acreages. The trend is toward value-added products and direct marketing to the consumer, with such things as grass-fed beef, farmstead cheese, specialty meat products, etc.

About Food Poisoning In most cases of foodborne illness (food poisoning), symptoms resemble intestinal flu and last a few hours to several days. But in cases of botulism, or when food poisoning strikes infants, the ill, the elderly, or those with compromised immune systems, life-threatening complications can result. Microscopic organisms that cause foodborne illness are everywhere-in the air, soil, water, and in human and animal digestive tracts. Most are capable of growing undetected in food because they do not produce an "off" odor, color, or texture. The only way these microbes can be prevented from causing human illness is by handling and storing food safely.
    BACTERIA SALMONELLA
    Disease: Salmonellosis
Source: Spread when contaminated food (meat, poultry, eggs) is eaten raw or undercooked. Also, when cooked food comes in contact with contaminated raw food, or when an infected person prepares food.
Symptoms (after eating) : Onset: 6-48 hours; nausea, fever, headache, abdominal cramps, diarrhea, and vomiting lasting 2-7 days. Can be fatal to infants, the elderly, the infirm, and the immune-compromised.

Meat and Poultry Inspection Frequently Asked Questions
    Q. What must I do to sell meat and/or poultry products to the public?
    A. The answer depends upon the nature of the business: If you are going to sell meat and/or poultry products wholesale, you will need a license from the Illinois Department of Agriculture. If you are going to slaughter livestock or poultry, other than your own livestock on your own property, you will need a license from the Illinois Department of Agriculture. Note: “Wholesale” refers to a transaction where you sell the product to someone who then sells the product to the public, or where they use your product in the production of a product for sale to the public. Meat and/or poultry products that are sold retail must be prepared from meat that originated from an “approved source.” Evidence that a meat or poultry product comes from an approved source is the presence on the product of a state (in the shape of Illinois) or federal (circle) mark of inspection.

The Bureau of Meat and Poultry Inspection is responsible for administration of the Meat and Poultry Inspection Act which protects the consumer in relation to wholesomeness, deceptive advertising and proper labeling of meat and poultry products. Inspection coverage includes all aspects of intrastate slaughter and processing from ante mortem (before death) inspection through slaughter and processing and to the retail level. The Bureau provided slaughter and/or processing inspection for 279, establishments and exempt poultry raisers during the previous fiscal year. The Bureau also licensed and inspects 506 Meat and Poultry Brokers. Two State laboratories located in Galesburg and Centralia perform many tests to ensure compliance with the regulations. These tests include analysis for economic wholesomeness, antibiotic residues, as well as testing for harmful food borne bacteria. Laboratory support is provided for veterinarians in their diagnosis of conditions found in livestock presented for slaughter.

Inspector Handbook The meat and poultry inspection program is a state-federal cooperative program. We protect consumers by regulation, including inspection, labeling and disposition of animals, poultry, carcasses and meat and poultry products sold through commercial outlets for human consumption. We inspect and license commercial and custom slaughterhouses (which process animals for an individual and his or her family's personal use, not for retail sale) and processing facilities located in Kansas. USDA periodically verifies that our program is at least "equal to" the federal meat inspection program. At fully inspected facilities, inspection staff inspect every animal while it is still alive and after slaughter to ensure no sign of disease is missed. We allow only healthy carcasses to be marked with the Kansas Department of Agriculture inspection legend before they enter the food supply. Sound scientific principles guide processing inspection each day to assure products leaving the facilities are safe. Inspection assures that all areas and equipment in the plants are clean, sanitary and properly maintained when the daily work begins. All ingredients and steps in the preparation of meat and poultry products are inspected for quality, freshness and compliance with national standards. Samples of finished products also are taken regularly to monitor compliance with national standards of identity and composition. Labels must be approved and used on all finished products.

    Pastured Poultry
PDF Version One of the keys to proper management is to never put the birds out on pasture before six weeks of age; you must wait until the birds are fully feathered and no longer need supplemental heat. In years past it was common to start day-old chicks in range shelters with coal or oil stoves but the pasture poultry shelters used today do not have stoves and birds should not be moved into them until the brooding period is completed. Modern meat-type chickens are especially susceptible to chilling and chilling has caused mortality as high as 80% in some small flocks in Manitoba. Chilling early in life can elevate mortality throughout the life of the flock. To keep the birds comfortable before moving them out to pasture, you also need to provide at least 0.1 m2 (1 ft.2) of floor space per bird up to six weeks of age.
If the shelters are moved frequently and precipitation is adequate, the pasture will provide soft bedding for the birds. Because properly managed pasture is less abrasive, chickens raised on pasture may have a lower incidence of breast blisters. Moving the shelter regularly will reduce the number of droppings that the chickens eat and lower the chances that they will become infected with coccidiosis (the most common type of intestinal parasite in chickens). Since coccidia can survive eight weeks in a field, it is important to never return the birds to the same spot in the pasture in the same year. Other intestinal parasites can survive more than a year in a field and so you should never have chickens on the same field two years in a row.

The Dictionary of Occupational Titles was first published in 1939 to help address issues of training and education, career guidance and employment, counseling, job definition, and wage structuring. The revised Fourth Edition of the DOT (4th Ed., Rev. 1991) details tasks performed in the wide range of jobs within the modern economy. It presents information with each title that can be a helpful reference in writing job descriptions. Most of the agricultural jobs in the DOT are classified with code numbers in the 401 to 429 series. This category generally includes occupations concerned with propagating, growing, caring for, and gathering plant and animal life and products. Listed below on this page are these production and technical job titles. To access an information capsule about any title, click on its corresponding code number in the list. Managerial occupations in agriculture are included in the DOT 180 series.
