david's comments:
Sadly, this finest of all Mexican cookbooks is out of print, though usually available through amazon.com or ebay. Hopefully, that situation won't last. And while I rate this book as advanced, I should also say that it was one of the first cookbooks I acquired. I knew little of chiles or other Mexican products, so I could only make a small handful of the recipes. But I grew into it over time; it's now among the most well-used of all my cookbooks.

Mexican Cooking Mexican Food-a rich blend of textures, colors, and flavors-is one of the oldest cuisines of the Western world. European influences played their part in the cuisine beginning with the Spanish. Local products-cacao, chiles, wild turkeys, sweet potatoes, and tomatoes-mixed with those introduced by the Spanish-almonds, citrus fruits, and dairy products-to become today's Mexican cuisine. A land of tremendous contrasts in terrain, Mexico has very regional dishes. Along the Caribbean, culinary exchanges with nearby islands introduced the black bean, while in other areas of Mexico, the pinto bean is preferred. On the plains of northern Mexico, where wheat is grown and cattle are raised, one finds flour tortillas, beef and dairy cheeses as everyday staples. Along the coasts, each region will often feature a different seafood dish ranging from snapper covered in red tomato sauce in Veracruz to shrimp in Guaymus to pismo clams in Ensenada. Mexican restaurants in the United States typically feature dishes from throughout Mexico and your meals at home can do the same. A Short Guide to Mexican Dishes Popular in the United States, these dishes are frequently seen on restaurant menus. Most are easy to create in your own home and can be enjoyed throughout the week. Mexican cooking requires very few precise techniques. While there can be a good deal of cutting, once that is done, the cooking methods are very simple.
