Food poisoning statistics
The general public perception of food poisoning numbers is that outbreaks and numbers of cases are increasing at an alarming rate. Whereas in fact the numbers of cases due to Salmonella and E. coli O157 has been decreasing in recent years, whilst Campylobacter and viral agents of gastroenteritis have remained relatively constant. [Reference: Anon (1999d) Where have all the gastrointestinal infections gone? Eurosurveillance Weekly ] Why? Is there a difference between the two groups? My personal view point is that possibly the message of cooking food thoroughly is being better implemented, hence the decrease in incidences of food poisoning bacteria associated with improperly cooked foods. In contrast, the message of cross-contamination has not received such an emphasis. Organisms such as SRSV do not multiply on food, but are transmitted via food. Campylobacter jejuni is easily killed during cooking and is not a sporeformer. However it has a low infectious dose and is associated with cross-contamination. I have developed and applied skills in microbiology and infection control , supervised as many as 26 employees in large (500 bed hospitals) reference laboratories. My experience includes all areas of microbiology to include virology (both serology and viral isolation), parasitology mycology tuberculosis , and clinical immunology . I taught in active training programs in these centers for many specialties to include infectious disease pathology , and medical technology . I have been an invited lecturer at University of Texas Health Science Center in San Antonio, and I am a contributing author to the textbook used in that program.
I have built complex relational databases in Access and Paradox for management of laboratory supply operations. I have designed a laboratory computer system featuring edit checks and conditional branching logic. I was a reviewer at the Center for Drug Evaluation and Research - Anti-Infectives at the Food and Drug Administration . I have written many computer applications that improved operations, and cut costs. I have used

    General Immunology
    Host defense is present in many forms. Overall, the Immune Response (IR) can be divided into two major classifications; humoral and cell-mediated. While these responses are not mutually exclusive, they provide distinctly different avenues for dealing with pathogenic organisms or altered host cells. These different responses will be discussed in more detail later. Immune response Humoral Immunity Cell-mediated Immunity (Antibody) (Cytotoxicity) Some of these responses are specific, others are non-specific. This page will introduce host defense mechanisms by defining some commonly used terms and describing the specific cells and tissues involved in these immune responses. DEFINITIONS: Antigen (Ag): A molecule which elicits a specific immune response when introduced into an animal. More specifically, antigenic (immunogenic) substances are:
  • Structurally complex (proteins are usually very antigenic),
  • Accessible (the immune system must be able to contact the molecule), and
  • Foreign (not recognizable as "self"). Antibody (Ab): A glycoprotein produced in response to an antigen that is specific for the antigen and binds to it via non-covalent interactions. The term "immunoglobulin" is aften used interchangeably with "antibody". We will use the term "immunoglobulin" to describe

    ICMSF The International Commission on Microbiological Specifications for Foods (ICMSF 2002) has revised its previous categorisation of microbiological hazards in foods. These are tabulated below. The severity of the illness and duration should be compared with the information on p. 142-192 in the book 'The Microbiology of Safe Food'. Additionally a number of these organisms are permitted above the cells in 25 gram testing specification for ready-toeat food. For details see the PHLS (UK) guidelines in Table 8.20, p.333 for ready-to-eat foods and the various EU and FDA sampling plans in Chapter 8.
