Cooking for 100 guests, made easy Sunday, January 18, 2004 Have you ever considered inviting 100 friends and a few new acquaintances over for dinner? At your house? Where you would do all the cooking? Lori Hornell of Point Breeze does it every year, twice, with the assistance of her husband, Alan. The Hornells rehearse for their New Year's gig with a December party for the residents on their street. Their large house on Carnegie Place, which Alan calls a barn and Lori thinks of as a coach house, is on property once owned by Thomas Carnegie, Andrew's brother. The high-ceilinged rooms are filled with a collection of objects and furnishings that reveal the eccentric taste of the current owners, who have lived there 15 years. Ringed by trees and set back from the street, the house is somewhat isolated. To form a bond with neighbors, the Hornells decided to invite everyone over. Living nearby and being on their guest list for several years, I am here to tell you that their parties are triumphs. What possesses the Hornells to give so generously?

Cooking in New England
A plain Puritan people with a plain Puritan ethic brought a plain Puritan aesthetic to the shores of New England. Like much American cooking , New England has produced a local cuisine that exercises frugality and simplicity in the face of seemingly unending abundance of the New World. For better or worse, English cooking was the model boiled meats, casseroles, and puddings heavy, filling foods that combat the cold and don't offend God by being too fussy and decadent. Native Americans also had an influence on colonial cuisine, both in the ingredients they introduced, such as corn, beans, and maple sugars, and the methods they used. Their frequent use of maple syrup to flavor foods, nearly as often as we now use salt , may be why American food so tends towards the sweet: yams, honey-roasted ham, sweet relishes with roasted meats. Despite its meager, rocky soil, New England proffered a bounty of raw ingredients, fish of all kinds especially cod, which was salted for the winter and shellfish. One colonial diarist moans that he is forced to eat lobster for every meal: lobster lobster lobster!

NOWRUZ SPRING FESTIVAL OR NEW YEAR'S CELEBRATION In harmony with the rebirth of nature, the two-week Persian New Year celebration, or Nowruz , always begins on the first day of spring (the first day of the month of Farvardin, which refers to "the spirits") marked by the vernal equinox, or Tahvil. On that day-which may occur on March 20, 21, or 22 - the sun crosses the celestial equator. Nowruz ceremonies consist of a series of symbolic actions dating back to ancient times, including:
  • Cleaning of the environment, cleansing of the self, confession of sins, the exorcising of devils, or divs, from the house and the community.
  • Forgive yourself and your enemies and a time for making up relationships.
  • Dowsing and re-lighting the fires.
  • Processions to borders, seas, and rivers.
  • Disruption of the normal order of things with boisterous parties.
A few weeks before the New Year, Iranians thoroughly clean and rearrange their homes. They make or buy new clothes, bake pastries and germinate seeds as signs of renewal. Troubadours, called Hadji Firuz or heralds of rebirth, disguised with makeup and wearing red satin outfits, sing and dance through the streets with tambourines, kettle drums, and trumpets to spread good cheer and the news of the coming New Year. The celebration of renewal is attributed to the Sumerian god of sacrifice

of 2 Every year, the six children of Fung and Gan Moy gather at their parents' house to celebrate the Chinese New Year. They light incense for Buddha, burn play money in memory of their ancestors, set off firecrackers and feast on delicious food. Chinese New Year begins between January 21 and February 19 on the day of the first new moon after the sun enters Aquarius. Nin gao, or sticky rice cakes, are a Chinese New Year tradition among the Moy family. Nin means year, and gao means cake. Legend has it that the more the cakes rise, the better the new year will be. No one in the Moy family knows which ancestor originally created this nin gao recipe, but it has served to sweeten the years of many generations. Maybe it will become a sweet tradition in your house, too.
