With a bottle of Gigondas, we each went for the 3-course prix fixe. Between the three of us tasting each other's food, it was like having nine courses, plus the three other tasting plates the chef sent up. I'm still digesting everything even though we were in the restaurant for more than three hours.

What's Cooking Members Only by John Murphy As we head towards a new year it's a good time to do some soul searching and planning for the future. I would like you to consider two things for the up coming year. "Taking a more proactive approach!" should be our membership slogan for 2004.
After all my years as a member of the ACFLI maybe I have a different outlook upon the role of the membership, I'm not sure. Still after all these years I continue to be hopeful that some day more members will be willing to get involved.
I am ever hopeful! Are you willing to get more involved? It is truly only through involvement that you as a member really get something back from our organization. Taking that more proactive role gets you involved and makes you feel like you can accomplish something for others. Many have said over the years that the Board of Directors is a click, they are snobbish, and they appear to be above the membership! That's a bunch of BS. Nothing, in fact, could be further from the truth. All of those statements are spoken by people looking for excuses and reasons not to get involved.

Cooking therapyit works!
Happy New Year everyone!!! I was feeling a bit in turmoil about something yesterday. So, since my daughter Lorna gave me a great Lebanese cookbook for Christmas, I checked out the recipe for "Fatayer bi-sabanekh" (Spinach pastries) and set to work. I'd never made 'em before. But the work was just what I needed! It takes a yeast-leavened dough. Thwack, thwack, thwack, as I knead it down onto the kitchen counter. Then you have to chop the spinach, parsley and onions fine. Shir, shir, shir, as I rock the mezzaluna from side to side across the chopping board.... Oh, then the fun of assembly began. Fun, well, yes; but it's also incredibly fiddly. The dough's risen already. You thwack it down again, then roll it out to 1/8-inch thick. (That's thin.) You cut out 4-inch rounds. Then you put a small pat of the spinach-with-lemon-etc mix into the middle of each round, and crimp the edges up into a sealed triangular little dumpling. (Actually, in addition to the tasteone which I've savored for 33 years now, ever since my first visit to LebanonI really love the elegant geometry of these pastries. Picture below I hope.) You assemble each one one at a time then put a tray-full into a hot oven for 20 minutes. When they come outthis is a trick I

Home Cooking Holidays New Year Book: The Happiest Toddler on the Block : The New Way to Stop the Daily Battle of Wills and Raise a Secure andWell-Behaved One- to Four-Year-Old - After having so much success with the Happiest Baby on the Block calming techniques, I could not wait to watch The Happiest Toddler on the Block by Harvey Karp,M.D. My 22 month old grandson began to scream when I told him it was time to go inside. I spoke "toddlerese" with much expression as suggested by Dr. Karp. I said, " No No No" you do not want to go inside. He looked at me very surprised. I said, "No No No" you do not want to go inside. He looked at me again with his mouth wide open. I said again, "No No No you do not want to go inside, but we must take sister to potty." -he came with me without protest. In the past he would have continued screaming for about 5 minutes and I would have picked him up kicking and screaming. Now I can't wait to read the book The Happiest Toddler on the Block Book to get more helpful suggestions for the children in my family and in my practice. The Sun, the Moon, and Happy New Year in Japan
Steve Renshaw and Saori Ihara
Revised January, 2004 [Based on an article which appeared in Appulse; Bulletin for the Philippine Astronomical Society , Vol. 9, #12, December, 1996.] 2004 is the year of the monkey ("Saru Doshi" in Japanese).
Image of Monkey (Saru) from Chiba Shrine Visually understanding the 12 year cycle of the Chinese lunar calendar may be aided by the following diagram: This system was used not only for naming months, but also the hours of the day and other aspects of "time". Note that "everything" is mirrored relative to the manner in which directions are viewed in the "West". Starting at the bottom of the diagram, 1996 was the year of the "mouse" or "rat". It began a new cycle. Proceeding in a "clockwise" fashion, 1997 was the year of the cow, 1998 the year of the tiger, etc. You may also note that the 24 hours of the day also correspond to these "animals". The New Year is always an important holiday in Japan and other East Asian nations. Christmas is celebrated in Japan in much the same way it is in the West, but "New Years" is by far the more significant holiday. Before the Meiji Restoration, the New Year was celebrated according to the Chinese lunar calendar (January 22 for the year 2004). These days, though the calendar still has great influence on festivals and celebrations, the Gregorian calendar change is celebrated by most people as the "official" New Year. In Japan, people busily prepare for the New Year by cleaning house and buying/cooking food to welcome the "god of new life". At this time, the Post Office is flooded by New Years' cards which each person sends to friends, relatives, and associates. Rail and air terminals are jammed with people trying to get back to their home towns to spend the New Year's "night" and "daybreak" with their relatives.

