A Sandwich Supper

I've been in that post holiday funk where the thought of cooking, after days of cookie making, gingerbread house baking and turkey roasting, is both daunting and distasteful.
I peered into my fridge to see what I could concoct for supper and remembered a New Year's party that I threw a few years back. It was my senior year at LSU and all my buddies and I were feeling the pain of too much fun from New Year's Eve. But we all had already made plans to assemble at my house for one last day of visiting before everyone returned to their respective colleges in many time zones. I was in the place I find myself now: dreading cooking but still needing to put something tasty on the table and then I thought: sandwiches. Making sandwiches is not really cooking; it's more assembling. But since these were good friends and the day was geared toward festivities, I wanted to create a menu that wasn't merely cold cuts on pistolettes
I had spent the previous year in Italy and had cultivated an appreciation for their panini , so that was one kind of sandwich taken care of. Back then, on my student's budget, I think I used honey ham and mozzarella.

Diane and Tom are avid "foodies". Our favorite TV channel is the Food Network. We can "kick it up a notch", and BAM it with Emeril and the best of them. We surf the web looking for new gourmet food suppliers and wine merchants. To better hone our cooking skills, we have attended cooking and baking courses at The Institute of Culinary Education in New York and King's Cooking Studio in New Jersey. We have also participated in wine courses given by Connie Fowler , a local New Jersey wine expert, Pierre's Bistro(Morristown, NJ), the StageHouse Inn (Scotch Plains, NJ), and Serenade (Chatham, NJ). Our "foodie"-mania is also reflected in our memberships in the Shitake Mushroom Society, the Vidalia Onion Lovers Club, Cooking Club of America, "Foodie Forum", Beer Across America, Wine Library Wine Club, Coffee Anyone Gourmet Coffee Club and D & M Champagne Society. We receive probably 25-50 food and cooking catalogues a month. Our mania around food and cooking centers mainly around our dinner and tea parties, our wine and food pairing seminars, building relationships with chefs, our favorite suppliers and restaurants and, of course, our favorite food fantasies. Thank you. And Happy New Year. Ellie ANSWER: Ellie, When whipping cream, the cream should be as cold as possible, and the bowl should also be very cold. The cream will whip easier and to a higher volume when very cold. (a very slight pinch of salt added at the beginning also helps the cream to whip). When the cream is about 1/2 whipped, add the sugar and vanilla and continue to whip. If you add the sugar and vanilla at the beginning, the cream will not whip to high volume. 1 cup heavy cream

Healthy Cooking for Kids: Building Blocks for a Lifetime of Good Nutrition

Let me start this review by saying that this cookbook is not vegan. Vegetarian author Shelly Null includes honey in several recipes although she is skilled with the typical alternatives for honey, such as brown rice syrup and maple syrup. The recipes containing honey which I substituted with brown rice syrup worked perfectly well. Ms. Null considers honey to be healthy and thus deserving to be included in her recipes. That said, this book is still a good choice for vegans because what recipes include honey are few and easily converted (or ignored, in favor of the many other delicious recipes).
A bonus for many families is that Ms. Null gives due consideration for folks with food allergies. A section in the beginning of the book addresses this topic, and recipes often include footnotes in which she offers suggestions for replacing common allergens found in that recipe. I also like her information sections covering such issues as kid-safe kitchens, "Kid Meets World," modern agriculture and production, and purity of food and water.

GRILLED GREEN BEAN AND RED ONION SALAD
SALAD
1 1/2 lb. green beans, trimmed
2 tbsp. olive oil
Light the grill. Toss the green beans with the oil. When the coals turn gray, use tongs to set the beans in a single layer on the grill. Cook them for about 4 minutes, turning them often. The beans should char in spots, but do not let them burn all over. They are cooked when they look slightly wilted. Remove the beans from the grill and return them to the mixing bowl. Cover the salad tightly and refrigerate for several hours or dress it and serve right away.
DRESSING 1/4 c. fresh lemon juice
