Demand Consumer interest in the relationship between diet and health has increased the demand for information on functional foods. Rapid advances in science and technology, increasing healthcare costs, changes in food laws affecting label and product claims, an aging population, and rising interest in attaining wellness through diet are among the factors fueling U.S. interest in functional foods. Credible scientific research indicates many potential health benefits from food components. These benefits could expand the health claims now permitted to be identified by the Food and Drug Administration (FDA). Scientific Criteria Many academic, scientific, and regulatory organizations are considering ways to establish the scientific basis to support claims for functional components or the foods containing them. FDA regulates food products according to their intended use and the nature of claims made on the package. Five types of health-related statements or claims are allowed on food and dietary supplement labels:
  • nutrient content claims indicate the presence of a specific nutrient at a certain level structure and function claims describe the effect of dietary components on the normal structure or function of the body dietary guidance claims describe the health benefits of broad categories of foods

  • Admission to the School of Graduate Studies
  • Applications are accepted for the MS in Clinical Nutrition at any time during the year. Guidelines for applying are found in the Graduate Catalog, on the ETSU Web site at www.ETSU.edu and can be obtained by contacting the AHSC Program Director. Dietetic Internship applications are accepted once per year in mid-February. The American Dietetic Association and the Commission on Accreditation for Dietetics Education set this deadline in conjunction with the national computer matching process. Applicants will be notified of admission status in April for the Dietetic Internship Program. Students who are not applying for the internship program may be admitted and begin graduate course work at the beginning of any semester. Internship or Practicum The dietetic internship requires an additional 18 credits in supervised practice/practicum settings. Students complete these under the guidance of registered dietitians at 16 different clinical, community and food systems management sites. The internship didactic course work begins in mid-July and ends the following May and the practicum rotations are in fall and spring semesters. Students in the internship will be responsible for costs related to clinical rotations including but not limited to: 1) liability insurance; 2) transportation; 3) professional membership fees and 4) required medical screenings.     The Nutrition Institute offers an educational and research program established at the University of Bridgeport since 1977. The goals of the Institute are to provide a sound understanding of the principles of nutrition and its valuable role toward attaining a longer and healthier life. Through our activities in education, internship training programs, and workshops, we hope to raise the awareness of the value of nutrition in affecting the wellness of the community. Program of Study
    The Master of Science curriculum focuses on the role of human nutrition as a preventative, adjunctive, and alternative strategy for intervention in the disease process. The curriculum provides a core of basic and advanced nutrition courses, basic and clinical biochemistry, nutrition education and counseling, biostatistics, and issues in public health nutrition. Elective courses are also offered and a thesis or comprehensive exam is required to fulfill degree requirements. Accreditation
    The Human Nutrition Program is licensed and accredited by the Connecticut Board of Governors for Higher Education and the Commission on Institutions of Higher Education, New England Association of Schools and Colleges. Accreditation by The American Dietetic Association is not required, since the Master of Science program is NOT a dietetics training program. It does not include the 900 hours of clinical training required for eligibility to take the registration examination for the R.D. credential.

    A Low Glycemic Index Diet May Help Decrease Disease Risk Factors
    Currently, an estimated 20 to 25 percent of the US population have a condition known as the metabolic syndrome, predisposing them to increased risk of type 2 diabetes mellitus and cardiovascular disease. Recently, Nicola McKeown, PhD, and colleagues at the Jean Mayer USDA Human Nutrition Research Center on Aging at Tufts found that people who ate a low glycemic index diet improved the symptoms of this syndrome, supporting their previous findings that a high dietary glycemic index was associated with a higher risk of metabolic syndrome in the same population. The glycemic index characterizes the rate of carbohydrate absorption after a meal. A low glycemic index diet involves eating certain carbohydrate-containing foods that blunt the rise in blood sugar levels after eating. High glycemic index foods include foods such as potatoes, bananas, white breads and rice, french fries and refined breakfast cereals. These foods tend to raise blood sugar faster than low glycemic index foods that slow down absorption, such as high fiber breads, oats and milk. The research team examined the relationship between the dietary glycemic index and several metabolic markers of disease risk in the Framingham Offspring Cohort and found certain health benefits associated with low glycemic index diets.

    Course Description : Please note there has been a change in the schedule ( Exam 3 is moved from 03/26 to 03/31, posted on 02/26/03) This course provides an overview of the role of nutrition in prevention and treatment of human diseases such as obesity, diabetes, diseases of the gastrointestinal tract, liver, kidney, and cardiovascular system. The approach is primarily clinical, wherein nutritional assessment parameters are discussed from both a generic and disease-specific view. In addition, students will gain exposure to clinical planning, implementation and evaluation of nutritional care of patients affected by the aforementioned diseases and of patients requiring nutrition support. (4 credit hours) Objectives The Student will: 1. Identify the role of nutrition/diet in disease prevention. 2. Identify nutritional needs of individuals with specific disease problems, applying knowledge of physiological and biochemical principles. 3. Plan modified diets for selected nutritional problems 4. Design plan of care for management of nutritional needs incorporating priority setting and using scientific rationale.
