Human nutrition is the science concerned with the relationship between foods and human health. The challenges facing nutritionists range from problems of obesity and chronic diseases to those of malnutrition and nutritional deficiencies in the poor. Studies in nutrition focus upon the nutrients in foods, their actions and interactions, and balance in relation to health, disease, and the social, economic, cultural, and psychological factors that influence food intake. This field requires the application of knowledge in biochemistry and physiology, behavioral, and social sciences, as well as public health sciences, toward the achievement of optimal human health. Preventing Heart Disease
Nutrition

A diet high in fat (particularly solid fats) and cholesterol and low in fiber increases the risk of heart disease. Solid fats include saturated animal fats (such as lard and butter), hydrogenated trans fats (such as shortening and margarine), and coconut and palm oils. These fats are all solid at room temperature. For optimal health, eat foods that are low in animal and solid fats and high in fiber. Replace these fats with vegetable oils and unrefined, fat-rich foods such as nuts and avocados. However, eat all fats and fat-rich foods in moderation to avoid excess calories. Make sure your diet includes a wide variety of foods from the different food groups, with an emphasis on fruits, vegetables, whole grains, and legumes. Also, get plenty of physical activity (30 minutes on most days). The Food Guide Pyramid below shows a healthy balance of daily food servings from the different food groups. For optimal health, eat more foods from the base of the pyramid and less foods that are higher up. Daily Food Servings 6 to 11 Vegetables 3 to 5 Fruits 2 to 4 Milk/Dairy 2 to 3 Meat/Protein 2 to 3 Fats/Sugars use sparingly What Counts as a Serving?

APPLES REALLY ARE GOOD FOR YOU!
WHOLE-BODY HEALTH BENEFITS
Lower blood cholesterol, improved bowel function, reduced risk of stroke, prostate cancer, type II diabetes and asthma. The disease-fighting profile of apples provides a multitude of health benefits, including a potential decreased risk of cancer and heart disease. Several recent studies suggest apples may provide a "whole-body" health benefit.
- Interpoma 2002 Conference, Bolzano, Italy
- Dianne Hyson, Ph.D., M.S., R.D., University of California-Davis CANCER PREVENTION
Over the past four years, apple consumption has been linked with reduced cancer risk in several studies. A 2001 Mayo Clinic study indicated that quercetin, a flavonoid abundant in apples, helps prevent the growth of prostate cancer cells. A Cornell University study indicated phytochemicals in the skin of an apple inhibited the reproduction of colon cancer cells by 43 percent. The National Cancer Institute has reported that foods containing flavonoids like those found in apples may reduce the risk of lung cancer by as much as 50 percent.
HEALTHY LUNGS
A Finnish study published in 1996 showed that people who eat a diet rich in flavonoids have a lower incidence of heart disease. Other studies indicate that flavonoids may help prevent strokes.
