All Publications Nutrient Formulas Immune responses to gluten, the proteins found in cereal grains are a common cause of disease. In celiac disease the gastrointestinal tract is the primary target organ; however systemic disease is an important consequence of cereal grain ingestion in many patients. We think that the people diagnosed with celiac disease are a sub-population of a much larger group with gluten allergy. The classic presentation of Celiac Disease is chronic diarrhea, with abdominal bloating, sometimes pain, weight loss, iron deficiency and other evidence of nutrient malabsorption. The disease is immune mediated. Proteins in the cereal grains, wheat, rye and barely, are responsible for the disease. The suspect group of proteins are called "Gluten." Gluten is a mixture of individual proteins, classified in two groups, the Prolamines and the Glutelins. One troublesome component of Gluten is the prolamine, Gliadin. Often, an assortment of related whole-body problems accompanies celiac disease. We think the related problems are typical of delayed patterns of food allergy and use celiac disease research information to create a model of food allergy. Celiac patients have increased gastrointestinal permeability and demonstrate the whole-body effects of food allergy, including brain dysfunction, arthritis, and inflammatory lung disease.

    The Nutrition Institute offers an educational and research program established at the University of Bridgeport since 1977. The goals of the Institute are to provide a sound understanding of the principles of nutrition and its valuable role toward attaining a longer and healthier life. Through our activities in education, internship training programs, and workshops, we hope to raise the awareness of the value of nutrition in affecting the wellness of the community. Program of Study
    The Master of Science curriculum focuses on the role of human nutrition as a preventative, adjunctive, and alternative strategy for intervention in the disease process. The curriculum provides a core of basic and advanced nutrition courses, basic and clinical biochemistry, nutrition education and counseling, biostatistics, and issues in public health nutrition. Elective courses are also offered and a thesis or comprehensive exam is required to fulfill degree requirements. Accreditation
    The Human Nutrition Program is licensed and accredited by the Connecticut Board of Governors for Higher Education and the Commission on Institutions of Higher Education, New England Association of Schools and Colleges. Accreditation by The American Dietetic Association is not required, since the Master of Science program is NOT a dietetics training program. It does not include the 900 hours of clinical training required for eligibility to take the registration examination for the R.D. credential.

    Gastroenterology is a specialty involved in preventing, diagnosing, and treating diseases of the luminal GI tract (esophagus, stomach, small intestine, colon and rectum) liver, gallbladder and pancreas.
    The Gastroenterology division at UMass Memorial Medical Center is dedicated to excellence in patient care, research and medical education. Our staff is committed to providing the highest quality of care to individuals as well as to the community. We strive to advance patient care through excellence in clinical, basic and translational research, and to educate future health care professionals. The high standards set by the division and the scope of services available ensure that patients will receive the best care possible for a wide variety of gastrointestinal and liver diseases.
    As a tertiary referral center, we offer expertise in all areas of clinical GI, hepatology and adult nutrition. I spent twelve years of my life with a chronic illness (Interstitial Cystitis) complicated with Mast Cell Syndrome, and no hope given to me by any physician. You might say that I "had" to learn proper nutrition and fitness or I wouldn't be here today. I was spending $400 dollars a week on medications and "in and out" of the doctors office two and three times a week. I'm living testimony that it works. One day I threw away the medications and starting reading every health magazine I could find, and learning how to read product labels, exercising daily. Today it's my life.

T he Department of Clinical Nutrition is one component of the Allied Health Sciences School of the University of Texas Southwestern Medical Center , located at 6011 Harry Hines Boulevard ( campus map ).  The administration of the school is carried out under the leadership of its dean, Dr. Gordon Green. The School is home to ten allied health professional programs. The faculty members of the Department of Clinical Nutrition have either primary or secondary appointments in the Allied Health Sciences School.

    I was diagnosed with Multiple Sclerosis in early 1996 after experiencing a bout of Optic Neuritis at the age of 34. Since my diagnosis, I have found a number of valuable resources on the Internet. Whether you are new to the Internet, new to Multiple Sclerosis, or just new to my website, I'm sure you'll find my links and information useful. I am a graphics designer, currently on social security disability (SSDI). I enjoy writing for children and designing web pages in my spare time.
