ITALY Pizza Crust (Focaccia) 1 cup warm water 1 package yeast 1 teaspoon sugar 2 teaspoons salt 4 tablespoons olive oil 2-1/2 cup bread flour, or combination whole wheat flour and all-purpose flour Garlic Oil made from olive oil and fresh garlic Fresh rosemary leaves Place the water in a large, warmed bowl. Add the yeast and sugar, and let sit for 5 minutes. Stir in the salt and olive oil. Gradually add the flour(s); dough should be firm. Place dough on a floured surface and knead until smooth, adding flour as necessary. Place dough in a greased bowl, cover, and let sit in a warm place for 1-1/2 hours. Punch down dough. Knead for a minute, then let sit for 10 minutes. Grease cookie sheet.

January 2000 Brrrrrr! Is it cold enough for you? Before you start complaining about the weather, just remember how hot it was in the summer (and fall, for that matter). I hope you all enjoyed your holidays and celebrated the New Year in style. Having struggled through most of December with various strains of colds and flu's, I was not too thrilled with the idea of standing in my ice-cold kitchen cooking elaborate meals while watching my breath freeze and losing all sensation in my fingers and toes! With the temperatures reaching the zero mark, my mission is to get in and out of the kitchen as quickly as possible without surrendering to the conveniences of instant ramen, pizza delivery, or Lawson's oden (OK, I admit it, I lost the battle!!) Ahem.... Anyhow... this month's column is dedicated to PASTA - my favourite of all foods. Here are a few quick pasta dishes to help you get out of your kitchen as soon as possible and back to the warmth of your kotatsu . By the way, don't forget to warm up the plates or your pasta will be cold before you get it to the table! Salute!

Makes 4 servings

Pasta Pizza
A fun pizza, with ingredients and flavors on a flavorful "pasta crust!"
Ingredients ounces Italian turkey sausage Nonstick cooking spray green bell pepper, chopped cup sliced cremini or white mushrooms cup chopped onion cloves garlic, minced teaspoons Italian seasoning teaspoon dried oregano leaves tablespoons reduced-sodium tomato sauce ounces thin spaghetti, cooked and kept warm egg whites, beaten tomato, sliced of 3-ounce can pitted ripe olives, rinsed, drained and halved (optional) cup (3 ounces) shredded reduced-fat mozzarella cheese tablespoons finely chopped fresh basil or parsley Cook sausage in small skillet until browned. Drain well; crumble and set aside. Spray large nonstick skillet with cooking spray. Heat over medium heat until hot. Add bell pepper, mushrooms, onion, garlic, Italian seasoning and oregano; cook and stir 5 to 8 minutes or until vegetables are tender. Stir in tomato sauce. Combine vegetable mixture, sausage and spaghetti in large bowl; mix in egg whites. Spray same large nonstick skillet with cooking spray. Heat over medium heat until hot. Add spaghetti mixture to skillet; pat into even layer with spatula. Cook, covered, about 5 minutes or until browned on bottom. Loosen bottom and side of pasta with spatula; invert onto large plate. Slide pasta back into skillet. Arrange tomato slices and olives on top of pasta; sprinkle with cheese. Cook, covered, about 5 minutes or until cheese is melted. Sprinkle with basil. Serve immediately.

    The web site reviewed in this article has changed location and name. SOAR is now known as Recipe Source and can be found at http://www.recipesource.com If you're looking for that perfect recipe for strawberry-rhubarb pie or a little-known casserole that's served at your favorite diner, you often need to look no further than SOAR. SOAR stands for "The Searchable Online Archive of Recipes" and is hosted and maintained on a University of California - Berkeley server. The inspiration (and a lot of the work) behind SOAR was supplied by one of UC - Berkeley's students, Jennifer Snider Coopersmith. Many thanks to Jennifer, as what started out as an experiment in bringing recipes on the web to one central location has turned into an archive of almost 70,000 recipes as of March 2000. What makes SOAR such a valuable resource is the plethora of ways that the recipes are organized for visitors. In addition to the search forms which vary from simple keyword searches to more advanced forms that allow a visitor to specify things like case sensitivity and the maximum number of returned recipes recipes are also organized into a large number of different categories. Each category has sub-categories to help direct visitors to the recipes they desire. Once a sub-category has been chosen, the recipes are then split into alphabetized sections containing about 50 recipes each. This is to reduce the download times and improve access. Of course, each visitor also has the option to get a full list of the recipes in a given category. Once a visitor has found a recipe that he or she would like to see, one click on the title reveals the entire recipe. It's that simple.

    Makes four 8-inch pizzas (about 24 ounces of dough)
    You can make four pizzas, as described here, or you can divide the dough in half and make two large 12-inch pizzas. The baking time will be the same.
    Chopped fresh basil, chopped sun-dried tomatoes, or a sprinkling of crushed red pepper flakes can be added to the dough with the flour if desired, for additional flavor. Be creative with your pizzas! For the best results, see "Pizza Tips".
    1 package active dry or fresh yeast
    1 teaspoon honey 1 cup warm water (105-115 degrees F.) 3 cups all-purpose flour 1 teaspoon kosher salt 1 tablespoon extra-virgin olive oil or Chili and Garlic Oil (see recipe), plus more for brushing Topping of your choice In a small bowl, dissolve the yeast and honey in 1/4 cup of the warm water. In a mixer fitted with a dough hook, combine the flour and the salt. Add the oil, your mixture, and the remaining 3/4 cup of water and mix on low speed until the dough comes cleanly away from the sides of the bowl and clusters around the dough hook, about 5 minutes. (The pizza dough can also be made in a food processor. Dissolve the yeast as above. Combine the flour and salt in the bowl of a food processor fitted with the steel blade. Pulse once or twice, add the remaining ingredients, and process until the dough begins to form a ball.) Turn the dough out onto a clean work surface and knead by hand 2 or 3 mintes longer,. The oough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a wrm spot for about 30 minutes. (When ready, the dough will stretch as it is lightly pulled.)

    The blueberry muffins I opened had been in my food storage room for four years and after making them, they tasted as fresh as if the mix had been put in the can yesterday. When mixing, there were some soft lumps in the batter that didn't stir in easily. However, after baking the muffins, the lumps disappeared. Cooked and ready to eat...
    On the second batch, I ran the mix though a sifter which quickly got rid of the lumps in the mix before I added any water. With the lumps sifted out, this second batch of muffins mixed up in a matter of seconds. The whole family really loved these muffins. They were fluffy and melted in our mouths.     We made both rolls and loaves with the Honey Wheat Bread And Roll Mix. The recipe suggests using only 6 cups of mix to make three loaves of bread. The instructions on the can doesn't mention that it was designed for 4-1/2" X 8-1/2" pans. If you have 5"X9" bread pans, use 7 cups of the mix instead to make three larger loaves, or 10 cups mix for a larger pan 4 loaf batch.
