"Traditional Woman". Welcome to this virtual Middle Eastern cook book.
It pleases me to introduce you to a tasty and joyful experience in Middle Eastern (Arabic) cooking.
The history, location, and fertility of the land of the Middle East encouraged the creation of a tremendous variety of dishes. Some are distinctive to that region, others are imported from all around the region and parts of Europe.
After four decades of cooking for my family, I am taking this opportunity to share my cooking with you. Some recipes have been handed down unchanged for generations, others have been changed over the years to suit our health-conscious times. For example, I eliminate frying whenever possible, use vegetable oil instead of saturated fats, and buy leaner meats.
I have been cooking these authentic foods in the United States for 19 years. Therefore, no out-of-the-ordinary ingredients are used. All of the ingredients can be obtained at supermarkets, local import stores, health-food stores, or Middle Eastern food stores.
Middle Eastern dishes are delightfully aromatic and full of flavor and texture. The spices used in each dish add a distinctive taste matched by no other. Each dish is a symphony of goodness: proteins, fibers, vitamins, and taste. Go ahead, cook a Middle Eastern meal. Enjoy yourself, excite your senses, and do it in good health.

I love Middle Eastern food, in general, but I am sometimes disappointed when one place's hummous is not as good as another...or the variyng qualities of bab ghanoush available at restaurants. This book has the best recipes for every dish that I am familiar witha nd introduced me to new dishes that have become new favorites for me as welll. I particularly like the fish baked in tahini, which I've not seen at any restuarnat. Unfortunately, I recently moved to a region of the south US that sorely lacks Middle Eastern eatries, but this book has been a life saver. The instricutions are simple and easy to follow, and the ingredients are well explained and usually acessible even where I live now. There are picutres to give a better idea about foods that may initially be unfamilar to you. I wish that the book included a few more vegetarian alternatives, but in general, am so happy with the product, that my only genuine complaint is aimed at myself - for not having bought the book earlier.

Middle Eastern Cooking
The Greeks called it Mesopotamia - the land between two rivers - and it is the cradle of civilization. The two rivers were the Tigris and the Euphrates and in the southern part of Mesopotamia where the rivers met lived the first civilization, that of the Sumerians. In northern Mesopotamia is Assyria, an area with mountain ranges and fertile fields. Here, in the valleys of Nineveh and Arbel, are the fields that sustained the first organized civilization.

The Origins of Middle Eastern Cooking
click for recipes by Elinoar Moore The region of the Middle East was the site of great ancient civilizations, Mesopotamia and Egypt, as well as the birthplace of Judaism, Christianity, and Islam. Today the term Middle East is also used in a cultural sense for that part of the world predominantly Islamic in culture, in which case Afghanistan, Pakistan, and the remaining countries of North Africa are included. The cooking that developed from country to country bears similarities as well as differences, but most of the cooking had its origins in what we may call 'tent cooking.' Geographic borders have been defined and redefined through the centuries, but many of the roots of Middle Eastern cooking can be found in the country of Israel. Israel is located in the South West corner of the Asian continent and at the South Eastern shore of the Mediterranean Sea. Geographically it is at the crossroads of Europe, Asia and Africa. It is bordered by Lebanon to the North, Syria to the North East, Jordan to the East and Egypt to the South West. Its Western shoreline is on the Mediterranean Sea and it occupies a narrow strip at the extreme South along the Red Sea. Together with the country's non-Jewish citizens - Muslim and Christian Arabs, Bedouin, and Druze this melting pot gives the country its exceptional cuisine flavour.

Stock your spice rack with turmeric, cumin, paprika, chili powder, mustard seeds, ground ginger, curry powder, cinnamon and salt and pepper. Appropriate spices are essential for creating the perfect balance of flavors. Buy tahina (a paste made from sesame seeds and found in most whole food stores and some supermarkets). It's the secret ingredient in hummus and baba ganoush. Store olives of all sorts and raisins. They are perfect for snacking, garnishes and extra flavor.

he Middle East encompasses the birthplace of civilization and it's history goes back as far as 3,500 BC with a pre-history dating back to 10,000 BC. The contributions to world knowledge (including culinary arts) cannot be disputed.         From a culinary standpoint, the region can be divided into number of areas. Greek, Turkish and Persian cooking make up one unit, Arabic cooking another. Israel teems with recipes brought in by dozens of immigrant groups, as well as producing original recipes never cooked anywhere before.
        When talking about Middle Eastern food, one always inquires as to which dish originated in which particular country. History can solve this in part, however, there has been so much interchange of culture through colonization, migration, invasion and counter-invasion, that even this presents its difficulties. So many similar recipes turn up in the culinary repertoire of a number of countries that to detect the source of many of them is virtually impossible. For example, there are dolmas - stuffed vegetables - with variations in both name and ingredients stretching from Greece to Afghanistan and south to the Arabian Gulf States. Therefore, because of such widespread similarities, it is not clear which peoples developed what food or recipe.
Evolving Over Thousands of Years
        Its exotic dishes make up a cuisine that indeed has been evolving over thousands of years. The result is food that is at once homogeneous and diverse, lavish and thrifty, plain and imaginatively seasoned. There can be no single characteristic; however, in all nations, lamb is the basic meat, wheat bread a basic source of carbohydrate; eggplant is a favorite vegetable, and yogurt the preferred form of dairy. These similarities of cuisine have persisted for centuries despite vast geographical, cultural and political differences.