HANUKKAH PURIM
When my children asked why we don't celebrate Christmas, I told them how lucky we are. We have Shabbat, a holiday every single week. The holidays and the weekly Sabbath have meant a great deal to Jewish people throughout history. They are a means of binding families and community. And food plays a major part in each one, given the importance of the dietary laws and the table-centered rituals involved in Judaism.
In addition to the weekly Sabbath, the three major seasonal harvest festivals include Passover, beginning the barley harvest in ancient times. Passover is the one holiday the overwhelming majority of American Jews celebrate.
At Shavuot, a second harvest festival in the late spring, when there is an abundance of cheese and milk products, dairy dishes like cheesecakes and blintzes are served. And at Sukkot, celebrating the grain harvest at the commencement of autumn, all kinds of stuffed vegetables and stews are eaten. As signs of the plentiful harvest, meals are served in huts open to the sky, reminding us of the temporary shelters in the desert thousands of years ago.
During the winter solstice period, Hanukkah, the festival of lights commemorating the victory of the Maccabees over Antiochus of Syria less than 2200 years ago, is celebrated. It also commemorates the miracle of when the oil in the synagogue lasted not one but eight days. Foods fried in oil are served, including latkes and other pancakes as well as deep-fried pastries dipped in honey.

Let anyone tell me small scale - no, miniature scale - gardening is futile and I'll show them not only pictures, but frozen tomato sauce, pesto, and a few rows of onions, garlic, and shallots enough to have a summer of great home-made dinners with some stuff left over for winter. For good measure I'll toss in a few containers of bib lettuce, red leaf lettuce, celery, herbs aplenty, and a few special mints to boot. And I'm not even trying. Oh, and it's all organic, all natural.
Tomatoes are the big crop this year. Since we ran out of tomato puree for sauce in late December I thought it a good idea to load up on the buggers. Between the terra cotta containers and the twelve square feet or so of ex-lawn I've got nineteen plants. Some cherry tomatoes for salads will start us off, following up with some Early Girls . A few Roma tomatoes will kick in for roasting just as the Big Boys start to ripen for sandwiches with slabs of fresh mozzarella, and basil. Yup. It won't be long until we are livin' large.
Last years pepper crop was a disappointment so I decided to plant fewer peppers. Last year I planted the equivalent of a squirrel restaurant – Chez Rocket J. Almost every pepper I picked would have the bottom missing. The neighbor across the street came over one day after seeing me with a puzzled look and explained how the squirrels sat under the plants munching away. This also explained the several tomatoes I found with no insides. I have a killer recipe called "Italian Roast Peppers." I'm not sure if it's Italian, but it's certainly delicious. So good it's worth risking squirrel attacks.

Our converted ranges will satisfy the demands of the most discriminating cook while giving enduring expression to the traditions of hearth and home. Here's What our Customers Say
  • Dear Good Time Stove Co.: Since it was hooked up on Tuesday (December 23, 2004) the [Ideal Stewart] stove has produced one 20-pound roast beef and all the fixings, (Christmas dinner for 20!) and approximately twelve full meals for family and guest ranging from 5 to 9 each meal, to say nothing of the hundreds of lunches, breakfasts and snacks these teenagers eat constantly when they are on vacation! New Years Day we cooked two pounds of bacon, 12 sausages, two dozen eggs and one loaf of bread for our kids and their friends - what a way to start the New Year! The stove works beautifully, the oven is a dream, and we couldn't be happier. I often think of the story you told me that day in your shop about the man who ran the local gas station buying the stove and how he never regretted spending the money - I feel like him. It is the crown jewel in this house project of ours that has taken two long years of time, money and sweat equity (emphasis on the sweat!). I know we debated long and hard the cost - and it was worth every penny. I just like to sit and admire the stove it is so beautiful. The fact that it is so functional makes it a wonder! thank you for your patience with us, your time, effort and the craftsmanship that you and yours have put into this stove. We are proud to own it, but prouder still of the nice people and contacts that came with it.

The Strange Career of Austin Leslie
Long a favorite with New Orleans natives, Austin Leslie's, Chez Helene,
gained national fame when "Frank's Place," the short lived but critically
acclaimed situation comedy inspired by the neighborhood restaurant, aired on
CBS in 1987. Though the series lasted just one season, to this day it is
heralded as one of the only network television shows to paint an accurate
portrait of black life. In the series, Tim Reid played the part of Frank
Parish, a Boston professor of Renaissance history who inherits a funky little
restaurant, Chez Louisiane, from his father, thus prompting a return to New Orleans and a rediscovery of his cultural heritage. By the time "Frank's Place" debuted, Leslie was already a veteran of twenty-plus years at the stove. He got his start cooking at that New Orleans institution, D.H. Chinese New Year
by Hong Lok from Macau
My most memorable Chinese New Year is when I was seven years old. Because on Chinese New Year I can get a lot of money from the red envelope and I can buy everything I like. I go around and wish the grown-ups best of luck for the coming year. Chinese follow the lunar calendar. In the lunar calendar, December 28th is the day everyone cleans their house and decorates their house. So on that day everyone works hard to have the best appearance because, it is believed that it will bring good luck! In the lunar calendar December 30th is the last day of the year. It is ritual to have all family members gather for the last meal of the year! My mom and my aunt start cooking early in the morning to prepare for this meal. The food I like in Chinese New Year is the year cake. It is sweet. Fat choy cake is another food I like. It is also sweet; fat choy is a kind of vegetable that looks like hair. In the lunar calendar the first day of the year you don't visit your relatives or your friends because it is believed that day if you go visit anyone you might bring bad luck or receive bad luck.
