Many sites have lesson plans available for core discipline areas, however, the following sites were selected because they had lesson plans specifically related to health education. The Academy Curriculum Exchange is an area where teachers can find a variety of lesson plans. The original group of 700 lesson plans came from the Columbia Education Center's Summer Workshops. These lessons were done by a consortium of teachers, from 14 states, dedicated to improving the quality of education in the rural, western, United States. Most of the health-related lessons can be found under the "Miscellaneous" category. The "Science" category has some health-related lessons as well.   • A "Mystery Tasting Party" at Alice Byrne Elementary School introduced students to some unusual fruits and vegetables. If the students were unable to identify the "mystery food" by a taste, they were provided with other clues such as which vitamins it contained and where it was grown. By the time many of the unfamiliar foods (including kiwi, mango, jicama, and pomegranate) were unmasked, students had learned lots about them!
  • Students at Lincoln Elementary School created class presentations about fruits and vegetables. In their presentations, each student tried to persuade classmates to eat a particular fruit or vegetable by providing facts about its origin and its nutritional value.

PROGRAM GOALS:
Increased awareness that humans need to eat right to be healthy. Improved knowledge about the four food groups and how to balance them in your daily meals. Improved eating habits, because students will learn that good nutrition helps their bodies grow strong.
THEME: Nutrition
INTRODUCTION OF ACTIVITY:
During circle time, start taking about the four food groups and their components. As a group talk about what the students had for breakfast and the difference between healthy food and party food (junk food). Explain to the students that foods have vitamins in them and they help make them grow. When they are seated at their desks, make a list of healthy foods for our bodies on the board. This would help evaluate how much students know about nutrition.
OBJECTIVES:
Identify the four food groups. (grain, fruit, vegetable, dairy and meat), and to be able to categorize them in the right group.
Explain how many servings you are suppose to have each day from each food group.
Describe to the students that some foods have more vitamins then others and some foods are better for your growing process than others.

    The South Beach Diet is another plan which is very popular right now, it's an interesting dieting program which has both positive and negative aspects to it ("South Beach" refers to the area where the program first originated). Following the So. Beach menu can be tricky since it requires discipline and the measuring of foods at each meal, but it's more tolerable than the Cabbage plan or the Dr. Atkins low carb program. The Atkins dieting plan is a low carb menu (low carbohydrate menu) which is a very difficult menu to follow, it's a popular program but people tend to stop using it fairly quickly. There are herbal weight management products and supplements also, such as diet teas. In fact, one popular tea is an herbal product known as Green Tea (which also goes by the herbal name of Ma Huang). Some people have good fat loss results using this tea and some do not, it depends on many factors. There are other supplements besides Ma Huang (Green Tea) which have herbal ingredients also, many of them do not work that effectively so we won't mention them here.

  • Fat Counting
    This unit encourages students to consider the foods that they eat in relation to the food pyramid, to keep track of how much fat they consume in a fat diary, and to compare their intake of fat with that of other students around the country.
  • Lesson One: Introduction to the Food Pyramid . This lesson uses traditional and on-line resources to introduce students to health and food issues, via the food pyramid.
  • Lesson Two: Counting Fat in Our Diet . Students take home a fat diary and keep track of the fat in the foods they eat over a week. Parents can work with students to calculate the amount of fat in their diet.
  • Lesson Three: Classroom Comparison of Fat Intake . Students bring in their fat diaries and work in pairs to calculate their average fat intake per day during the week that data is collected. Following this, the whole class gathers to calculate their total fat intake and average fat intake per student per week and per day.
  • Lesson Four: Sharing Classroom Fat Data with Other Students . Following their data collection, students can post their results to a Website or via e-mail to share and compare with other students around the country or world.
