Meat, milk and Mongolia:
Misunderstood and often maligned, the Mongolian diet does make sense By N. Oyunbayar A stroll down any Mongolian residential street is usually the first introduction to a visitor of the savoury odours of the traditional meals of this country. If you are invited into somebody's ger (or traditional tent dwelling) or apartment, you will probably have an opportunity of tasting buuz, khuushuur and bansh. These Mongolian national meals are made with minced meat seasoned with garlic or onion (it can be anything from mutton to beef to camel to horse to gazelle) covered with flour and steamed in boiling water, fried in oil and boiled in water. For many visitors to the country the vast quantities of meat consumed can at first be surprising. But it is not long before a visitor finds their favourite Mongolian food, be it buuz, khuushur or a number of other treats. A Canadian living in Ulaanbaatar once told me, "the Mongolian national food contains a lot of meat, but I like the buuz." The hierarchy of foods in the Mongolian diet The meat-dependent diet arises from the need for hearty food to stave off the cold and long winters. Traditionally nomadic herders, Mongolians have for centuries been dependent on mostly animal products for their dietary staples. Now after over nine years of transition, the traditional diet has been used as a shield against hunger and for the wealthy, subject to the influence of imported foreign foods and cuisine. When the Russians pulled the plug on Mongolia's aid in 1991, the economy went into a severe crisis. For many Mongolians it was their first experience of serious hunger. The staple traditional diet of meat, milk and flour saw many people through this crisis, when food imports from the former Soviet Union dropped off.

Environmental Studies Offer A Glimpse at a Rare Natural World.

December, 1996 Dr. Clyde Goulden (left) of The Academy of Natural Sciences, and a colleague from the National University of Mongolia seine for fish in Mongolia's Lake Hovsgol. Goulden, one of the world's foremost aquatic ecologists, is leading an international effort to invoentory the biodiversity of the pristine ancient lake. It is the summer of 1996 and this place seems like the end of the Earth. The group of American scientists has flown thousands of miles, crossed nearly a dozen time zones, and suffered through a several-hundred mile long, multi-day, bone-shattering ride in a Russian-made jeep. It is cloudy overhead; but for the light of the campfire, the ten huddled figures are engulfed by a darkness deeper and blacker than any of them have ever experienced. They eat slowly, for most are still trying to get used to the taste of mutton and fermented mare's milk, and they discuss American slang.

The Great 'Gobi' Desert of Legendary Mongolia
Since ancient times the word 'Gobi' meaning 'desert' in all Ural-Altaic languages was referred to in literature as shamo. It is on account of the fact that the word 'Gobi' is translated into many foreign languages as a desert. That foreigners often imagine the Gobi to a desert. However visitors to the Gobi are quickly persuaded that the word desert is a misnomer. The Mongolian Gobi, a vast zone of desert and semi-desert occupying almost 30% of our country's vast territory, is a well-renowned place. The Gobi is often imagined to be place of unbearable heat and lifeless sand dunes, similar to the inhospitable and uninhabitable Sahara desert. Whereas the reality is quite the reverse. The Great Mongolian Gobi (the western part is located inside China, now) has high mountains, springs, forests, sands, steppe lands and rich animal kingdom, and has been inhabited since ancient times. To put it another way, the Mongolian Gobi has the vast plains of Europe, the majestic peaks and mountain ranges of Asia, the sand dunes and sandy valleys of Africa, and thus could be called the land of the three continents. Last updated: June 9, 2004 The Inner Mongolia Autonomous Region , bordering to the north with both the Republic of Mongolia and Russia , is the widest province in China (by its latitude). It is the third largest Chinese province (over 1.1 million square kilometers or 424,736 square miles) but not very populated. The province has about 24 million inhabitants. Many ethnic groups are living in this area including Mongolian, Daur, Oroqen, Ewenki, Hui, Han, Korea and Manchu. Hohhot is the capital of Inner Mongolia.
